Dear listeners, I regret to inform you that this may be the last you hear of me. I expect to turn into a snake any second now. I— I have accidentally eaten a wheat by-product. I swear I didn’t mean to. Carlos — my beloved Carlos, the last person I would expect this kind of betrayal from — offered me a sort of sweet he brought from his trip home. He said it had cinnamon; I like cinnamon, so, even though I have never seen this sort of food before, I let him feed me this— this vile thing. I made it through a few bites, before I understood that what I was tasting was, well, bread.

King Arthur Flour is my go-to 1:1 flour replacement, and they have a new line of GF bread and pizza flour that's made with (gluten free) wheat starch; the kicker for me is that while their GF all-purpose and premade cake/bread mixes all have GFCO certification, these two new products do not.
According to their site, they go through the same allergen screening process as their other GF products, but I feel like if they're claiming it meets the FDA standard for >20ppm, having a third party confirm that gives your customers better peace of mind.
I really wanted to try their bread flour mix, but I just dont know how much trust I can put into a mix that contains wheat (even scrubbed wheat) that hasnt been tested externally.

Every time you eat a cow product (in North America at least) there's a 75% ish chance that's an Alberta cow :) we have like 10 cow farms just outside Calgary alone it's awesome

It’s getting to the point where an author having an MFA from Iowa* or similar is like an active point against me reading the book. I don’t want your meandering ennui fest that made your workshop group cum over its vague message dysthymic protagonist and inconclusive ending. I want a bizarre plot written by some incredibly gifted working class freak at the expense of their sanity
*actually one of the most if not the most prestigious in the US not just a state chosen randomly for effect lol
