Enjoy a delicious and easy-to-make sheet pancake with the delightful flavors of whole wheat, almond, and Nutella. Perfect for breakfast or brunch with family and friends.

Ingredients: 1 cup whole wheat flour. 1/4 cup almond flour. 1/4 cup sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1 cup buttermilk. 1/4 cup unsalted butter, melted. 2 large eggs. 1 tsp vanilla extract. 1/4 cup Nutella. Sliced almonds for garnish.

Instructions: Warm your oven up to 375F 190C and grease a baking sheet. Sugar, baking powder, baking soda, salt, and whole wheat flour should all be mixed together in a bowl. Add the melted butter, eggs, and vanilla extract to a different bowl, and mix them together for a while. Add the wet ingredients to the dry ones and mix them together until everything is well mixed. Spread the pancake batter out evenly on the sheet pan that has been greased. Put small amounts of Nutella on top of the pancake batter and gently swirl it in with a knife to make it look like marble. Almond slices should be put on top. The pancake should be baked in a hot oven for 15 to 20 minutes, or until it is golden brown and a toothpick stuck in the middle comes out clean. Take it out of the oven and let it cool down a bit before you cut it into stripes or squares. It's best to serve it warm, with more Nutella and sliced almonds on top if you want.

Luckily for us, the rain stops before sunrise - and breakfast is sunny and warm. The view on the mountain range (with Mt. Cook) over lake Ohau is impressive and we have a late start into the day’s drive. Next stop was a historic gold mine village (Welshtown close to Bendigo), hidden in the hills. This landscape is dry and hot, with bizarre rock formations, yet another, new, view of New Zealand!
