MY RECIPES:
SWEET POTATO PIE
MAKES: 1 x 8-9” pie
INGREDIENTS
1 ½ lbs sweet potatoes (2-3 potatoes) (3 cups flesh), whole, to be roasted
1 x 12 oz can evaporated milk
1 cup (200g) dark brown sugar
2 eggs
5 Tbsp (70g) butter, melted
1 Tbsp lemon zest (zest of 1 lemon)
1 tsp lemon juice
1 Tbsp cinnamon
½ tsp kosher salt
½ tsp ginger
¼ tsp nutmeg
a few cracks (⅛ tsp) freshly ground black pepper
+
1 disc (½ recipe) All-Butter Pie Crust*
*I’ve posted my pie crust recipe on tumblr before tagged “recipes”
DIRECTIONS
1. Roast sweet potatoes: Preheat oven to 400°. Line a baking sheet with foil. Wash and scrub whole sweet potatoes. Pierce potatoes all over 3-5x with paring knife. Roast 45 minutes until fork tender. Let cool, then collect 3 cups flesh.
2. Prepare crust: Roll out pie dough (12-14” diameter circle, ¼” thick). Press into tin and crimp edges. Chill shaped shell in fridge or freezer until ready to use.
3. Preheat oven to 350°.
4. Make filling: Put all ingredients in food processor. Pulse 3-4x until smooth. (You can also use a blender, or simply beat ingredients until fully combined.)
5. Pour filling into pie shell.
6. Bake 45-60 minutes until puffed and firmly set (toothpick clean) everywhere except the very center, which should retain a very slight jiggle (but not look liquid). The center will set as it cools. Start checking at 45 minutes and continue baking at 5 minute intervals until set. (If crust gets too brown, shield edges with foil.)
7. Let cool completely before serving, at least 1 hour.
NOTES
Roast the potatoes whole, in the skins, so the sugars & starches properly caramelize. Do not steam or boil potatoes, even whole. They will take on water and make the filling soggy.
You can roast the potatoes up to 1 week in advance. Collect flesh day of.
PECAN PIE
MAKES: 1 x 8-9” pie
INGREDIENTS
2 cups (250g) chopped pecans
1 cup (200g) dark brown sugar
1 cup light or dark corn syrup
¼ cup (56g) butter
4 eggs
1 Tbsp vanilla
1 tsp kosher salt
1 tsp cinnamon
+
1 disc (½ recipe) All-Butter Pie Crust
DIRECTIONS
1. Prepare shell: Roll out pie dough (12-14” diameter circle, ¼” thick), press into tin, crimp edges. Chill shaped shell in fridge or freezer until ready to use.
2. Preheat oven to 350°.
3. Cook sugar syrup: In a saucepan, bring sugar, corn syrup, and butter to boil over medium heat for 1-2 minutes, whisking constantly, to cook sugar. Take off heat. Let cool slightly, 3 minutes.
4. Temper eggs: In a bowl, beat eggs until lightened and frothy. Slowly, while whisking, pour ½ cup of warm syrup into eggs. Whisk to combine. Then, while whisking, slowly pour egg mixture back into the remaining syrup mixture. Whisk until smooth.
5. Whisk in vanilla, salt, and cinnamon.
6. Pour chopped pecans into bottom of pie shell. Pour filling over pecans.
7. Bake 45-60 minutes until fully set everywhere except the very center, which should retain a very slight jiggle. The center will set as it cools. Start checking at 45 minutes and continue baking at 5 minute intervals until set.
8. Let cool completely before serving, at least 1 hour.
NOTES
Many recipes do not require you to cook the sugar before baking the pie. However, pre-cooking the sugar (and tempering the eggs) ensures the ideal gooey, silky, perfectly smooth texture.
Toast pecans if desired: Arrange pecans in a single layer on a baking sheet and toast in preheated oven 5-8 minutes.

Hi winnie!!!!! I've been fine-ish, but I've definitely been better. Mostly just frustrated about writer's block/burnout, but I'm trying to let myself chill lol. I hope you're doing okay as well!
Okay so my irl friends and I are big card/board game people. Nerts is our go to card game, but for board games I'm a huge Catan fan lol. There's been a few times where we've had too many people and played what we call "Ultimate Catan" where you're in groups of 2-3 and you only have 10 seconds to make all of your moves—one person trades, one person places settlements/roads, and one person collects goods. We also loooove Rummikub!
I have so many recipes!!! I love to cook, so I frequently find recipes on tiktok and try those out (most of them have been huge successes! These are some of my favorites and frequent regulars (im not linking because tumblr NEEDS to create a widget apparently):

For jjk, my favorite story arc is still Hidden Inventory or Shibuya. Both are just so intense and dramatic and there's a ton of loss there that really affected me. My least favorite is probably different chunks of Culling Games. There's a lot of fights that I didn't care about, but this doesn't mean that I dislike Culling Games! I think it was an extremely important and enjoyable arc!

