The Sydney-class U.S.S. Jenolan from the Star Trek: The Next Generation episode "Relics." This vessel was represented on-screen by the executive shuttle model created by Bill George and John Goodson for Star Trek VI after extensive modifications by Greg Jein. The digital images shown here were created by Eaglemoss Publications for the Official Starships Collection.
I've always liked this design. It's very different from a typical Federation starship, yet at the same time looks distinctly Starfleet.

I drew the Kite Runner-class NAR-23017 SS Yongbi Eocheonga of the Merchant Marines for our Star Trek Adventures campaign. It's presently crewed by surgically-altered, covert Romulan agents.

The Norway-class U.S.S. Budapest from Star Trek: First Contact.
This vessel was designed by Alex Jaeger and rendered by Larry Tan and Paul Theren. The digital model was lost shortly after the completion of the film. The model pictured here is a reconstruction by Fabio Passaro for Eaglemoss' Official Starships Collection.

Were Spirkcoy out and proud? What are your Starfleet's rules regarding fraternization and long-term, long-range missions?
The rules exist, and I'm sure there's complicated pages of subsections and addendums, but the summary is not "don't do it", it's "don't get weird about it in a way that stops anyone from doing their jobs right".
Starfleet (whether you argue it's for better or worse) trusts their officers to manage their own emotions, or if they need help, to ask for it. Ship's Counselors are an important and respected position among the crew (and there's more than one. It's its own division, like Engineering). There are no strict rules against who can date/have sex with who else, only rules about how to not let any relationship you happen to be in (with coworkers or otherwise) interfere with your responsibilities to the safe functionings of the rest of the ship. and extensive rules to keep rank & chain-of-command from manifesting into a toxic power dynamic or method of domestic abuse (some canon storylines went differently because of this).
As for the TOS bridge polycule, none of them lied or hid their relationships but Bones was always deeply uncomfortable with public displays of affection (and highly selective about private displays of affection too), including pet names and "I love you", leading to the common misconception for centuries to come of leaving him off the polycule charts, despite the paperwork on file formally alerting Command to his relationships with Kirk and Spock.
Kirk & Spock, tho? Everyone knew them be fucking. And fucking married (even if never legally). By mainstream Vulcan standards the facial expressions alone that Spock gives Kirk regularly cross into pornographic, cartoonish even. The tone he has when he says "Captain", let alone "Jim"?... That man couldn't be more open about his feelings if he had giant hearts for eyes and his heart was beating out of his chest as he slobbers and howls floating through the air behind Kirk.

I did a little research and it seems there's an ongoing argument in the fandom over whether the doodads are sensor pods or torpedo launchers. In reality they're Stabilo-brand highlighters.

Awesome photos of the New Orleans-class USS Kyushu model put together for the Best of Both Worlds Part II graveyard scene, before battle-damage was added.  Built by Ed Miarecki
Thanks to Rick Sternbach for sharing these great photos.
