Just a in case you missed out yesterday 😁 There’s absolutely no reason why everyone can’t enjoy pancakes. I’ve made many types of pancake over the years, including vegan and gluten-free ones. These vegan chocolate banana pancakes are not only delicious and easy to make, but they’re healthy too. Banana replaces sugar as a sweetener in this recipe and the pancakes are made with wholemeal flour. Vegan double-chocolate fluffy pancakes!

Double Chocolate Pancakes

Double Chocolate Pancakes (using a normal pancake mix) from Baked by Rachel

Tips and more info based on my experience:

This is not a from scratch recipe. It’s a recipe on changing a plain (powdered) pancake mix into a chocolate pancake mix.

I used a different pancake mix than what was suggested and they turned out yummy. So any type of pancake mix should work????

I don’t know if a premixed liquid pancake mix will work for this.

Make sure to mix the mix just before you pour each pancake so chocolate chips are more distributed. The pic I took above is an example of me not doing that so the majority of the chocolate chips sunk to the bottom and the last two pancakes were overloaded with chocolate chips.

Alternatively, don’t mix the chocolate chips into the batter and instead sprinkle them onto the pancakes after you pour the batter onto the pan. That way you can control the amount of chocolate chips in each pancake.

I’ve made this with semi-sweet chocolate chips and another time with milk chocolate chips and both times were fantastic! I’m sure white chocolate chips would be good, too. You can have a little fun with it and try out the other baking chips available (peanut butter chips????)

All in all, if you like chocolate and pancakes I’d recommend trying this recipe :)
