Budines de TODO

Esta receta tiene la particularidad de que sirve genialísimamente para budín y para torta. Queda bien humedita por dentro y con una textura esponjosa genial <3. Otra cosa muy buena de esta receta es que se hace rapidísimo y los únicos implemenos que necesitan son un medidor en ml, un bowl grande, un tenedor y una espátula (además del molde en el que lo quieren hacer).

Aclaración sobre la foto: nunca le saqué una a estos budines en particular terminados. Me olvidé y se los mandé a Mariano al trabajo y fue muy triste cuando me di cuenta de que no tenía foto, así que les dejo unas de otra de las muchas veces que hice esta masa.

Rinde para un molde redondo de 24 cm., 12 muffins normales o dos budines medianos (apróx).

Ingredientes

250 ml crema (no usen La Serenísima, que es de pésima calidad; es mejor optar por una Sancor (incluso la larga vida) o Manfrey (esta última se consigue en el Día a precio bastante bajo))

250 ml azúcar

250 ml harina (leudante, o 0000 con una cdta. de polvo de hornear)

2 huevos grandes

El sabor que le quieran dar o las chuchería que le quieran agregar

Es importantísimo tener en cuenta que esta receta es en volumen y no en gramos. Para esto necesitan el medidor de por lo menos 1/4 litro. Precalentar el horno a 180C. Si van a usar un molde, enmantecarlo y enharinarlo. Tienen que poner el azúcar en el bowl y mezclarla bien con los huevos (idealmente rapidito para que el azúcar no coagule las yemas y queden pedacitos rígidos de yema que son un asquete). Una vez que está bien integrado, le tiran toda la harina encima y lo siguen mezclando (también si quieren le pueden poner acá una pizca de sal y el polvo de hornear) hasta que queda una masa medio seca.

Cuando está bien integrado, vuelcan los 250 cc de crema y lo siguen mezclando. No tengan miedo, que no se le hacen grumos a esta masa mágica. Una vez que está todo mezclado y feliz, ya tenemos la masa base para hacer budin de lo que querramos. En general nosotros le tirábamos medio paquete de Nesquick (o Nescau) para que quede una torta bieeeen crocante por fuera, y muy rica por dentro.

En esta ocasión, yo elegí hacer de chocolate con pedacitos de chocolate amargo, de vainilla con pedacitos de chocolate Caramelia (una línea de Valrhona que tiene chocolate con leche y un poco de caramelo) y de limón. Esta masa se cocina depediendo del tamaño, obviamente. Si hacen una torta grande (pueden duplicar la cantidad de masa y sacar una torta de 30 cm.), les va a tardar más o menos de 40 minutos a una hora. Si hacen budines o muffins puede tardar entre 15 minutos y media hora. Lo importante es que no abran el horno hasta que vean que la superficie ya está medio rígida (esta torta no se suele pasmar, pero así se evitan tragedias) y que la saquen cuando la pinchan y lo que usaron para pinchar sale sin masa líquida y un poco húmedo.

Algunas recomendaciones:

Si hacen budín de chocolate con cacao bueno, pónganle una cucharadita de bicarbonato de sodio. Esto va a ayudar a que la masa tenga un color más oscuro.

Si hacen budín con cosas (chips, frutos del bosque, nueces, etc.) agreguenle un poco de polvo de hornear.

Si usan frutos del bosque congelados, no los incorporen mucho a la masa porque va a tomar un color grisáceo.

Si hacen budín que no sea chocolate, en general le viene bien agregarle unas dos o tres cucharadas de harina al total de la masa.

Si van a hacer el budín (o masa de torta) de un solo gusto, lo ideal es que vayan mezclando el sabor a usar con la crema (vainilla, ralladura de cítricos, lo que sea).

Pueden hacer una base de vainilla y canela, ponerle rodajas de manzana verde adentro y espolvorear la superficie con azúcar para tener una torta muy rica y fácil de manzana. 

No hagan budín de Nutella. La masa queda como el orto (implosiona por más que lo cocines a horno super tranqui durante largo rato), quedando toda una parte caramelizada por arriba y un poco de masa densa en el fondo de la budinera. Son ricos, eh, pero esta no es una receta para eso.

Grimcrawl - Ok this ones not as fun. She’s not the best with rules so she gets in trouble with Grimcrawl pretty often. She takes her criticisms to heart! She wants to learn but also.. prank haha funny.

Kujaku - “WHY DONT YOU LIKE ME” Found out they don’t like her and tries 30xs harder to get along with him and it just makes it worse.

Nero - She likes Nero! I think they’d get along well! Probably the teacher she’d ask to eat lunch with. Definitely a favorite of Rivers! Probably have a hand shake.
