Salmon, Sweet Potato and Avocado Poke Bowl

A lone sweet potato, leftover rice and smoked salmon come together in a fragrant and hearty dish, and, with a few additions, become this more-ish Salmon, Sweet Potato and Avocado Poke Bowl, a rather delightful weeknight dinner! Happy Thursday!
Ingredients (serves 2):
1 tablespoon pumpkin seeds
1 teaspoon cumin seeds
a dozen leaves fresh mint
a small bunch fresh Cilantro
1 1/2 cup leftover white rice
2 tablespoons olive oil
3 large carrots, rinsed
1/2 teaspoon tumeric
1 1/2 tablespoon olive oil
1 medium sweet potato, thoroughly scrubbed
salt and freshly cracked black pepper, to taste
120 grams/4 ounces Smoked Salmon
1 tablespoon sweet soy sauce
1 ripe avocado
1/2 lime
In small frying pan, toast pumpkin seeds and cumin seeds over a high flame until just fragrant. Remove from the heat; set aside.
Finely chop mint leaves and Garden Cilantro. 
Stir half of the chopped herbs into the rice. 
Spoon remaining chopped mint and Cilantro into a medium bowl. Stir in the olive oil, and half of the toasted pumpkin and cumin seeds. Set aside.
Using the coarse side of a box grater, grate carrots. Add carrots to the bowl, tossing well to coat in oil, herbs and spices. Place in the refrigerator, to chill.
Heat a medium skillet over medium-high heat. Sprinkle in tumeric, and toast, a few seconds, then add olive oil.
Cube sweet potato, and add to the skillet. Cook, until well golden brown on each side, coating in oil and spices, so it it is crispy outside and soft inside, about 12 minutes. Season, to taste, with salt and black pepper.
Meanwhile, drizzle Smoked Salmon with sweet soy sauce, massaging it into the fish. Set aside.
Halve, pit and dice avocado.
Spoon mint and Cilantro rice, herb and spice carrots, tumeric sweet potato dices and avocado dices into two serving plates. Top with soy Smoked Salmon and a lime quarter. 
Serve Salmon, Sweet Potato and Avocado Poke Bowl immediately, sprinkled with reserved toasted pumpkin and cumin seeds.

✹ "Do I have a fruit/vegetable, source of protein, and a carb on my plate?"
✹ "What can I add to this for it to be more filling and contain more nutrients?"
✹ "How many colors are on my plate?"
Reminders:
💞 you can always add a canned vegetable to the side for cheap if you're missing veggies in your meal.
💞 I eat things like pickled sausage, tater tots and pizza. I just use reasonable portions & add things to them. (Like spinach on pizza) I also make things from scratch a lot, which helps a TON.
💞 I didn't watch through all the what I eat in a days. But some of them looked decent. You don't have to drink chlorophyll water or ACV.
💞 Instead of asking what you can remove, ask what you can add. Have some fries, but add a source of protein like grilled chicken with some mozzarella, then some fibers with spinach and a side salad.

My PCOS Meal Ideas
Hey guys! This is nowhere perfect but I have put together some of my favorite PCOS meal ideas for breakfast, lunch, and dinner. I hope this inspires someone out there to eat better and hopefully, in turn, this will help manage some of your PCOS symptoms. I appreciate your feedback and comments. Let me know what you think of these recipes!
PCOS Breakfast Ideas
Sliced avocado on a whole-wheat or gluten-free toast topped with a hard-boiled egg
Oats with nuts, seeds, and dried fruits of your choice, sliced banana and 1 tbsp of honey
Plain greek yogurt with fruits (I love blueberries), seeds, and nuts
PCOS Lunch Ideas
Poke bowl - brown rice with grilled salmon, boiled/steamed edamame, half an avocado, seaweed, and Japanese rice sprinkles (i.e. Furikake)
A hearty bowl of salad - I really enjoy having a bowl of mixed salad with tomatoes, cucumber, avocado topped with grilled or roasted chicken
Vietnamese rice paper rolls (you can never go wrong with this and you can literally add whatever your heart desires) - my go-to are oakleaf lettuce, prawns, vermicelli, and mint leaves
PCOS Dinner Ideas
Grilled salmon with steamed broccoli and a side of mash sweet potatoes. Yum!
Stir fry brown rice with eggs, diced carrots, capsicum, peas and I would normally add some bacon to my fried rice because how can you ever go wrong with bacon!
Green curry tofu with eggplants, green beans, and carrots. You can substitute coconut milk with soy/almond milk for a healthier alternative
For a light dinner, I enjoy corn chips with a big bowl of guacamole - lots of avocados, chopped tomatoes, red onions, some coriander, and a squeeze of lime

