I have posted so many recipes with the beloved Feta cheese, because truly who doesn't love feta, right?
If you are thinking: "wow another feta recipe", I will tell you that this lunch dish is very trendy at the moment not only in Greece but is served in restaurants around the world and is hugely popular for a reason!
So it was high time for me to show you how to prepare this super delicious sandwich at home as a simplified method but with a taste similar to the renowned Greek Spinach and feta pie (spanakotiropita).
Let's start already!
Suitable for lacto-vegetarians
 
INGREDIENTS:
·      6 slices Bread either white or sour dough
·      120 gr. / 4.2 oz Feta cheese, crumbled
·      50 gr. / 1.75 oz Metsovone cheese, grated (altern: Provolone)
·      50 gr. / 1.75 oz sweet, roasted, Red Pepper, in strips (Florina variety)
·      200 gr. / 7 oz Fresh, baby Spinach, washed, strained
·      1 spring Onion, finely chopped
·      2 tbsp. Dill, finely chopped
·      2 Tbsp. / 30 ml Olive oil
·      1 tbsp. / 15 ml Butter, soft
·      Some ground pepper

METHOD:
A.    Cook the spinach first:
1.     Place a non-stick frying pan (skillet) over medium to high heat. Add the olive oil to the pan and let it heat up.
2.     When oil is hot, throw in the green onions and sauté them for 1', stirring regularly.
3.     Next add the spinach and cook for 5' until wilted and all its liquids have evaporated.
4.     Add some freshly ground pepper and turn off the heat. Let spinach cool down just a bit.
 
B.    Make the sandwich filling: 
5.     Place cooked spinach into a large bowl.
6.     Add the crumbled feta cheese and the grated cheese followed by the red pepper strips.
7.     Mix ingredients well with a large spoon, adding the chopped dill at the end.
8.     Wash your frying pan and leave it aside.
 
C.     Make and cook the sandwiches:
9.     Place the bread slices on a wooden board and butter one side of each slice of bread. Reserve the rest of butter.
10.  Flip the bread slices.
11.  Add a generous amount of filling (divide it in 3) to each of the 3 sandwiches (fill the side without butter).
12.  Top them with the other slice of bread, buttered side facing up.
13.  Place your non-stick frying pan back over low heat, spraying it also with a bit of oil, followed by the rest of butter. Let butter melt slowly.
14.  Place carefully all sandwiches in the pan and cook for 3'-4' until their bottom is golden brown.
15.  Flip gently the sandwiches over and cook slowly for 3'-4' extra or until the other side is golden brown and cheeses have melted.
16.  Remove sandwiches from the pan. Let them cool for a minute before slicing them in half and serving.
 
D. Serving suggestion:
Eat sandwiches while still very warm. In any case, you don't want to wait with all these scintillating flavors.

Έχω δημοσιεύσει τόσες πολλές συνταγές με την πολυαγαπημένη μας φέτα, γιατί αλήθεια ποιος δεν αγαπά αυτό τυρί, σωστά;
Αν πάλι σκέφτεστε: «ουάου άλλη μια συνταγή για φέτα», θα σας πω ότι αυτό το πιάτο που σας δείχνω είναι πολύ της μόδας αυτή τη στιγμή όχι μόνο στην Ελλάδα αλλά σερβίρεται σε εστιατόρια σε όλο τον κόσμο και είναι πολύ δημοφιλές, φυσικά λόγω της νοστιμιάς του!
Ήρθε λοιπόν η ώρα να σας δείξω πώς να ετοιμάσετε αυτό το πεντανόστιμο σάντουιτς στο σπίτι σαν απλοποιημένη μέθοδος αλλά με γεύση παρόμοια με Σπανακοτυρόπιτα.
Ας ξεκινήσουμε λοιπόν!
Κατάλληλο για χορτοφάγους.
 
