Ingredients: 4 medium potatoes, boiled, peeled, and cubed. 1 onion, finely chopped. 1 tomato, finely chopped. 1 green chili, finely chopped. 1/4 cup chopped cilantro. 1 tablespoon tamarind chutney. 1 tablespoon mint chutney. 1 teaspoon chaat masala. 1/2 teaspoon ground cumin. 1/2 teaspoon ground coriander. 1/4 teaspoon red chili powder. Salt to taste. 2 tablespoons lemon juice. 2 tablespoons roasted peanuts. 2 tablespoons chopped green onions optional. 2 tablespoons sev optional.
Instructions: Put boiled potatoes, chopped onion, tomato, green chili, and cilantro in a large bowl. To this mix you should add chaat masala, ground cumin and coriander, red chili powder, salt, and lemon juice. Be sure to mix the ingredients well so that they are all covered. Move the mix to a plate for serving. If you want, you can add sev, chopped green onions, and roasted peanuts as a garnish. Serve this vegan aloo chaat right away and enjoy its spicy, vegetable, and potato-y goodness!

Instructions: Preheat oven to 400F 200C. Cut the red bell peppers in half, remove seeds, and place them on a baking sheet, cut side down. Roast the peppers in the oven for 20-25 minutes or until the skin is charred and blistered. Remove the peppers from the oven and let them cool. Once cooled, peel off the skin and discard. In a blender, combine the roasted red peppers, soaked cashews, minced garlic, olive oil, vegetable broth, salt, and pepper. Blend until smooth and creamy. In a large skillet, heat olive oil over medium heat. Add the spiralized zucchini noodles and saut for 2-3 minutes or until tender. Pour the creamy red pepper sauce over the zucchini noodles and toss to coat evenly. Cook for an additional 2-3 minutes until heated through. Serve hot, garnished with fresh basil leaves. Ingredients: 8 spring roll wrappers. 1 cup shredded cabbage. 1/2 cup shredded carrots. 1/2 cup bean sprouts. 1/4 cup thinly sliced mushrooms. 1/4 cup thinly sliced bell peppers. 2 cloves garlic, minced. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 teaspoon grated ginger. 1 teaspoon cornstarch. 1/4 teaspoon black pepper. Vegetable oil for frying.
Instructions: In a bowl, combine cabbage, carrots, bean sprouts, mushrooms, and bell peppers. In a small saucepan, heat sesame oil over medium heat. Add minced garlic and grated ginger. Cook for 1-2 minutes until fragrant. Add soy sauce, cornstarch, and black pepper to the saucepan. Stir well until the mixture thickens, about 2-3 minutes. Remove from heat. Pour the sauce over the vegetable mixture and toss to coat evenly. Place a spring roll wrapper on a clean surface with one corner facing you. Spoon 2-3 tablespoons of the vegetable filling onto the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly. Moisten the top corner with a little water and press to seal the spring roll. Repeat with the remaining wrappers and filling. Heat vegetable oil in a deep frying pan or wok to 350F 175C. Carefully place the spring rolls into the hot oil and fry until they are golden brown and crispy, about 3-4 minutes per side. Remove the spring rolls from the oil and drain them on paper towels. Serve the fried spring rolls hot with your favorite dipping sauce.

Ingredients: 1 tbsp olive oil. 1 onion, diced. 2 cloves garlic, minced. 2 carrots, diced. 2 celery stalks, diced. 1 can 14.5 oz diced tomatoes. 4 cups vegetable broth. 1 cup dried pasta any shape. 1 can 15 oz cannellini beans, drained and rinsed. 1 tsp dried thyme. Salt and pepper to taste. Grated Parmesan cheese, for serving optional. Fresh parsley, chopped, for garnish optional.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Add the garlic and onion and cook until they get soft. Toss in the celery and carrots, and cook for three to four more minutes. Salt and pepper should be added along with the diced tomatoes, vegetable broth, and dried thyme. Bring to a boil, then lower the heat and let it cook for 10 minutes. Put in the cannellini beans and dried pasta. Simmer for about 10 to 12 minutes, or until the pasta is done. Check the seasoning and make changes if needed. If you want, you can serve it hot with grated Parmesan cheese and fresh parsley on top. Have fun!

Ingredients: 2 cans chickpeas, drained and rinsed. 2 tablespoons olive oil. 2 teaspoons ground cumin. 2 teaspoons ground paprika. 2 teaspoons ground turmeric. 1 teaspoon ground cinnamon. 1 teaspoon ground coriander. 1 teaspoon garlic powder. Salt and pepper to taste. 4 large whole wheat tortillas. 1 cup shredded lettuce. 1 cup diced tomatoes. 1 cup diced cucumbers. 1/2 cup sliced red onion. 1/4 cup tahini. Juice of 1 lemon. 2 cloves garlic, minced. Water, as needed. Fresh parsley or cilantro for garnish.
Instructions: Get the oven ready by heating it up to 400F 200C. Add olive oil, cumin, paprika, turmeric, cinnamon, coriander, garlic powder, salt, and pepper to a bowl. Toss the chickpeas so that they are evenly covered. Put the chickpeas on a baking sheet and bake them for 20 to 25 minutes, stirring them once or twice, until they are crispy. While that's going on, make the tahini sauce by mixing the tahini, water, lemon juice, and minced garlic together with a whisk. Slowly add water until the consistency you want is reached. Add salt to your liking. To make tortillas soft, heat them in a dry pan or the microwave for a few seconds. Place a big spoonful of tahini sauce on each tortilla. Then add shredded lettuce, diced tomatoes, cucumbers, sliced red onion, and crispy chickpeas on top. Add fresh cilantro or parsley as a garnish. To make a burrito, fold the sides of the tortillas over the filling and then roll them up tight. You can eat it right away or wrap it up tightly in foil and take it with you.

Thaiquet Southern Thai Restaurant, located at 430 Upper Changi Rd, #01-05 East Village, can be found along the same stretch as Hong Kong Street Family Restaurant and Fisherman’s Claypot. On our recent visit, we decided to indulge in their vegetarian offerings as my wife follows a vegetarian diet on alternate months, and I often join her for a meal or two. We were thoroughly impressed by the flavours and quality of the dishes.
