This is humble pie elevated with #macaramel (maca + mesquite caramel) and will make you go "I peel good! ~ " @rawchefyin and @angiesveganpantry can vouch for it 😉 Recipe for 20cm (8in) tart Crust 125g (1 cup) macadamia nuts 75g (3/4 cup) desiccated coconut 48g (3 tbsp) maple syrup Macaramel 120g pitted medjool dates 3 tbsp coconut cream* (see Notes for DIY) 2.5 tbsp tahini (or nut/seed butter) 2.5 tbsp coconut oil 2 tbsp maple syrup 2 tsp maca powder 2 tsp mesquite powder 1/2 tsp vanilla extract 1/4 tsp himalayan salt 3 ripe bananas, halved lengthwise Coconut whip 240g (1 cup) coconut cream* 2.4g (1%) agar powder (optional, for more stable #fluidgel) . . *DIY coconut cream From fresh - blend young coconut meat and a little coconut water until the consistency of thick cream. From dry - blend 1 cup desiccated coconut and 1 cup water. Strain through nut milk bag. Allow milk to sit in the refrigerator to separate further, then carefully scoop the cream. Directions Blend crust ingredients to a smooth paste and press into tart tin. Place in freezer to set. Blend macaramel ingredients except bananas to a smooth paste. Spread over crust, then gently press in banana halves. Spread a thin layer of coconut cream over bananas. Transfer remaining cream into pastry bag fitted with your favorite tip and pipe designs as you wish. For more stable cream, you can make coconut fluid gel. Simmer coconut cream and agar for 4 minutes. Pour into shallow bowl and cool in refrigerator until solid. Shear the gel in blender until it becomes a cream.