ΥΛΙΚΑ:
• 6 φέτες Ψωμί είτε άσπρο ή με προζύμι
• 120 γρ. / 4,2 oz τυρί Φέτα, τριμμένη
• 50 γρ. / 1,75 oz τυρί Μετσοβόνε, τριμμένο (εναλλακτικά: Προβολόνε)
• 50 γρ. / 1,75 oz γλυκιά, καπνιστή, κόκκινη Πιπεριά, σε λωρίδες (Φλωρίνης)
• 200 γρ. / 7 oz Φρέσκο, baby Σπανάκι, πλυμένο, στραγγισμένο
• 1 φρέσκο ​​Κρεμμυδάκι, ψιλοκομμένο
• 2 κ.σ. Άνηθος, ψιλοκομμένος
• 2 κ.σ. / 30 ml Ελαιόλαδο
• 1 κ.σ. / 15 ml Βούτυρο, μαλακό
• Λίγο φρεσκοαλεσμένο Πιπέρι

ΜΕΘΟΔΟΣ:
Α. Μαγειρέψτε πρώτα το σπανάκι:
1. Τοποθετήστε ένα αντικολλητικό τηγάνι πάνω από μέτρια προς δυνατή φωτιά. Προσθέστε το ελαιόλαδο στο τηγάνι και αφήστε το να ζεσταθεί.
2. Μόλις ζεσταθεί το λάδι, ρίξτε μέσα τα φρέσκα κρεμμυδάκια και σοτάρετε τα για 1' ανακατεύοντας τακτικά.
3. Στη συνέχεια προσθέστε το σπανάκι και μαγειρέψτε το για 5' μέχρι να μαραθεί και να εξατμιστούν όλα τα υγρά του.
4. Προσθέστε λίγο φρεσκοτριμμένο πιπέρι και σβήστε τη φωτιά. Αφήστε το σπανάκι να κρυώσει λίγο.
 
Β. Φτιάξτε τη γέμιση για το σάντουιτς:
5. Βάλτε το μαγειρεμένο σπανάκι σε ένα μεγάλο μπολ.
6. Προσθέστε την θρυμματισμένη φέτα και το τριμμένο τυρί και μετά τις λωρίδες κόκκινης πιπεριάς.
7. Ανακατέψτε καλά όλα τα υλικά με μια μεγάλη κουτάλα προσθέτοντας στο τέλος τον ψιλοκομμένο άνηθο.
8. Πλύντε το τηγάνι σας και αφήστε το στην άκρη.
 
Γ. Φτιάξτε και μαγειρέψτε τα σάντουιτς:
9. Τοποθετήστε τις φέτες ψωμιού πάνω σε μια ξύλινη σανίδα και βουτυρώστε τη μια πλευρά τους. Φυλάξτε το υπόλοιπο βούτυρο.
10. Αναποδογυρίστε τις φέτες ψωμιού.
11. Προσθέστε μια γενναία ποσότητα γέμισης (χωρίστε τη στα 3) σε καθένα από τα 3 σάντουιτς (βάλτε τη γέμιση στην πλευρά χωρίς βούτυρο).
12. Καλύψτε τα σάντουιτς με την άλλη φέτα ψωμιού, με τη βουτυρωμένη πλευρά να βλέπει προς τα πάνω.
13. Ξαναβάλτε το αντικολλητικό τηγάνι σας πάνω από χαμηλή φωτιά, ψεκάζοντάς το επίσης με λίγο λάδι και στη συνέχεια το υπόλοιπο βούτυρο. Αφήστε το βούτυρο να λιώσει σιγά σιγά.
14. Τοποθετήστε προσεκτικά όλα τα σάντουιτς στο τηγάνι και ψήστε τα για 3'-4' μέχρι να ροδίσουν στο κάτω μέρος.
15. Αναποδογυρίστε απαλά τα σάντουιτς και μαγειρέψτε τα σιγά σιγά για 3'-4' επιπλέον ή μέχρι να ροδίσει η άλλη πλευρά και να λιώσουν τα τυριά.
16. Αφαιρέστε τα σάντουιτς από το τηγάνι. Αφήστε τα να κρυώσουν για ένα λεπτό πριν τα κόψετε στη μέση και τα σερβίρετε.

