#lowcarbsalad with #avocadosaladdressing topped with #veganketo Mexican Slaw that I modified. The slaw had 1/2 each green and purple cabbage, 1 onion, 4 cloves garlic, 2 TBSP taco seasoning, 1 tsp cumin, 1 tsp seasoning salt, 1 tsp achiote molido, 1/2 tsp pepper, sautéed in 2 TBSP evoo. Then add 400g can chopped tomatoes. Simmer for 10 minutes. Add 2C reconstituted soy chunks. Simmer on low for 10 more minutes. Add juice of 1 lime, a handful of chopped cilantro, and 1/4C Nutritional Yeast. Mix well.
