Plant-Based Benefits and Tips!
A couple of lovely people asked for some elaboration on plant-based eating! I studied nutrition & dietetics in college before I dropped out so I'm not a professional in nutrition but I do have a broad understanding of the biochemistry behind what we eat.
This is kind of a long post, so continue under the cut!
Starting with the basics!
I aim for a more whole foods plant-based diet, which is essentially a low-fat diet that focuses on removing all animal products, limiting processed food, and minimizing oils.
Looking at micronutrients, both protein and carbs have about 4 calories per gram, but oil has 9 calories per gram. Low-fat diets are often easier to manage calories on, as you can fill up on a higher volume of protein and carbs (specifically fiber) to reach satiety, whereas processed/high-fat foods are higher in calories per serving, meaning you get less volume.
You DO need fat in your diet, but it's preferable to reach for nuts, seeds, avocados, etc. instead of oil, which is comparatively nutritionally void.
FIBER IS YOUR BESTIE. Fruits, vegetables, and whole grains are low in calories meaning you can eat more of them, reaching satiety faster than you would with something processed. Fiber makes your digestive system happy. Be sure to incorporate more plants into your diet gradually so your digestive system can adjust.
Let's talk about animal products...
They are inflammatory by nature. If it comes from an animal, particularly red meat and ESPECIALLY processed meat, it will cause stomach issues in most people.
Fun fact, we are biologically closer to herbivores than carnivores. Our digestive tracts are much longer and our stomachs are less acidic than a carnivore's, meaning we are designed to most efficiently digest plant matter. Carnivores, on the other hand, have short digestive tracts and significantly more acidic stomachs for breaking down flesh and bone. This is why many people experience gastrointestinal discomfort when consuming meat. This leads to bloating, gas, and constipation. We are omnivores because we CAN consume animal products for survival, but it is nowhere near optimal.
Dairy is highly inflammatory and is directly linked to hormonal cancers (breast, prostate, etc.) It is also high in saturated fat, which is inflammatory. When we are born, we have the "gene" necessary to process breastmilk, but for many people, as we age, this "gene" gets switched off. Past infancy, we don't need milk (or other dairy products) because we can get our nutrients from other food sources. Black and Asian individuals have the highest rates of lactose intolerance. Not to mention, dairy is full of foreign bacteria, especially from factory farms, which causes an immune response in the body, leading to further inflammation.
Eggs are saturated fat and cholesterol bombs. They're high in protein, sure, but you can get protein and a wide variety of other nutrients from things like tofu.
To summarize, animal products are high in fat, high in cholesterol, high in calories, and cause inflammation, bloating, gas, and of course, constipation. Eating whole foods like vegetables, fruits, whole grains, beans/legumes, tofu, nuts, and seeds will boost your fiber intake, fill you with antioxidants, foster healthy gut bacteria, and reduce gastrointestinal issues.
Make sure you add more plants to your diet GRADUALLY. If you immediately go full force into eating plant-based, your stomach will experience distress due to the sudden increase in fiber, creating gas and bloating. But this will subside, and you'll feel better overall!
I highly recommend listening to seminars on YouTube by Dr. Neal Barnard, Dr. Michael Greger, Dr. Will Bulsiewicz, and Linda Davis RD to learn more in depth about what I've talked about.
Extra tips:
An air fryer is going to change your life when it comes to cooking without oil and making stuff taste good and have a better texture! I use mine multiple times a day.
TOFU!!! I'm a soy addicts, and tofu is my favorite source of protein. There's so many ways to prepare it, too!
Berries are so nutrient dense and delicious-- nature's candy!
There's honestly nothing wrong with protein powder even though it's processed. Just be sure to opt for vegan protein powder so you aren't loading your body with whey.
Stevia is a godlike sweetener, imo.
Eat a wide variety of different plants to diversify your gut microbiome and to get a variety of vitamins and minerals!