The headline I would've gone with is “No-strike bowling bowler struck by Knope’s striking beau.”
In late May of 2020, I was slowly working my way through episodes of “Nadiya’s Time to Eat,” featuring Nadiya Hussain of Great British Baking Show fame. In one of her episodes, she makes a salmon poke bowl that inspired me to make my own version with cooked salmon.

I’m generally an Aldi shopper these days, and I used to buy their packs of frozen salmon, which was fine, but never great. Eventually I discovered their wild caught, “fresh never frozen” salmon in the fresh proteins section, and it is LEAGUES better. I love that it comes in a great big (but still affordable) chunk that I can slice into attractive filets.

I like to cook my salmon according the the recipe in an anti-inflammation cookbook that I have, which is basically just roasting it in the oven at 375 with olive oil and salt and pepper until it reaches an internal temperature of 145 degrees. It’s simple and always comes out juicy and delicious.

I’ve taken some other liberties with Nadiya’s idea, including using brown rice, removing the avocado (since I’m allergic), adding salad greens, subbing the sauce for Molly Yeh’s kimchi mayo, and adding my take on Molly Yeh’s carrot slaw.

Here’s how I make my Salmon Rice Bowls, inspired by Nadiya Hussein’s Salmon Poke Bowls:
Ingredients: 4 raw salmon filets 1 cup of uncooked rice (sushi rice and brown rice are both good) 4 tablespoons pickled red cabbage 4 green onions, thinly sliced 2 cups salad greens (e.g., spring mix) 1 sheet of nori, torn into pieces 1 large handful of peanuts, roughly chopped 1 cup thinly sliced cucumber (optional) Kimchi mayo (see below) Sweet potato slaw (see below)
For the Kimchi Mayo, inspired by Molly Yeh 1/2 cup mayonnaise (use Kewpie mayo if you want, but it’s a little sweet for me, and I prefer the tang of other mayos) Chopped kimchi and kimchi brine, to taste (this is my favorite brand)
For the Sweet Potato Slaw, inspired by Molly Yeh 2 cups shredded sweet potato 1/4 cup rice vinegar 2 tablespoons maple syrup 1 tablespoon soy sauce 1 teaspoon minced ginger (I use the kind from the squeezy bottle)  Scallions, finely chopped Directions: 1. First, cook the rice of your choosing according to the directions on the back of the package.  2. Preheat the oven to 375 degrees. Place the four salmon filets on a sheet pan and coat it with olive oil, then sprinkle it with salt and pepper. Roast in the oven until it reaches an internal temperature of 145 degrees, about 15 minutes.  3. Meanwhile, make the sweet potato slaw by mixing the rice vinegar, maple syrup, soy sauce, and minced ginger in a medium bowl until combined. Add the shredded sweet potato and toss to coat in the dressing. Mix in chopped scallions to taste; set aside in the fridge while you make the rest of the salmon bowl. 4. Next, make the kimchi mayo by adding the mayonnaise to a small bowl. Add kimchi brine and finely chopped kimchi to taste.  5. To assemble, divide the rice into bowls. Top with salmon (whole or shredded), pickled red cabbage, green onions, salad greens, nori, peanuts, kimchi mayo, and sweet potato slaw. Enjoy!

This came out so well! It only barely resembles Nadiya’s original recipe, but I’m so glad I saw her make her salmon bowls to inspire these. Each component brings something unique and balancing to the bowl, both in flavor and nutrition; Rob mentioned that he thinks the addition of the sweet potato slaw was essential to add moisture and a nice sweet and sour note throughout.

