btw if you're invested in making vegan or otherwise eggless meatballs of any kind you have GOT to try besan (chickpea flour). toast it in a pan until golden brown to give it a little extra push if you want. STOP messing around with wheat flour + tapioca flour + ground flaxseed or whatever mess that will have your meatballs falling apart under the gentlest simmer. I used chickpea flour once in a meatball on a whim bc it was a cuisine (maybe Nepali?) that frequently used besan, and those things STUCK together. game changer
also! making bánh xèo made me realise that chickpea flour + coconut milk + turmeric + kala namak = an excellent egg substitute for omelettes, fillings &c. it's what I mix my chatamari topping with to replace the raw egg

You know what, I reblogged it, then realized I should not participate in that negativity.
Humans everywhere like to eat good-tasting food. If they have no money they will find a way to make something taste as good as they can.
Boiled peanuts are eaten on at least four continents. Hot grains cooked with liquid are a staple food for basically everyone. Meat-dippings-based dishes with bread are generally going to be very good because rendered fat is good and bread is good and salt is good. Unseasoned food generally tastes bland, so anyone who can taste food will try to season it somehow.
And of course, the food most likely to be mocked is food eaten by people who can’t afford what’s served in abroad in restaurants as the representation of foreign national cuisine.
