I CANT PICK OMGGGG THATS UNFAIR😭😭😭 But heres my top favs:
Literally any spinach dish she makes: palak paneer (spinach and cottage cheese), palak gosht (spinach and meat), aloo palak (potatoes and spinach). She ALWAYS keeps a batch of spinach frozen at home so that she can make it for me like 3 times a month.
Omg omg I love rice dishes but the way she makes pulao (or pilaf, basically rice made in mutton/lamb/meat stock with meats AND sometimes with cashews and raisins and carrots AND EVERYTHING GOOD)
When I was young, she'd make me these shaami kebab sandwiches while I'd play with her sons, aka my bffs and also my brothers. These sandwiches are just like- a core childhood memory.
AND ON SUNDAYS, they always make halwa puri (just Google it) and its so good with potato and chickpea curries😭😭😭😭
For healthy sweets, the uncle would give me this homemade Greek yogurt with sugar mixed in it, and yall it hit the spot everytime😭😭

As the final session unfolded at Scarborough Arts, the air was filled with the rich aroma of memories and the sweet anticipation of dessert. Over the past few weeks, our senior participants gathered virtually, not only to explore culinary delights, but to also share the deep-rooted stories embedded within the recipes of their lives.

Wendy, whose father's journey to Canada was guided by the unexpected detour of career change, recounted how his accounting skills were eclipsed by the demand for skilled labor. He was skilled at making a unique sweet potato dessert adorned with silk strands of sugar, which he fed Wendy as well growing up. This dish, a testament to adaptation and resilience, became a symbol of the diverse threads that weave our immigrant narratives and Wendy recreates it at home to share with our group, in honour of her father.

In the midst of these heartfelt stories, Lisa added a touch of humour with her tale of a delicious Trifle passed down through generations. The irony unfolded when her mother sent the dessert to school, only to discover that its inclusion of Sherry rendered it unsuitable for young students.
As the 12-week program reaches its conclusion, the participants eagerly anticipate the release of "Cooking Up Community," a book that will immortalize not only the recipes but the rich narratives and cultural exchanges that occurred in the Scarborough Arts workshops. The upcoming book launch and exhibition promise to be a celebration of the diverse stories that make up the heart of this community program.
The final session was not just an end; it was the beginning of a new chapter, one that will be written and savoured with each turn of the page in "Cooking Up Community” coming soon…
We will also hold a book launch in March of 2024, and the participants will be honoured with an exhibition of their works.

Halwa Puri Recipe: A Quintessential Pakistani Delight
Ingredients
For Halwa (Sweet Semolina):
Semolina (Suji): 1 cup
Sugar: 1 cup
Water: 2 cups
Ghee (Clarified Butter): 1/2 cup
Cardamom Powder: 1/2 teaspoon
Almonds and Pistachios (sliced): for garnishing
For Puri (Fried Bread):
Whole Wheat Flour: 2 cups
Salt: 1/2 teaspoon
Water: as needed for kneading
Oil: for deep frying
Instructions
How to Make Halwa (Sweet Semolina):
Roast Semolina: Heat ghee in a pan over medium heat. Add the semolina and roast it, stirring frequently, until it turns golden brown and releases a nutty aroma. Be patient and keep the heat low to avoid burning.
Prepare Sugar Syrup: In another pan, heat the water and sugar together until the sugar is fully dissolved. This creates a simple syrup.
Combine: Gradually pour the hot sugar syrup into the roasted semolina, stirring continuously to prevent lumps. The mixture may bubble up, so be careful.
Cook: Continue cooking on low heat, stirring occasionally, until the mixture thickens and starts to pull away from the sides of the pan.
Finish: Add cardamom powder and mix thoroughly. Remove from heat and set aside.
How to Make Puri (Fried Bread):
Prepare Dough: In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water, a little at a time, and knead to form a smooth, elastic dough. The dough should be soft but not sticky.
Shape Dough: Divide the dough into small, equal-sized balls. Roll each ball into a small circle or oval shape using a rolling pin, keeping the thickness even.
Heat Oil: Heat oil in a deep frying pan or wok over medium-high heat. You can test the oil temperature by dropping a small piece of dough into it; if it bubbles and floats up, the oil is ready.
Fry Puri: Carefully slide the rolled puris into the hot oil. Fry until they puff up and turn golden brown on both sides, flipping as needed. Remove with a slotted spoon and drain excess oil on a paper towel.
Serving:
Serve the hot, crispy puris with the sweet semolina halwa. Garnish the halwa with sliced almonds and pistachios for added texture and flavor.
Halwa puri is often enjoyed with savory sides like chole (chickpea curry) or aloo ki sabzi (potato curry) for a complete meal.
Tips:
For an extra touch, you can also add raisins to the halwa while it’s cooking.
Make sure the oil is at the right temperature; too hot and the puris will burn quickly, too cold and they won’t puff up properly.