I’ll also add that Rose loves this dish! It’s a regular in our dinnertime rotation, making its way to our table probably once every three weeks or so. It takes a little bit of time to get all of the components ready, but it’s worth it for that rare combination of healthy and flavorful. I’d encourage you to give it a try!

Easy Egg Recipes
These easy egg recipes are perfect for lunch or dinner. You can add salmon to many of the recipes for an extra dose of omegas and heart-healthy fats. Use food prep to make mealtime even easier!
Hi friends!
We’re back for another edition of the 4×4 Flexible Food Prep Method. I’m so glad you guys enjoyed the Easy Farro Recipes. In case you’re new here, I developed this component food prep method and series because I favor prepping ingredients versus full meals on the weekend. I like having prepped ingredients on hand that I can throw together quickly during the week. 
This is the second post in the series. In each post, I’ll give you four ingredients to prep (at a minimum). You should be able to prep these four ingredients in under an hour so I’ll try to give you suggestions of other things you can prep as well if you have additional time. This week we’re focusing on eggs and salmon.

Alright, so what’s on the menu this week?
Salmon Breakfast Quesadillas
Salmon Cakes
Everything Bagel Avocado Toast with Eggs
Shrimp Cobb Salad
Here’s what you need to prep to help make this week’s meals easier:
Baked salmon (I did two 12 oz packages. Just place on a baking sheet lined with foil, bake at 400 for 12-20 min depending on the thickness of the salmon. Seasoning however you want!)
Grilled shrimp (1 pound. Put them on skewers and throw them on the grill for 2 min per side. I did mine on the George Foreman grill on the counter)
Hard Boiled Eggs (One dozen. I cook mine in the instant pot on the rack with 1 cup water. 5 minutes, 5 min natural release, 5 min ice bath)
Roasted veggies or a grain (your choice!) I ended up roasting green beans and asparagus (and also made farro)
Let’s talk options:
Not crazy about baked salmon? Pan sear it! You could even make some extra to enjoy pan-seared Sunday night.
Don’t like salmon or shrimp? Use tuna for the salmon cakes or make some chicken for the quesadillas and/or cobb salad.
Have extra salmon? Throw some on your avo toast along with the eggs!
If you don’t like one of these recipes, you could easily make a few minor adjustments and swap one of yours into the meal plan.
Have more time? 
You can actually make the salmon cakes ahead of time and just reheat during the week (or eat cold). 
Roast some extra veggies or cook a grain to use as side dishes. 
Bake some bacon.
Prep the lettuce for your salad.
This week I ended up prepping my lettuce, baking bacon and roasting green beans and asparagus.
Now let’s dive into the recipes. Again, these recipes are quite forgiving. You can use the ideas and sub in different proteins based on your personal preferences and you don’t need exact quantities. And you can easily make a small or large amount depending on how many people you’re prepping for. Enjoy them for lunch or dinner!
Salmon Cakes
Ingredients
12 ounces salmon, cooked 1/2 cup mashed sweet potato 1/4 cup hummus 1/2 cup onion (or green onion) 3 cloves garlic 1 Tbsp dijon mustard 1 tsp paprika 1 egg 1/2 cup breadcrumbs
Directions
In a large bowl, flake salmon apart into pieces. 
Add remaining ingredients and mix well. 
Form into 8 cakes, place on a sheet pan lined with parchment paper and bake at 400 for 18 minutes, flipping once. 
Notes -To make the mashed sweet potato I just poke holes in a sweet potato and microwave for 5 minutes.  -For an easy dipping sauce, mix thai chili sauce and sriracha with plain yogurt to taste. -For an easy side dish, I mixed some of the farro and roasted asparagus I prepped on Sunday with some crumbled feta, a little balsamic and a scoop of pesto! – If you don’t like salmon, you could swap two cans of tuna!
Shrimp Cobb Salad
Ingredients (makes 4 salads)
8 cups leaf lettuce (or greens of your choice) 6 hard boiled eggs 1 pound grilled shrimp (or chicken) 1 large avocado 6-8 strips bacon, chopped 1 cup cherry tomatoes, sliced shredded cheese
Directions
Divide lettuce between 4 bowls. 
Halve hard boiled eggs and add 1.5 to each bowl, along with 4 ounces of shrimp, avocado, bacon, cheese and tomatoes. 
Serve with your favorite dressing.
Notes – If you’re not a shrimp lover, make some grilled chicken, steak or even extra salmon to use on the salad.  – Switch up your greens and use spinach, kale or a spring mix. – Add some nuts/seeds for a little crunch.
Hard Boiled Egg Avocado Toast
Ingredients (serves 4)
8 slices of bakery bread of choice 2 large avocados 6 hard boiled eggs chopped cooked bacon chopped tomatoes cooked salmon, flaked (optional) everything but the bagel seasoning lemon juice
Directions
Slice bread to desired thickness and toast. 
Spread with mashed avocado. Squeeze lemon juice on top if desired.
Top with sliced hard boiled eggs, bacon, tomatoes (and salmon if desired)
Sprinkle with everything but the bagel seasoning.
Notes – I like to save this meal until later in the week because it’s super easy, great for lunch or dinner and a good way to use up any leftover salmon/shrimp/chicken you might have along with some hard boiled eggs which keep well all week. – Bake the bacon over the weekend so you don’t have to do it when you’re making these to make them even quicker! -Swap out sweet potato toast if you’re not a bread eater.
Salmon Breakfast Quesadillas
Ingredients (serves 4)
6 scrambled eggs 12 ounces salmon, cooked and flaked 3/4 cup black beans, drained and rinsed shredded Mexican cheese 4 whole wheat tortillas salsa and avocado for topping
Directions
Spread scrambled eggs, flaked salmon, beans and cheese onto half of a tortilla. 
Fold over and cook in pan, on griddle, on George Foreman, in microwave. 
Repeat with remaining tortillas. 
Cut into wedges and serve with salsa and avocado.
Notes – Make these vegetarian by leaving out the salmon or swap salmon for grilled chicken, chicken sausage or other protein. 
Here’s a basic grocery list for you. Be sure to double check it and remove items you already have and read the recipes to see if you’re going to make any changes and adjust the grocery list accordingly.
2 (12-oz) packages salmon (frozen or fresh)
1 pound raw shrimp (i buy wild caught, peeled and deveined with tail on)
1 large sweet potato
hummus
1 medium onion
1 bulb garlic
dijon mustard
paprika
2 dozen eggs

