Another treat from yesterday’s get together with friends: smoked salmon dip. Basically a mix of smoked fish, cream cheese, sour cream, dill, scallions and lemon juice (for specific recipe click the link in the profile). Easy peasy, make in advance and it keeps nicely for leftovers during the week (also it’s a good filling for an omelet). On top of crispy toasted bread slices, this dip has the rich flavors of smoked salmon, lemon-chive ricotta, and peppery arugula. This dish is great for parties or as a tasty appetizer.
Ingredients: 8 oz smoked salmon. 1 cup ricotta cheese. 1/4 cup chopped fresh chives. 1 lemon, zest and juice. 2 cups arugula. 1 tablespoon olive oil. Salt and pepper to taste. 1 loaf crusty bread, sliced and toasted.
Instructions: Put ricotta cheese, chopped chives, lemon zest, and lemon juice in a bowl. Combine well. To make it taste better, add salt and pepper to the ricotta mixture. Cover the toasted bread slices with the ricotta mixture. Add smoked salmon slices to the top of each bruschetta. Mix arugula with salt, pepper, olive oil, and lemon juice. Put arugula that has been dressed on top of the smoked salmon bruschetta. Serve and have fun!

California Lachs Roll 1 is a delicious sushi roll featuring smoked salmon, creamy avocado, and crisp cucumber wrapped in seasoned sushi rice and nori seaweed.
Ingredients: 150g sushi rice. 4 sheets nori seaweed. 120g smoked salmon. 1 avocado, thinly sliced. 1 cucumber, julienned. Soy sauce for dipping. Wasabi optional. Pickled ginger optional.
Instructions: Cook sushi rice according to package instructions and let it cool. Place a bamboo sushi mat on a flat surface, then place a sheet of nori on top. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Place smoked salmon, avocado slices, and julienned cucumber on top of the rice. Roll the sushi tightly using the bamboo mat, pressing gently to seal the roll. Slice the roll into bite-sized pieces using a sharp knife. Serve with soy sauce for dipping, and optionally with wasabi and pickled ginger.
