The slaw had 1/2 each green and purple cabbage, 1 onion, 4 cloves garlic, 2 TBSP taco seasoning, 1 tsp cumin, 1 tsp seasoning salt, 1 tsp achiote molido, 1/2 tsp pepper, sautéed in 2 TBSP evoo. Then add 400g can chopped tomatoes. Simmer for 10 minutes. Add 2C reconstituted soy chunks. Simmer on low for 10 more minutes. Add juice of 1 lime, a handful of chopped cilantro, and 1/4C Nutritional Yeast. Mix well. Green Beans and Avocado from dietdoctor.com. I added the juice of a lime to help prevent oxidation and balance out the oil. You cook the green beans in olive oil with garlic and spices before mixing this up. Instead of pepper, I used taco seasoning. Everything is better with more spices, imo. The pile of spices, chile dulce, garlic, and onions that went into my #curried #chayotesquash and cabbage. Tomorrow would have been the Romeria, the day of pilgrimage for the entire country of #costarica🇨🇷. It's been canceled, like so many things since the plague started. #lanegrita (that's what they call her) is located in the main church in Cartago. Once a year, people walk to that giant edifice, praying as they go, asking for miracles. There are smaller pilgrimages all over the country, for the people who can't do the main one. The pilgrimage in #zarcero starts at the topiary park and we walk to Los Angeles de Zarcero, behind a truck carrying our replica of the saint.
