These fresh corn pancakes are a delightful twist on the classic pancake recipe. The use of fresh corn kernels adds a sweet and savory flavor, making them perfect for any time of day.
Ingredients: 2 cups fresh corn kernels. 1 cup all-purpose flour. 1 tablespoon sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup non-dairy milk. 2 tablespoons vegetable oil. 1 tablespoon apple cider vinegar.
Instructions: Put 1 cup of fresh corn kernels, non-dairy milk, vegetable oil, and apple cider vinegar in a blender. Mix until it's smooth. Whisk the flour, sugar, baking powder, baking soda, and salt together in a bowl. Add the mixed corn mixture to the dry ingredients and mix them together just until they are combined. Add the last cup of fresh corn kernels to the batter and mix them in well. Melt the butter in a pan or griddle that doesn't stick. Use a little oil to grease. For each pancake, put about 1/4 cup of batter on the pan. Start cooking when the top starts to bubble. Then turn it over and cook until both sides are golden brown. Do it again with the rest of the batter. Put on top of your favorite hot foods.

Oats Uthappam is a tasty and healthy Indian pancake made with oats, rice flour, and different kinds of vegetables. It's an easy-to-make breakfast or snack that tastes great and is good for you.
Ingredients: 1 cup rolled oats. 1/2 cup rice flour. 1/4 cup semolina sooji. 1/2 cup yogurt. 1/2 cup finely chopped onions. 1/2 cup finely chopped tomatoes. 1/4 cup finely chopped green bell pepper. 1/4 cup finely chopped cilantro coriander leaves. 2-3 green chilies, finely chopped adjust to taste. 1 tsp cumin seeds. 1/2 tsp baking soda. Salt to taste. Oil for cooking.
Instructions: In a blender, grind the rolled oats to a fine powder. In a mixing bowl, combine the ground oats, rice flour, semolina, and yogurt. Add water to make a thick batter and let it rest for 15-20 minutes. Add chopped onions, tomatoes, green bell pepper, cilantro, green chilies, cumin seeds, baking soda, and salt to the batter. Mix well. Heat a non-stick skillet or tava on medium heat and grease it lightly with oil. Pour a ladleful of the batter onto the skillet and spread it into a circle to form a thick pancake uthappam. Drizzle some oil around the edges and on top of the uthappam. Cover and cook on low heat for 2-3 minutes until the bottom is golden brown. Flip the uthappam and cook the other side until it's cooked through and crisp around the edges. Repeat with the remaining batter to make more uthappams. Serve hot with coconut chutney or tomato chutney.
