🍠 4 ways to sweet potato! 🍠 Sweet potatoes are a great source of energy. They are packed with fiber, iron, calcium, and so many other great benefits 🤗 Vitamins C and E in sweet potatoes are shown to support eye health 👀 and not to mention promotes a healthy complexion 🧖🏽‍♀️ Being high in vitamin C and beta-carotene, sweet potatoes 🍠 can boost your immune system during these cold winter months 🥶 Read below for some delicious ways to make your sweet potatoes 🤤 1. Toast: Slice sweet potato into ~1/4 inch "toasts". Bake at 400 degrees for 30 minutes (flipping halfway through). Top with banana/peanut butter/cacao nibs and yogurt/raspberries/honey 2. Chips: Slice sweet potato as thin as you can, toss in avocado oil, sprinkle with salt & bake at 300 degrees for 50 minutes to 1 hour (watch towards the end and remove any smaller chips before they burn). Serve with guacamole or avocado mash 3. Fries: Cut large sweet potato into fries, toss in avocado oil, bake at 425 degrees for 30-35 minutes. Top with black beans, cheddar cheese, green onions, greek yogurt and avocado. 4. Noodles: Spiralize a large sweet potato, cook covered for ~5 minutes in large frying pan with steamed broccoli, diced red pepper, sliced red cabbage, cooked chicken (or tofu), sesame oil, coconut aminos, and garlic. Easy Peasy Vegan Granola INGREDIENTS • 3 cups unsweetened coconut flakes • 1/2 cups sliced almonds • 1/2 cup walnuts • 1/2 cup pecans • 1/2 cup raw sunflower seeds • 2 tablespoons chia seeds (optional) • 3/4 teaspoon kosher salt • 1/2 teaspoon ground cinnamon • 1/8 teaspoon ground cardamom • 1/2 cup honey • 2 tablespoons olive oil • 1 teaspoon vanilla extract PREPARATION Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper. Toss coconut, all nuts, chia seeds, if using, salt, cinnamon, and cardamom in a large bowl. Cook honey, oil, and vanilla in a small pot over medium heat, stirring occasionally, until hot and easily pourable, about 1 minute. Pour over coconut mixture and stir to combine. Spread mixture evenly on prepared baking sheet and bake, stirring once halfway through, until golden-brown and crisp, about 25 minutes. Do Ahead Granola can be made 1 week ahead; store tightly covered at room temperature. So good as a snack, over fresh fruit, or whatever you are hankering for! Monday was a super crazy day with no chance to work out (unless I went at 2am 😳😳😳) • One may or may not have treated ones self to drive through for lunch as it was convenient and could still fit into the calorie count for the day • By the end of the day (walked back into the house at 11pm) the last thing I wanted to do was cook so thanks to @woolworths_au new #SimplySteam packs I didn't have to cook and still had a filling and low everything meal • I didn't eat the full packs of each, just half of each which totalled 217 calories 😃😃😃 • #Repost @belindajaneling ・・・ It's that time of year again...
