Been trying to hold onto the wallet. Translation - eating foods high in protein but with less carbon footprint on the planet and cheaper on the purse. So of course I made nachos!! These aren't vegan but they are Instant Pot Magic. Gone are the 8 hour pre-soak and 2 to 4 hr cooktimes!! First, made the rice and folded in red and yellow bell peppers, and some fresh cooked chilled corn after the rice cooled. Next, pinto beans with garlic and chili and chicken broth. Black beans with cumin and oregano. All in a day no less!! The only fat is the extra sharp cheddar cheese and chips because I only used spices and the broth was low fat. You could always add a dollop of sour cream if you want and top the dollop with some diced Anaheim chilis...I had salsa on the side! Salsa IS a food group. Povo meal of the day. GF luxury mac'n'cheese. (I will do a vegan version but I has no nuts today). Boil up macaroni's. Drain. I then put 1.5 cups (ish) of milk (lactose free, but soy or almond or regular will work too) 1 tablespoon Massel vego chicken gravy powder. Stir for a min. Pop noodles back in pot. I cup grated tasty cheese, 1/2 cup pre grated parmesan, 2 teaspoons of nutritional yeast flakes (optional, but yummy and good for you). All gluggy and gooey in a few minutes. Served with organic cayene (organic has way more kick than conventional) and some salt. Cost around $1 a serve, maybe less. Made 4 serves. I got the pack of GF noodles fron NQR for under $2. Cooking Frozen Meat/Fish
Buying meat (which includes fish...I don't know why people think fish isn't meat) on sale or purchasing it frozen is a great way to save money, but many people complain about defrosting later. I never worry about defrosting. All I do is put the meat on the stove, cover it, and set the heat to low. It cooks thoroughly without burning and without wasting my time with defrosting. Here's some salmon I have cooking up right now, photographed after I flipped it:

Because it's frozen and can be icy, it creates extra steam under the lid, which appears to prevent the meat from drying out (I suppose it's because you're cooking it with moist heat instead of allowing all that moisture to escape).
Anyway, just a nice tip to keep your meals cheap to purchase and quick to prepare. Feel free to reblog this and add to it, or you can post to /r/CheapHealthyFood with your own food tips.

Firm tofu 1 block, 2 cups cooked brown rice, 1 med carrot, 3 old spring onions, half a can drained corn, big splog each of tamari, worcestershire sauce, coconut amino sauce (optional), sweet chilli sauce and fish sauce (omit for veg/vegan), dash of five spice, 1 tablsp crushed garlic and massel fake chicken stock, 2 tbsps, in the rice water. Fry all the veg and tofu and sauces and spices in a pan with a good slug of oil till sticky. Mix in cooked rice. Top with more rescued spring onion and dry fried sesame seeds (I collect weird shit for my pantry bit by bit and learn how to use things with google and the Larouse Gastronomie).