Red Curry Dumpling Soup Recipe:
- Sauté 1 diced onion & minced garlic in 2 tbsp veggie oil.
- Add 2 tbsp Thai red curry paste, 1 cup coconut milk (or almond milk + 1 tbsp corn starch), 3.5 cups water, 1 tsp soy sauce, 2 tbsp fish sauce, & 1 tbsp chili oil.
- Stir in ginger, garlic, & onion powder to taste.
- Add 2 packs of udon noodles, 10 frozen dumplings, & 1 chopped pak choi.
- Garnish with parsley flakes & enjoy!

大家好! In a previous post, I mentioned that I'd try Ireland's sharp cheddar. Turns out, they call it mature cheddar but, a rose by any name, as the saying goes. The texture is very crumbly; although the cheese came in slices, it broke off easily between my fingers. Flavour-wise, it's more intense than normal cheddar. This would be better sprinkled over vegetables or pasta rather than eaten with crackers. They also have red cheddar, which I'll try next for my weekly simple breakfast.

Noodles, when cooked to QQ perfection, are a love language. From instant ramen hacks to scallion/shallot/chilli oil noodles and wonton/tomato egg/fish soup/bak chor/curry chicken/duck/char siew/seafood/lobster/prawn/hokkien noodles, char kway teow, mee soto, mee rebus, mee goreng, bee tai mak, laksa, pad thai, pho, glass noodles, udon, soba, la mian (handpulled noodles), ban mian (board noodles), dao xiao mian (knife cut noodles), guksu and ramyeon, this delicious staple has captivated the world. They've cast a spell over me for sure; I eat them at least once a week!
I returned to the stall which sells dong bei leng mian (Northeastern Chinese cold noodles) as well as tomato egg noodles. This time I tried their hong shao pai gu dao xiao mian (braised pork rib knife cut noodles). This stall is manned by a middle aged couple from China. For $8, I got a good portion of meat, bak choy and hei mu er (tree ear mushrooms). Well marinated, tender pork, crunchy fresh vegetables, highly slurpable noodles and tasty clear broth, what's there not to like? They also have this dish in ma la soup, but I'll save that for the rainy months. I might try their jiao zi mian (dumpling noodles) next time I visit.

If you champion inclusivity, why are you excluding Palestine at the UN when most other countries support a two-state solution? The world is being held hostage by America and we don't like it. 下次见!

In a modern AU, what kind of food (sushi, Mexican, Chinese) would be the ROs' favorite?
Ooh, good question!
Blade: Japanese food (leaning more along shioyaki salmon with rice and miso soup rather than sushi or tempura)
Trouble: American food (things like hamburgers, hot dogs, sub sandwiches, pizza, American diner breakfast, etc.) or British food (fish and chips, shepherd’s pie, etc.). He’d also love Chipotle!
Tallys: Healthy, green, or paleo food (salads, wraps, vegan desserts, etc.)
Shery: I think her favorite food type would be desserts rather than like a specific type of national/ethnic cuisine, particularly Asian desserts (Japanese sponge cakes, cloud cakes, fluffy cheesecake, mochi shaped like animals) or like the food you’d eat in a cafe or bakery, like a croque madame or a croissant or something like that? Or charcuterie or afternoon tea fare if that counts as a type of food! She typically doesn’t go in for the heavy meals as her favorites!
Riel: French food (pate, ratatouille, confit de canard, crepes, etc.) or sushi
Chase: Chinese food (roast Peking duck, street noodles, dumplings, etc.) or Korean food (bibimbap, kbbq, sundubu-jjigae)
Red: Mediterranean and Greek food (pitas, gyros, hummus, etc.)
Ayla: Indian food (curries, tikka masala, etc.) or Thai food (spicy noodles, tom yum kha, etc.) or Mexican food (tacos, burritos, tamales)
Briony: Southern US comfort food (chicken and biscuits, cornbread) or Northeast comfort food (lobster rolls, clam chowder in a sourdough bread bowl)