Δ. Πρόταση σερβιρίσματος:
Σερβίρετε τα σάντουιτς όσο είναι ακόμα πολύ ζεστά! Ούτως ή άλλως, δεν θέλετε να περιμένετε με όλες αυτές τις δελεαστικές γεύσεις.

Restaurant Idea: The Nicktoons Diner
I'm sure just about all of you are familiar with The Krabby Patty Kollab Wendy's launched back in October, commemorating of the 25th anniversary of SpongeBob SquarePants.

I tried for myself on opening day, and I really liked it.
But it did get me thinking about this....
What if there was a restaurant that was themed around not just SpongeBob, but all the Nicktoons in general.
And thus, I created the idea known as.....
THE NICKTOONS DINER!
If the name didn't clue you in already, this restaurant would be a diner, ala Steak n' Shake, Big Boy, and Denny's.
But with a Nickelodeon theming.
Layout is what you would expect from a diner.
There's the dining area with tables, booths, and a counter that you can sit and eat at.
And like any diner, you'll get a decent view of the kitchen.
The diner is also a drive-in, so you can eat in your own car.
Plus they'll actually provide a little disposable table for you to use while eating.
The dining area itself would be sporting a Nickelodeon theming, with orange and green colored chairs and a design of multicolored splats all over the floor.
And on the walls, you'll several pieces of art featuring hundreds of Nicktoon characters, dressed as workers of the diner and depicting them as working at the diner as well!
Now let's for the real meat of this post, the menu!
Burgers:
(All can be made double pattied if desired and sesame seed buns are used with just about all of them)
-The Krabby Patty: The trademark food of the restaurant! A simple Angus ground beef patty, seasoned and grilled to the perfection. Then topped with American cheese, lettuce, onions, tomatoes, pickles, ketchup, mustard and mayo.
-Sandy's Rodeo Burger: An Angus ground beef patty topped with sharp cheddar, onion rings, bacon, sliced jalapenos, and BBQ sauce.
-Aang's Veggie Burger: A plant-based protein patty topped with the same toppings as The Krabby Patty.
-Tito's Kahuna Burger: An Angus beef patty topped with mozzarella cheese, lettuce, caramelized onions, a grilled pineapple slice, bacon, and teriyaki sauce.
-Jeremy's Mushroom and Swiss Burger: An Angus beef patty topped with Swiss cheese, sauteed mushrooms, caramelized onions, and a garlic spread, all between a brioche bun.
-Blake's Chili Burger: An Angus beef patty topped with hearty beef chili, sharp cheddar, and diced onions.
-The Breadwinners' Patty Melt: An Angus beef patty topped with American cheese, Swiss cheese, caramelized onions, and thousand island dressing, all between two slices of toasted rye.
Sandwiches:
-Harold's Hero: A foot-long sub with ham, roast beef, salami, pastrami, pepperoni, prosciutto, provolone, mozzarella, lettuce, onions, tomatoes, pickles, mayo, and deli dressing, all between white beard.
-The Chokey Chicken Club: A boneless chicken thigh, seasoned, marinated, and fried to golden brown, topped with pickles and coleslaw, all between a brioche bun.
-Phil and Lil's Philly Cheesesteak: Seasoned shaved steak topped with sauteed onions, mushrooms and bell peppers, and a four cheese sauce.
-Raymundo's Fish Sandwich: A hand-battered cod fillet topped with American cheese, lettuce, pickles, and tartar sauce, all between a brioche bun.
-Deuce's Gyros: Grilled, marinated lamb topped with lettuce, red onion, tomatoes, feta cheese, and tzatziki, all wrapped up in pita bread.
