This Strawberry Summer Sheet Cake was a very simple bake that I made on a whim last night when I had a rare burst of energy and lessened pain. 🙌
The batter and finished cake smelled and tasted like it came from a boxed cake mix, in a good way! The recipe is from Deb Perelman at Smitten Kitchen, and I don't think there's been a recipe from her – in 14 years! – that I've tried and not liked. I do make substitutions though: I used vegan butter, egg replacer, and 1% skim cow's milk [which I don't normally have on hand, but happened to have leftover from the Creamy Parmesan Spring Vegetable Skillet that I made last weekend (that one's from Ellie Krieger, another whose recipes I always love)]. 👍
I'd had a 2-pound clamshell of giant* strawberries that were softening in the fridge, so I cleaned, hulled, and cut them up. *Half of the container were giant sized! Most of the rest were simply large, and literally only two others were "normal" sized strawberries! I put the largest into a 1/4 cup measuring bowl to try to demonstrate the immense size, then remembered the giant strawberry I had almost exactly two years ago, so I made a photo collage to compare them. This year's giant strawberry was cut into TWELVE (12) pieces before being placed on the cake, instead of being halved like the directions state! I didn't weigh them, just shoved as many pieces as I could into the cake pan, then my pup and I shared the remainder. 🐶❤️🍓