Homecookings [Feb ed.]
Like I said at the beginning of the yr, one of my goals is to experiment with food more.. . It is more challenging than it sounds when it comes to the physicality of it.
* Shift work makes it hard. My breakfast-lunch-dinner (3 meals) become 5-6 sometimes & the times are obviously around the clock so occasionally I ask myself “what should I eat now?” It’s not so much I have ‘nothing’ to eat or I have too many options, but rather, I gotta decide for my next meal(s). Should I bring this work? Would this taste ok after x hrs & reheated up in a microwave? Etc.. .
* I am an anti of meal-prepping. I’m glad it works for ppl (favourable or not) but it’s not for me. Some of the things I make are spicy to the point where my family can’t handle it, & a good proportion of these dishes are difficult to make in small, individual portions, which means I end up eating it for several meals consecutively. In turn, I’m meal-prepping without having an intention to.
* Not having a “free” kitchen makes it spatially limiting to cook. My parents do majority of the cooking & since we eat together, there’s simply no room for me to do my thing.
All in all, I hope to cook more but it’s hard to, therefore I treasure each opportunity & make the most out of each use of the kitchen/meal : )
Which brings me to. .. the content of this post. Instead of doing individual posts for random things I make (unless it’s deserving of having its own dedicated post), I’ll just write a summary post at the end of each month, sharing these random acts of experimenting! **Note: some aren’t experimental in nature as I’m familiar with/have made it before on another occasion.
^ Mexican rice & meatballs with some homemade cranberry sauce over a bed of iceberg lettuce (topped with some shredded mozza). Inspired by taco salads~ I just used the Sidekick Mexican rice that can be done up in 10mins or so. While that’s cooking, I prep my lettuce and cook the meatballs on the side. The whole thing took about 20mins to make
^ Bokchoy + seaweed miso soup // deluxe ddeokbokki. My “deluxe ddeokbokki” basically contains several street food items: dumplings, fish cake, rice cakes, & kim-mari (which are deep fried seaweed rolls with glass noodles inside). I added a bit of each, & cooked it with kimchi, chicken broth, & the fire chicken instant noodle sauce that’s too hot to handle on its own. Oh! & I also added some dried seaweed shreds in just ‘cuz!
^ A closer look at the deluxe ddeokbokki. SO GOOOOOOD!
^ Beef-wrapped enoki mushrooms, with bulgogi sauce & fried garlic flakes on top. I had this same thing for dimsum when I was in Richmond, B.C. last February. Except the bundles were steamed in the bamboo steamers & the sauce was different (but same idea!). I pan-fried these. I would’ve wished the beef to be smokier; but with enoki mushrooms emitting moisture, it’s hard to get that crisp appearance. Room for improvement for the next time :P
^ Baked beefsteak tomato with shredded mozza + honey-infused balsamic vinegar. I baked this in my toaster oven till the cheese melted, then sprinkled some more cheese before serving. I like having that difference in cheese texture. One thing to improve on for the next one: need to cut thicker pieces of tomato.
^ Chicken + eggplant in red Thai curry with tartar-coated toasted bread. This red curry has been in the fridge for who knows how long... that its original jar/contained was tossed & the sauce/paste was actually in a small glass tupperware container. Anyway, it was spicy! The zestiness of the tartar sauce kinda took away from of the spiciness so it was nice!
^ Avocado toast with ramen noodle snack! Had some leftover spicy rice cake-flavoured noodle snack, so I sprinkled some on top.
^ Fusion kimchi fried rice with soup (cabbage, tofu, & chicken breast in Knorr chicken broth). It’s “fusion” bcos I (first) used some butter to toss up some frozen meatballs, & then I added the rice + kimchi + egg in.
^ White beech mushrooms tossed in lemon pepper + truffle oil on buttered toast. Had an abundance of these mushrooms & I was trying a new way of eating them. Usually it’s very unexciting & used in a stirfry or a mushrooms-only stirfry in oyster sauce or something. But this was not bad!
^ Parmesan spaghetti with (pre-seared) garlic beef. The sauce was made from parmesan powder, milk, butter, fresh ground black pepper, & a little bit of salt. Rather than a “cream”, it was drier & I was gladly able to control the flavour of it. I sprinkled a bunch of dried oregano on top, which gave the pasta a slightly bitter taste to contrast with the saltiness.
^ Lettuce wrap meal for one :D used iceberg lettuce; beef was just lightly seasoned with salt & pepper; kimchi; & rice noodles + white beech mushrooms in a spicy soup. The soup consisted of: gochujang (for the sweetness, mainly), soy sauce (for savoury flavour), & a bit of fire chicken sauce (trust me! A bit is enough!!).
Hopefully I’ll still be blogging at the next leap year :)

Overboard was an understatement as he was led through the table was filled to the brim with different foods in preparation for their team’s appetites manly Blue and Green’s.
Miso soup, tomato soup, chicken soup, grilled and fried chicken, fried fish, Pierogi dumplings, Pad thai, Red curry, Gỏi cuốn, Chana masala, Spring rolls vegetarian and duck, taco’s, ramen, soba, Drumsticks, Sticky ribs, Sushi, egg fried rice, steak with soy, etc. Hopefully Green was hungry at least.
