Elain Archeron Cookie Exchange, Part 2!
Thanks again to @elainarcheronweek for creating such a wholesome event! I have so many new recipes to try!

Coffee Cake cookies are below!
I made these cookies for my dissertation prospectus defense, and I passed! These cookies are adapted from the palatable life, and are a cinnamon brown sugar cookie with a cinnamon crumble and vanilla icing drizzled on top!
COOKIES
1/2 cup butter softened (113 g)
1/2 cup vegetable oil (100 g)
1 cup brown sugar (215 g)
1 large egg
1 tsp vanilla
2 tsp cinnamon
2 1/2 cups all-purpose flour (325 grams)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
CRUMBLE
1/4 cup butter softened (56 g)
1/4 cup brown sugar (54 g)
1/2 cup flour (65 g) (I live in a humid place, you might need less!)
3/4 tsp cinnamon
pinch of salt
ICING
1/2 cup powdered sugar (56 g)
1 tbsp milk
splash of vanilla
INSTRUCTIONS
Preheat the oven to 350 F. To make the dough, combine the butter, oil and brown sugar. Mix for a couple minutes until it is smooth. The mixture should be lighter in color and fluffy. Add the egg and vanilla and mix again.
In a separate bowl, combine flour, cinnamon, baking soda, baking powder, and salt. Whisk together to evenly incorporate.
Add the flour mixture to the wet ingredients. Mix until just combined.
To make the streusel, combine all the ingredients in a bowl and mix with a spoon or your hand. Start with 1/3 cup of flour. The mixture should stick together, but should also crumble when you run it through your fingers. If it isn't crumbling, add 1 tbsp additions of flour until it crumbles, up to roughly a 1/2 cup of flour. If you live in a humid place, like me, it might take a little more flour than a 1/2 cup to make it work!
Using a large cookie scoop, scoop a ball of dough onto a lined baking sheet, at least 3 inches (7.5 cm) apart. These are large cookies, and they will spread.
Using the back of your cookie scoop or your fingers, make an indent on the top of the dough. Sprinkle a couple tablespoons of the streusel on the top of the cookie, into the indent.
Bake the cookies at 350 for 10-12 minutes. Let sit on the baking sheet for at least 2-5 minutes, and then transfer to a wire rack.
While the last batch is baking, you can make the icing. Combine the powdered sugar, milk, and vanilla in a small bowl and whisk until it's smooth and runny. If you like more icing, I’d double the recipe.
Once the cookies have cooled slightly, drizzle on lots of icing! Enjoy!

Roses des Sables

Rose des Sables are a simple and yet delicious chocolate treat, shaped like desert roses (hence the name), made with Corn Flakes; a staple of one's childhood and also, probably, one's earliest venture into "baking", which happily never gets old, and makes excellent use of leftover Easter chocolates! Happy Sunday!
Ingredients (makes 6):
75 grams/2 1/2 ounces leftover Easter chocolate (I used the4 last bits of my dark chocolate egg)
1 teaspoon cocoa butter
1 cup Corn Flakes
Line a tray with baking paper; set aside.
Break chocolate in a medium bowl, and fit over a small saucepan of simmering water (the bottom of the bowl should not touch the water).
When the chocolate starts melting, add cocoa butter, and stir with a rubber spatula until smooth, silky and glossy. Remove from the heat.
Gently fold Corn Flakes into the melted chocolate, coating them well.
With a tablespoon, scoop a heap of the mixture, and delicately spoon onto prepared tray. Repeat until you have 6 little heaps. Place in the refrigerator, to chill and harden, at least a couple of hours.
Serve Roses des Sables with coffee or tea.
