Wow! I’m a little at a loss for words here. I guess I should start by saying, this is the second time I’ve had a dry aged steak. The last time I had one it was a 28 day age, to this day it’s still the best steak I’ve ever had (I did not cook it) These were an easy second. I kept the seasoning simple with a little kosher salt, pepper, and a little garlic powder. For steaks like this I wanted to taste the meat, and not just what I put on them. I fired up a basket of Kingsford and tossed it in the Vortex. I cooked the steaks directly over the coals for 1 minute per side. I then took them off for 2 minutes, and did the same again. I let them rest for about 5 minutes and sliced them up. Generally when I cook more than one steak I get most of a full one for my lunch the next day. Unfortunately my wife kept going back for more, so it looks like I might have to make other plans for my lunch tomorrow. I can honestly say that my first experience with @gilmoursmeat was a great one. Anyone that has been following along for the last few weeks, may have read my posts about having issues with my usual butcher. We ended up having another issue with them being kinda rude to my wife. So I decided it was time to switch shops permanently. I do understand that meat processing is going to be slow right now, and I can accept that getting good cuts of meat will take more time. I just can’t accept poor customer service. I was sent a link to try @gilmoursmeat and thought it was worth a shot. We were able to place an order online and received free local shipping. Last night they delivered my meat, but my steaks were not going to be here until Friday (no big deal). My wife ended up getting a text first thing this morning saying the steaks were on the way, and 30 minutes later they were on our door step. Something my wife liked was that they waited to make sure someone actually came to the door and got them. Tonight I’m starting with these 60 day dry aged Rib eyes. So far it seems like we made a good switch. After hearing that Cote was just awarded a Michelin Star for 2018, I was so fortunate to get a reservation just in time for my trip to NYC. The Korean BBQ experience here is amazing! - We had the Hangar Steak, Ribeye, The Flatiron, and their Cote Galbi. The meats were expertly grilled to perfection, the banchan was not too vinegary or overly strong, and the soups were wonderfully flavored and a refreshing addition to our meal. Even the egg souffle was excellent. We also got a vanilla soft serve covered in caramel as a dessert.