-Lynn's Meatball Sub: Seasoned, cooked balls of beef topped with melted mozzarella cheese and warm marinara sauce, all between a foot-long of white bread.
-Lori's Chicken Caesar Wrap: Grilled marinated chicken, romaine lettuce, homestyle croutons, shredded parmesan cheese and caesar dressing wrapped in a warm tortilla.
-Sam's Veggie Wrap: Spinach, sliced avocado, carrot, cucumber, edamame, and hummus wrapped up a warm tortilla.
-Robot and Monster's Double Decker BLT: Bacon, lettuce, tomato and a special sandwich sauce, all between three slices of bread.
-Tommy's Double-Decker PB & J: Peanut butter and grape jelly, all between three slices of grilled rye.
-Casey and Alberto's Cubano: Grilled ham, roasted pork, mustard, pickles, and Swiss cheese, all between Cuban bread.
-Biggie Cheese's Deluxe Grilled Cheese: Cheddar, Swiss, Muenster, Gouda, and Provolone, melted and all between two slices of grilled sourdough.
-CatDog's Hot Dogs: All beef franks placed between warm hot dog buns, and topped with American cheese, ketchup, mustard, diced onions, and relish.
-Arnold's Big City Dogs: All beef franks placed between warm poppy seed buns, and topped with celery salt, tomatoes, pickled peppers, diced onions, neon green relish, and mustard.
-Sonic's Chili Dogs: All beef franks placed between warm hot dog buns, and topped with beef chili, shredded cheddar cheese, and diced onions.
Breakfast:
Peck's Omelettes and Scrambles:
-Veggie Omelette: Spinach, onion, bell peppers, tomato, mushrooms, and cheddar.
-Country-Style Omelette: Country sausage, American cheese, hash browns and sauteed onions topped with country sausage gravy.
-Meat Lovers Omelette: Bacon, sausage, ham and cheddar.
-Ultimate Omelette: Sausage, bacon, bell peppers, onions, mushrooms and cheddar.
-Philly Cheesesteak Scramble: Scrambled eggs, seasoned shaved steak, green pepper, onion, mushrooms, and shredded cheddar served over hash browns
-Mushroom Swiss Scramble: Scrambled eggs, caramelized onion, mushroom, spinach, and Swiss cheese served over hash browns.
-Ultimate Scramble: Sausage, bacon, bell peppers, tomato, onions, mushrooms and cheddar.
Waffle's Pancakes and Waffles:
-Buttermilk: The classic, topped with butter and maple syrup.
-Strawberry: Topped with chopped strawberries, strawberry syrup, and whipped cream.
-Blueberry: Made using batter mixed with blueberries, topped with blueberries, blueberry syrup and whipped cream.
-Wildberry: Made using batter mixed with blueberries, topped with strawberries, blueberries, blackberries, blueberry syrup and whipped cream.
-Cinnamon Roll: Cooked with cinnamon crumb topping and topped with cream cheese icing.
-Chocolate Chip: Made using batter mixed with chocolate chips, topped with chocolate chips and chocolate syrup.
-Chocolate Banana: Made using batter mixed with chocolate chips, topped with bananas, chocolate chips and chocolate syrup.
Powdered Toast Man's French Toast:
-Classic: Thick slices of texas toast battered in a signature french toast dip, topped with butter, syrup, and powdered sugar.
-Cinnamon: Thick slices of cinnamon swirl bread battered in a signature french toast dip, dusted with cinnamon sugar and topped with whipped cream, caramel sauce, and powdered sugar.
-Strawberry Banana: Thick slices of texas toast battered in a signature french toast dip, topped with strawberries, bananas, strawberry syrup, and powdered sugar.
-French Toast Sticks: Sticks of texas toast battered in a signature french toast dip, deep fried, and toasted with powdered sugar.

