Something salty to balance out the sweetness of Valentine's week. And these are gluten free. Crackers made with Rice and Ragi flour , flavoured with Rosemary and nigella with a bite of almonds. These go superbly with chai. Couple of things you need to be careful of,when you're using gluten free flour. I'm slowly discovering ancient grains and their flours. These grains/ flours are very healthy. Unless you have an allergy to gluten, eat these in combination with wheat and wheat products. Let's face it , gluten is a very maligned protein. Those mini tahini sesame seed cookies. Made with whole wheat flour, jaggery powder and fresh tahini and crusted with sesame seeds ,these Mini me's are super yum. They taste of winters, and lohri fires ,and chikki and til gud and अद्रक वाली चाय , and gossip sitting in a cost quilt. They taste of memories and happiness and home. Kubaneh is a traditional yemenite Jewish pull-apart bread,that is prepared baked at a low temperature in a tightly covered container so it gets steamed. The bread is sometimes sprinkled with sugar, served with a tomato dip or served with zhug and hot pepper-garlic chutney. #wikipedia The dough is proofed, cut ,shaped and proofed again ,then it is flattened and slathered with butter, then folded, rolled, cut and placed in round spring form tin to ferment. And baked. The crust of this bread is almost like puff pastry ,it smells like that, it tastes like that... it is absolutely amazing and then when you pull apart the centre is softer than the softest a fresh bread that you can eat. So this is my first try but it calls for a better kubaneh. And I will try till I get those peaks. Two days to Christmas. Christmas Sourdough. That bread our old man Romeo was jumping up to eat. Did you check the instastories? This boozy 80% semolina Sourdough. I set out the dough to autolyse with an 80% hydration starter. And then I just thought ....maybe I could add some of soaked fruit to my bread... And then that's one became a lot, because I ended up adding 400 GM's of soaked fruit to my dough. Damage control would've been adding more flour, but dude... Bread doesn't happen that way. So I did my s&f with fingers crossed.... And faced an absolutely murderous situation when I shaped the boule... And I forgot my stencil, so I scored a bow and bells... I'm not an ear carver,but I score pretty patterns. Well ,the bread was holey... Not that holey... But had a Christmas cake taste to is. And is almost gone. So we're making space for the garam masala cake coming up.