Speaking as a resident deep in redneck country who's spent 30+ years surrounded on all sides by self-identified rednecks: you're right, his overall aesthetic as a person is more what people would associate with "hillbilly." I went with "redneck" to describe his lab for two reasons:
The connotations of "hillbilly" are "technologically-backwards Appalachian poor white guy." The connotations of "redneck" are "rural Deep South poor white guy (probably a farmer)." The aesthetic I'm trying to call to mind with his mad scientist lab—machinery cobbled together out of junkyard parts like old cars—is closer to "farms with rusted-out old tractors and cars that I pass when I'm driving between towns" or "junk I have personally seen in my uncle's dairy barn" or "insanely modded trucks for mud racing" than it is to what's called to mind when people think of Appalachia.
Fiddleford's aesthetic is hillbilly; but his aesthetic is also "Old West prospector," which. He isn't. Culturally, he grew up on a pig farm in Tennessee. Pig farm probably ain't up in the mountains. His geography has him straddling right on the line between "technically just outside Appalachia" and "part of the South depending on who you ask." To my mind "hog farmer" tips his background over slightly stronger to "redneck" than "hillbilly," but like, only by 5%.
So I think both descriptors could fit him situationally depending on the context and what's being emphasized. In this context, that one fit the image I was trying to emphasize better. But I use both in various places; in an upcoming chapter Bill snidely refers to him as "the Beverly Hillbilly," which is an absolutely devastating zinger assuming you're familiar with 1960s sitcoms.

i dont think anyone has laid out exactly what irks me about vegans so successfully
they really are bleeding hearts- i recently got told off for enslaving animals because I have chickens, something I know for a fact they had to go digging for because I sure didn't mention that in the conversation. I'm not even a proper farmer, I don't turn a profit off of my chickens, they're really just pets that come with the bonus of eggs and learning the circle of life at an early age. It just seems to me that the loud angry vegan crowd can't tell the difference between genuinely horrifying and unethical factory farms vs. any group of humans who happen to farm free range animals.
I also believe it stems from the fact that as a society there's an unwillingness to accept that humans are animals and not some great overlooking gods in comparison to animals.
Yeah and the amount of vegans I've seen claim we don't give a fuck about our stock is insane! You know how much a SINGLE bullock is worth? Fuck me! We do everything we can for them not just because THEY ARE LIVING CASH but also because we DO genuinely like our stock! We like being with them!
"Waaaah Australian sheep farmers mules their sheep" yeah we do it so they don't fucken DIE of flystrike! But none of these cunts know what flystrike is cuz they don't actually know anything about fucking agriculture. Ough.
Free-range farming for cattle especially is stupid to argue against since we USED to have bison in the US until they were almost driven to extinction to kill off the Natives. SOMETHING has to continue that economic niche and until bison populations return to what they were pre-genocide, cattle should fill that void. And they do.
Same thing with Australia—we graze cattle on open land, not keep them cooped up in factories. I think too many people confuse factory farms as beef when in reality they're dairy, and most are pretty good. BAD factory farms (see: unethical conditions) are usually poultry (chickens, turkey, quail) fowl (duck, geese) and pigs. I've genuinely never seen pigs in a commercial production that had proper space or range to do pig things.
But that's easily remedied—if you're in the US, buy a rifle and hunt the pigs yourself, because feral pigs are fucking everywhere and ruining the ecosystem. That or buy your pork from your local non-factory farm. If enough people do it, the factories will start shutting down. If you're in Australia, get a hunting and firearms licence and do the same, or if you don't wanna bother with that, buy your meat locally or tip your local pig shooter and maybe he'll give you some meat as a gift (legally we can't sell feral pig meat).
All of these are easily solved by just buying local, doing the hunting yourself, or advocating for better conditions for commercial animals. Not convincing people to go vegan, because for most of the world who isn't a privileged little shit living in a big city on daddy's money, veganism is entirely unsustainable and unaffordable.

Dark Mythopia/Dark Fantasy ideas with European folklore and populations, from 1550 to 1850, with a "evil coast" type thing
A part that is:
-Cfb and Cfc, on steroids, with constant rain, mist and storms, as well as a rather cool climate, with summers rarely reaching above 15 degrees, and winters around 3-0 degrees. Close to the ocean. With that...I would go with Icelandic, Highlanders and irish populations, as well as some Romani and Irish traveller populations.
-Terrain would be compose of a steep cliff, some rocky beaches and coastal plains, mountains, a peninsula and a large, marshy lake.