Nickname- Po by his family
Age- 34 (immortal)
Location- Shadowstone neighborhood, New Olympus
Personality- He's an introverted idealist who thrives on creative ingenuity. He's also brilliant, resourceful, & is constantly inspired by new ideas. He's married.
He has the standard abilities of a god except shapeshifting. As the god of resourcefulness his other powers/abilities include enhanced craftsmanship, supertasking, thought acceleration, limited pyrokinesis, pathway generation, & hypercompetence.
Porus resides at The Polysēmantōr Chambers, an apartment building complex in the Shadowstone neighborhood of New Olympus. He lives with his wife Penia (goddess of poverty) and her sister Ptocheia (goddess of beggary). He takes pride in the fact that he built most of the furniture (except for the china- it was bought at A Hearth Design furniture store during a super sale) as well as the large self-organizing mahogany closet in his bedroom. He often finds thrown out glass jars in recycle bins in the city which then become reused to store obol coins.
Other members of his immediate family includes his older brother Ponos (god of hard labor & toil), and his mother-in-law Amechania (goddess of helplessness & want).
Porus will almost always start off the mornings early with a bike ride through the city. He'll sometimes go for a walk through Eaglepoint Park with his wife if she's up early too.
Go-to drinks for him include water, ginger ale, beer, orange juice, iced tea, & earl grey tea. He also doesn't mind red wine. His usuals from The Roasted Bean is an olympian sized roast coffee and a large iced green tea.
Porus designed and made the saddle (using leather from an old railway car) for his brother's dragon Shadowsteel.
There's always loose change in his pockets.
Porus always has his beloved notebook with him, where he's writing down & drawing new invention ideas.
He enjoys slices of toasted wheat bread topped with butter and honey. He also likes his wife's rizogalo and scrambled eggs (added with tomatoes, spinach, & feta cheese) along with his sister-in-law's blueberry oatmeal muffins.
Porus and his wife are still newlyweds having been married for a little over a year. He fondly remembers the moment her intense dark amber hued eyes met his at a council meeting in New Olympus City Hall. He quickly admired her intelligence and tenacity. Porus had asked for her mother's blessing twice- when her asked her out on a date & when he proposed. Porus even forged their own wedding bands- made out of Celestial Bronze.
A guilty pleasure of his are the 20 chicken nuggets from Olympic Chef. He eats them without any dipping sauce.
His favorite thing to get from The Bread Box is a grilled chicken sandwich along with a green bean salad (topped with toasted almonds & feta cheese).
Porus' main job is as an inventor. Some of his products (like the self-organizing closets) are sold at The Lumber Shed, a home appliance store. He's also working with iCHOR Tech to design and develop their latest smartwatch. Another of his inventions littered throughout the city are the touch screen parking meters.
His favorite frozen treat ia a plain vanilla sundae topped with crushed gingerbread cookies & vanilla cake pieces from The Frozen Spoon.
Even though he cares for his sister-in-law, Porus does feel that it's long overdue for Ptocheia to begin living independently. Most times when he tries spending time with his wife or going out with her, it becomes a third wheel affair. Never mind that it's always uncomfortable for Porus to initiate intimate contact with Penia- the fact that her sister is a floor below being at the forefront of his mind. He often vents his frustrations to his friends and brother.
In the pantheon he's friends with Ktesios (god of the household), Neicus (god of debate & appeal), Karmanor (demi-god of the harvest), Eikono (goddess of iconography & literature), Axiótimos (god of honor), Kópros (god of manure & excrement), and Corymbus (Cory) (god of the ivy).
Outside the pantheon, Porus has many friends who are cyclopes!
His all time favorite meal is his wife's balsamic pasta salad.
In his free time Porus enjoys spending time in his workshop, reading, blacksmithing, chess, doing crossword puzzles, bowling, yoga, playing pool, drawing, fencing, doing puzzles, bike riding, and playing various card games.

