i need 2 start eating vegetables. Haggard

Sam's Pizza Kitchen is open for business! Now serving garlic cheesy sticks in addition to Detroit-style pies!
Considering I have mastered bagels, pizza, cheese sticks, hand-cut fries, and italian beef sandwiches, I'm one really great cake recipe away from a pretty decent diner menu. We could feature Gary Style hot dogs!
Torn between calling it Dearborn Street Pie & Grinder or Sam's #1 Chicago Style. Maybe Sam's #1 is the bar that the Pie & Grinder diner is attached to.

what kinds of food does Acedia and her boyfriends usually make or buy to eat? you can learn a lot about a person by what they've got in their fridge and pantry:
Acedia: boxes of pasta/noodles, jars of sauces, hotdogs, buns, bread, cans of chili and soup, lots of snacks. water (with flavor packets) and ginger ale are all she really drinks. most of these are relatively cheap. also blueberry bagels, rice, chicken, cheese, ham, and eggs. and milk. (she's often hungry, but knows how to make a few meals that sit heavy for awhile, good for the boosted metabolism she's got) probably eats the least healthy out of the group. on special occasions she'll have a bit of money saved up to get some better food. she likes to visit and eat out at the [Commodite Cafe], they have a lot of her favorite foods for a good price.
Beck: the basics, bread and milk (whatever is cheapest), but also plenty of coffee, any kind of bagel really (tends to favor cinnamon & raisin most), boxed or frozen meals (a tv dinner kind of guy.. not really by choice), occasionally he'll stock up on some ingredients to make him something special that he can have leftover for a couple of days that's more filling and healthier. he likes takeout, anything cheap and easy. he's a busy guy most of the time so he doesn't have the time to cook very often. but when he does, he's actually not too bad. has a few recipe books in a cabinet in the kitchen, his favorites have colored notes sticking out of the pages.
Otto: eats the healthiest out of the group and has all the basics when it comes to what fills his pantries. he makes the time to prepare his own meals. having the actuators helps a lot. he's not exactly a chef nor a baker, but he finds it quite pleasant and not too different from his usual work, making food for himself and all his pets. he's usually got a stocked fridge and freezer filled with stuff for him and his pets, too. he's got a few cabinets of snacks and treats. enjoys both coffee and tea, and enjoys a nice everything or cheesy bagel, depending on the time of day. ..he has a slight sweet tooth and does his best to refrain from eating too many chocolate/chip bagels, he's moved to occasionally getting a honey one instead.

Maybe it's weird, but I have accepted that at least once a year, usually in the winter, I will make a meal that is entirely white or beige or brown. This time, it was creamy mac & cheese, life-changing roasted cauliflower with garlic everything bagel seasoning, and miso soup with daikon, cabbage, and leeks. So delicious! So monochrome. Recipes (such as they are) behind the cut.
Cauliflower: Pre-heat the oven to 250C and chop the cauliflower into large pieces. Dress with plenty of olive oil, salt, and pepper, transfer to a dish, and roast covered in foil for 5~10 minutes. Reduce the temperature to 210, remove the foil, and cook another 5~10 minutes. (Or, if you don't have a Japanese oven that drops the temp to 210 automatically "for your safety" (😑), enjoy your freedom.) Turn off the heat and sprinkle with everything bagel seasoning (mine has poppy seeds and roast garlic chips). Toss to mix. Let sit I. The oven until ready to serve. Lose your mind eating--this is SO good.
*If you’re making everything, while the oven is preheating, boil the water for the pasta and the soup.
Soup: Boil water and add dashi powder. Peel daikon and slice into half moons. Chop cabbage into chunks, separating the ribs and the leaves. Chop leek into thick diagonal slices. Add daikon, cabbage ribs, and leek to the boiling water. Once tender, add the cabbage leaves. If making ahead, turn off the heat when the cabbage leaves are tender. Dissolve miso paste into the liquid when ready to serve.
Mac & cheese: Boil water for pasta. When the pasta is 5 minutes from done, in a separate pan, make a light roux. When the texture is right, add a splash of milk and mix thoroughly. Add more milk until you have enough liquid to create a sauce for the pasta. Season to taste with salt, pepper, powdered mustard, a dash of nutmeg, cheesy seasoning if you have it, and chili pepper (I used smoked ghost pepper). Add shredded cheese gradually and mix until desired texture/taste is reached. Drain and add pasta, stir to coat.

Our family’s approach to Yom Kippur break fast is a Southern one. Many North Americans associate this feast with an array of sweet kugels, bagels with all of the accoutrements, rugelach in every flavor, blintzes and maybe a special cake or two. Chances are you have never seen a spread filled with egg casserole, cream cheese grits and homemade biscuits.
Before the early 1900s, my family had not either. How did this menu come to be for a half-Sephardi, half-Ashkenazi Jewish family? It’s a funny story.
I recently recovered my great-grandpa’s autobiography that had been stowed away in storage. He detailed the lengths that it would take to acquire kosher food in Georgia in the early 20th century. Quick synopsis: It required special connections and effort to secure the holiday food necessities from the certified grocer. The “good stuff” was reserved for the residents of Atlanta, Augusta and Savannah, while little was set aside for small town Jewish families. My family was one of the latter so we had no choice but to incorporate ingredients that were more accessible into our meal planning. Eggs, grits and flour were much easier to secure than specialty meats. Thus, Southern-style cuisine became intertwined with our family meals and traditions.
All of this to say that I’ve grown accustomed to this style of break fast. I prefer it to the regretful annual reminder that my stomach is not meant to digest mounds of mayonnaise-laden proteins or seconds of sugar immediately after 24 hours without. Simple, flavorful and easily digestible foods are the strength and strategy in our Southern-inspired menu.
The hearty pièce de résistance of our table is my mom’s egg casserole. It’s silky, cheesy and smells amazing coming out of the oven. Egg casserole can be made in advance; refrigerate overnight and forget it until an hour before sunset.
When going in for the bake, know that the egg mixture will be settled so the ratio of bread to egg mixture will look skewed. It’s not. The “casserole” bakes like a souffle, so the egg mixture will rise and create a pillowy texture to complement the crusty bits of challah that are exposed at the top.
Feel free to modify this recipe to use any kind of bread (i.e. wholewheat, gluten-free, sourdough, etc.), milk instead of half-and-half or a different sharp cheese (Gruyere or Manchego would be nice). That’s the essence of my mom’s style of Southern Jewish cooking — make it tasty, but creatively configure the ingredients to work for the specific group you’re hosting. Serve her egg casserole alongside cream cheese grits, thick-cut biscuits plus a little bit of fruit and not only will you be covered for the holiday, you’ll get a taste of the lesser known tradition that we hold so dear.
Notes:
The casserole needs to chill in the fridge for a couple of hours, or overnight, before baking.
Egg casserole can be made in advance; refrigerate overnight and forget it until an hour before sunset.

I made bagels for the first time today, and the recipe said to wash the bagels with egg whites, which meant the boys got herby cheesy scrambled eggs with the yolks + leftover whites. (Closest to furthest: Delphi, Squeaks, Catfood)
They love scrambled eggs so much and get them so rarely, so they're always SO EXCITED when they appear in their cage. 🧡