Fantastical and paranormal creatures :
-The "dark elves"/Drow (semi-troglodyte, nocturnal elves), who would look like the classical high fantasy elves but winged, and this population would be extremely pale with black or white hair of any texture and wide eyes that could be any shade of blue, green, grey, pink, red or purple, with half having blue eyes, and purple being the rarest color. Males would have a shimmering, saturated eyecolor while females would have less saturated, more "human" looking colors, although in a slightly greater diversity of shades and undertones than humans. They would be very gracile, androgynous on human standards (male elves would have more narrow, elongated wings while their feminine counterparts would have round, semi-concave wings), and have quite large ears. Would live around 200 years. Here, would have four cultures: the Gneiss culture (in the mountain caves), the limestone culture (more coastal), the burrow culture and the siltstone culture.
-Bogards : ugly, scary gobblins, mostly living underground.
-Nucklavee : skinless cyclops centaurs creating rot whereever they go
-Ghost, revenants, and others
-Washerwoman ghost-fay
-Dragons. The local dragons play the role of A-pex predator, both on land and at sea.
-Kelpie
-Draugr
-Fay cats
-Mountain troll
-Merrow
-Marmennill
-Mulo (the "dead" one)
Vegetation :
-Salicorne
-Calledonian-style rainforest
-Psychopomp dogs
-Moors
-A large marshy lake
-Rocky beaches or cliffs covered by space grasses
-Because this is a very "dark", demonic-influenced place, the underground caverns and ocean floor would have "rané", a type of autotrophe that yes, produces oxygen, but blocks endorphins while provoquing a powerful stinging sensation in almost all higher vertebrates. The other would be the "dark lily", a type of plant which upon it's blossoming stage would strongly ressemble a water lily, but with dark grey or even black flowers with eleven petals. After being fertilized, it would mature into a very dark red fruit, that has the property of delivering a burning sensation while blocking all the body's natural "pain killers", as it feeds from the diluted spirits and dark energies of the Styx.
Rule: Objects may travel from one realm to the next, but not living humans or animals.
Now...How would these people interact with this environment.
So, at first, these people would probably establish a foothold onto moorlands for agriculture pretty easily, forming the first villages. Icelanders, Highlanders and Irish were pretty used to making agriculture in such climates. However, hostile mer populations would probably make fishing a less viable options. Like, having intelligent creatures wanting to tip your ship would make fishing difficult. However, maybe trade with the local "Silt culture" who already practice aquaculture (algea, krill and oysters, together), might allow human populations to also develop their own version of it, which, over a single decade, might allow a beginning to population growth. Introduction of grazing livestock, especially in highlands, but also pig farming, would also help them with food production. So, a diet of oats, barley, rutapagas, rye, kelp, oysters, cabbage, onion, turnips, dairy and meat would be the main staples. Near lake, they might attempt to farm goose, if the local fairies and kelpies would allow.
Over the first 50 years, the first villages would be established, but it may or may not yet support cities.
The abundonce of undead might lead to the increase demand for the skills of those who practice spiritism. Some romani tabars might be able to establish an economic niche here, although the more European population might also occupy these economic niches. Professional draugr and vampire hunters would become essencial, perhaps forming full-time professional.
However, by 1630, the first cities might begin to form. One of them on mountains, culturally Icelandic, one culturally Irish near the shore, and another mid-land one of Highlander scottish culture, surrounded by many villages. It may or may not develop a gentry.

