what's the extent of Grisha and Cain's abilities? Grisha can see ghost and a bit more, but what can Cain do? Talk to ghost? see them? exorcize them?

The best way that I can explain this is this: Cain can only see ghosts, but Grisha can see (and manipulate to an extent) souls in general, both those of the living and the dead.

Just seeing ghosts is easier and less dangerous because there is no reason why doing it should cause any strain on the body, since ghosts aren’t tethered to a living body— it’s almost like seeing spots on the corner of your vision. Cain can see a ghost, hear it, maybe talk to it, but if he wants to make actual contact with it, he 100% needs to resort to the usual rituals. Basically, he can only see a soul after it has left a body for good.

Grisha can make contact with any soul with no need of mediums or complex rituals. This is why his condition is dangerous, both to him and the people around him, because it causes serious strain on his body and can seriously harm the other person.

When it comes to ghosts, he can also see them in the corner of his eyes, but he can omit them the way your brain omits your nose in your field of vision. Dealing with living souls is trickier and, again, dangerous, and since seeing and manipulating them are abilities that he has against his will, the only way he can keep them in check is by keeping his hands to himself. He can only see a person’s general aura at first glance, but touching them gives him more information. He can see someone’s memories in the strings that make up their souls, but since that’s not exactly ethical he refuses to do it unless he has no other choice. It’s not the only reason why he keeps his hands to himself and hates it when people touch him, but it’s one of them.

Both can do exorcisms since those can only really be done through rituals rather than through an ability, but Grisha has a certain advantage over it.

Cain can also overexert his ability, kind of in the sense of forcing yourself to read really tiny print without glasses to the point of giving yourself a headache. He could do some of the things Grisha can, but not by himself.

Grisha overexerting his ability is as dangerous as working so hard at the gym you pull an entire muscle. It can quite literally kill him if he’s too careless, which is why he’d rather do things “traditionally” through rituals and stuff unless the situation is too dire.
