4:00-12:00pm, 2025.
Cardboard, dry ice, box fan, ladder, plastic curtains, metal cart
In creating the structure of the 8ftx8ft room, ideas of containment and sterility came to mind. To continue my exploration on the relationship between work and self, I decided to recreate a walk-in freezer space. The juxtaposition of food service items in a wooden room intensify the ideas of intense labor in the day to day and remove the refinement we traditionally associate with the food industry. As my routine progresses throughout the day, the freezer becomes a meditative space, separating the self from the fast-paced, high stress environment that comes with the job, becoming borderline cryotherapy until the sound of the oven brings you back into real life.

My finance & purchasing teacher: What do we call it when someone needs to remake an order?
Me: a fuck-up?
My teacher (while cracking up): I meant a void
#He had said it first#we were talking about server voids & kitchen voids a little while ago & one of the kitchen voids was an error by the cook#One student joked that we should call it a happy accident#Chef said 'I think fuckup should be on there personally' in response XD#so when he asked this question a few days later I legit thought he was asking us to name the void (see: error)#so I just went ahead with fuckup in front of the entire class#void#void was the correct term#Anywaus#dom og#kitchen talk#culinary#culinary meme#culinary industry#foodservice#foodservice industry

The thing that really bugs me about minimum wage jobs is the scare tactics used by companies. I worked for McDonalds earning 7.50 an hour. If I had to live on my own there is no way it would have been survivable. During those years in my state there was a lot of concern about "raising wages". A lot of our customers were very poor, and the company made it clear they were raising costs of their food in order to pay workers more.
The problem isn't that people aren't paying enough for their food. Food is stupid expensive and everyone should be able to afford it. The problem is that they didn't need to raise the price of their food. The owners just decided to "be benevolent" toward us poor crew members and take it out of the pockets of people who could not afford to eat in the first place.
The way that our wages should have been fixed is that they should have decreased the difference between the highest paid and lowest paid employee. But of course, you know, the people at the top are greedy little piggies who don't really think their workers or customers deserve to live.
Instead of maybe deciding that three yachts are enough, owners of huge companies decide to hike the prices of their goods/services and frame it as though their hands were tied. They tell people who have to decide between buying their first meal all day or dinner for their kids that the only way the people serving them can eat is if they pay more. They scare the poorest people into believing that they themselves should be paid less. When in reality it is their greed fucking everyone over.
Honestly I always thought there should be a law that goes something like "the owner of a buisness is not allowed to make over x times what the lowest worker is paid, including bonuses and all that jazz". And the x should be like, four at most.
It should be illegal for the owners of multimillion dollar corporations to live off the work and fear of people wbo cannot even afford the food they are serving (and to let you know, that's stayed the same- I work at a different job now, making twice as much, and still am not paid enough to regularly buy the very products I make as fast as I can for hours straight).
Anyway, I think if that disparity was fixed then housing and cost of living would follow a little easier.
We don't just need a higher minimum wage, we need a lower maximum wage.
I feel like a good shorthand for a lot of economics arguments is "if you want people to work minimum wage jobs in your city, you need to allow minimum wage apartments for them to live in."
"These jobs are just for teenagers on the weekends." Okay, so you'll use minimum wage services only on the weekends and after school. No McDonald's or Starbucks on your lunch break.
"They can get a roommate." For a one bedroom? A roommate for a one bedroom? Or a studio? Do you have a roommate to get a middle-wage apartment for your middle-wage job? No? Why should they?
"They can live farther from city center and just commute." Are there ways for them to commute that don't equate to that rent? Living in an outer borough might work in NYC, where public transport is a flat rate, but a city in Texas requires a car. Does the money saved in rent equal the money spent on the car loan, the insurance, the gas? Remember, if you want people to take the bus or a bike, the bus needs to be reliable and the bike lanes survivable.
If you want minimum wage workers to be around for you to rely on, then those minimum wage workers need a place to stay.
You either raise the minimum wage, or you drop the rent. There's only so long you can keep rents high and wages low before your workforce leaves for cheaper pastures.
"Nobody wants to work anymore" doesn't hold water if the reason nobody applies is because the commute is impossible at the wage you provide.