Luckily, he thought it was fine if I sent all the Richmond cards in one go to Nelson Road and trust Higgins to hand them out to the right people, so if you’re getting this than he did it! Knew he could – our Higgybottom is one smooth operator. Henry did the art for the front of the card! He’s getting really into drawing lately. He needed something stationary to do when he broke his ankle a couple months ago. No football! The horror! But he’s become really taken with colored pencil drawings and I think I look pretty good, right? He really get the depth and texture of my mustache. He insisted we also include a photo of the two of us so people can see how good his drawing is and I told him people would remember what we looked like but he insisted! So now, I’m afraid, you absolutely have to hang these on your fridge. In Kansas I may be, but this way I am also with you in your kitchen, judging you for getting takeout for the fifth time this week. Hope you’re having a nice one! Happy holidays to you as well! Clara was absolutely smitten with the idea of drawing a Christmas card and so now I’ve been made to send one back. Well, it was my pleasure. Look at the craftsmanship! The glitter was my idea. You’re welcome. Clara would like to know what Henry is asking Santa for and if Mr. Ted could send her more biscuits for Christmas. I told her it was unlikely as sending baked goods through customs was a dubious endeavor but she insisted I ask. So I’m asking. And, between you and me, if you’re doing it for my daughter anyway, I would like to request mine with that cinnamon sugar topping you Americans like. Please and thank you. I’ve held up my end, as you know from our lengthy phone call after I texted you the picture of my fridge, so now I simply must insist you return the favor. Cookies are en route! I expect this letter to get to you before the cookies do – gosh darn customs – but some very helpful people on Reddit gave me some tips to make sure everything’s kosher. If you don’t get them, I’ll assume the hardworking people at the postal service did, and we can’t really blame them, can we? I had to make a double batch so Henry could get some but he’s more of a chocolate chip guy so wasn’t really sure what to make of the thing you weird Brits call biscuits. I ended up sharing them with some of my new neighbors and taking Henry out for ice cream instead. Yes, ice cream in winter. We’re lucky we’ve got so many dairy farms nearby that there are creameries open this time of year! I suppose I could have just gotten pints of good old Ben & Jerry’s from the Dillon’s but, well, the act of Getting Ice Cream with my kid is just something really special. It’s more the act than the thing itself, like going to the movies or reading in the park. Sure, you can do that stuff at home, but it’s just that little bit sweeter to experience it with the world. Henry’s going through that cotton candy ice cream phase which is utterly repulsive but I guess he’s feeling like he has to prove something. I got the cookie trifecta of cookie dough, cookies and cream, and the special peanut butter cookie ice cream from the creamery. It was perfect and I make the best choices. You’ll have to visit Kansas some time so you can try it - not sure shipping you ice cream will work out like the cookies did. Tell Clara that Henry asked Santa for a new bike. Don’t tell Henry, but Santa is already keeping it hidden in the neighbor’s garage. Let me know how it all shakes out! And get yourself something nice besides the cookies. For me.

It is now past Christmas as the postal system has a vendetta against me, specifically (in actuality I know they’ve been very busy with packaged and whatnot but I’m bitter) but the biscuits were perfect and my little one is now in a bit of a sugar coma. Sha says thank you so much and she hopes Henry liked his bike. I’m taken the unexpected moment of peace to do something nice for myself, as you asked. My mother is staying with me so she’s happy to watch Clara as I make my way to get gelato. Which is like your American ice cream but a million times better. There’s more fat, if you can believe it. And it’s perfect. I’m sitting there now, at a little cafe table in the shop. Everyone is looking at me like I’m insane - it’s an Italian shop so people usually come in here for cappuccinos or Italian pastries this time of year but her I’m sat with a tower of hazelnut ferrer in a waffle cone while it’s 2°. And I do not regret it. This gelato is delicious and you were right about the action of it, too. Everyone here thinks I’m crazy, but by coming out and getting a frozen treat, I feel like I’m doing it with you. Only Ted Lasso would do something so charming and ill-advised. It’s like you’re still here. I would love to see Kansas. Just tell me when to book my flight.

omg my gf is working on a farm that makes salsas and hot sauces and stuff now which is cool and its also cool that she can take home things that were canned weird or extra produce (im literally sooooo vegetables now bc i already got free stuff from my friends farm share at another farm earlier this week)
but she brought home this beautiful purple brown pepper that was orange on the inside and about 4 inches long and a kind of flat triangle and i couldnt find it anywhere on the list of pepper varieties the farm has or on lists of pepper varietals so i played pepper roulette and ate a tiny sliver and it was really sweet and not spicy at all which surprised me but that was from the tip of it without much pith or any seeds so then i ate a microscopic bit of pith and one (1) seed to double check and it immediately killed me and took me like 8 minutes of rinsing and ice and dairy products to get the capsaicin off my lips. and i hardly touched it outside of that sliver but now hours later its gotten on my hands and neck somehow lol