Amidst holiday preparations at the nearby theaters and a charming shopping plaza, Tupelo Honey beckoned. The waiter's warm gesture initiated a gastronomic journey—a biscuit masterpiece, accompanied by homemade whipped butter and blueberry jam. A Mahi Mahi spectacle ensued, adorned with homemade creole butter, bacon-braised collard greens, and rosemary Parmesan crispy potatoes. Each bite was a symphony of flavors, dispelling my usual reservations about rolls and breaded delights.
*Evening Unveilings:* Knoxville's nocturnal charm unfolded as I ventured to the Regal cinema, a mere heartbeat from my hotel. The rooftop bar offered a small hummus plate, a prelude to an eerie yet captivating screening of "Five Nights at Freddy's." The city lights painted a mesmerizing tableau, turning my evening into a visual feast.
*Day Two: Breakfast Bliss and City Wonders*
The day commenced with a spicy vegetarian croissant at The French Market, a sensory delight featuring feta cheese, roasted red peppers, avocado, spinach, and spicy aioli. Sibling lions, rescued as cubs, echoed the familiar body language of housecats, creating a fascinating connection.
*Evening Elegance:* Urban Outfitters yielded a charming romper, setting the stage for an evening at "Not Watson" in historic Market Square. My choice, the Grilled Salmon Fillet with honey mustard sauce, proved a triumph. Asparagus and crispy Brussels sprouts added a delightful side note, capping off another culinary high.

There are just 380 calories and 35.3g of protein in this low-calorie, high-protein Greek salad! In addition, I've provided meal prep advice, six different salad dressing options, and more. This recipe was created for meal prep lunches and dinners, but I've also begun using it for evening quick meals. I'm sure you'll enjoy it, and it's that simple!

Ingredients You’ll Need:
⅛ teaspoon garlic salt
1 boneless skinless chicken breast
Juice of 1/2 lemon
Olive oil spray
¼ cup uncooked quinoa
½ cup water
Salad Ingredients:
3 cup mixed greens
¼ cup Homemade Greek Salad Dressing
::Ingredients for dressing ::
4 tablespoons fresh lemon juice
4 tablespoons red wine vinegar
½ teaspoon Dijon mustard
1 teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon pepper
1 garlic clove minced
⅛ cup extra-virgin olive oil
¼ cup vegetable broth
Instructions 
To a medium bowl or jar, add the lemon juice, vinegar, mustard, oregano, salt, pepper, and garlic.
Whisk together or add the lid to the jar and shake well.
Add in the oil and broth and whisk or shake again until combined.
Serve over Greek Salad, or use as a marinade. Will hold in the fridge, covered, for up to 1 week.

A quarter cup of homemade Greek salad dressing Ten cherry tomatoes cut in half, and a two-inch cucumber cut in half and sliced Half a cup of kalamata olives, pitted Half a cup of feta cheese, crumbled Optional: ½ tablespoon of chopped Italian parsley Directions Directions for Greek Chicken: Season the chicken with the garlic salt. Lightly coat a big skillet with olive oil and preheat it over medium heat. When the skillet is heated, add the chicken and cook it for 8 to 10 minutes on each side, or until it is cooked through. Place the chicken on a dish to cool, squeeze half a lemon over it, and then cut into slices. Directions for Quinoa: The quinoa should be rinsed with cool water. In a small pan, combine the quinoa and water; cover and cook to a gentle boil. Cook over low heat until the water is completely absorbed. Take off the heat and place aside. Instructions for Assembling the Salad: Add the greens and salad dressing to a large bowl. After thoroughly tossing to coat, transfer the salads to two dishes. Add cooked quinoa, tomatoes, cucumbers, olives, feta, and grilled chicken on top. Serve with a garnish of parsley, if using. Tips for Meal Prep: This grilled chicken salad may be prepared in advance and stored in meal prep containers. To prevent soggy greens, add the greens to your meal prep containers without adding the dressing yet. Then, add the additional ingredients on top. There have been many situations where I have found myself on the go and unable to make food at home. This usually means that I have to buy food out and if I am busy, that means having to get food at a fast-food restaurant. Sometimes it can be difficult to find good tasting foods at fast-food places that are also high in protein, but lower in calories. This is why I have created a list of some of my favorite options from a few places that keep me satiated while also fitting into my fitness goals. I have dedicated this post to sharing those, so that others can find options that they can enjoy while on the go!