It's The Era Of Avocado! Try these 50+ Super Easy Avocado Recipes At Home Now!
Avocados are gaining popularity because of their rich nutritional value plus it’s mild and unique taste. It’s a versatile food that works with all kinds of dishes. Avocados are not only nutritious and delicious, they seem to be the hipster icon of the year. I have seen so many avocado tattoos on calf muscles and biceps that I’ve lost count. So if you love that green berry (yes, avocados are berries) so much that you would eat it for every meal and get a tattoo of it, stay tuned. The potential to add them to everything from smoothies for a rich and creamy texture, to desserts in order to substitute unhealthy fats, is endless! Avocados are super nutrient-rich, and the fact that they taste delicious makes it easy to get all your vitamins and healthy fats with every bite.
How to shop for avocados:
I love a good life hack, and luckily there are plenty for picking avocados. It’s difficult to base your decision on color alone (though you should observe any discoloration and bruising,) so it’s better to squeeze the berry gently and see if it’s firm but gives just a little. Don’t use your fingertips though, because you could wind up bruising it! If the avocado yields to firm, gentle pressure, then it’s ripe and ready. But if it just feels kind of tough, it’s going to need a couple more days [1]
My favorite life hack for avocado selection is this one: peel back the stem! If you scratch off the tiny little stem on the top of the avocado, you’ll be able to know if your choice will be delicious or just brown and slimy inside. If the stem comes off easy and what’s underneath appears green, then it’s ripe! If you find brown underneath, then it’s overripe and won’t be good. And if the stem doesn’t come off and all, then the avocado is under ripe and won’t be ready for some time.
If you’re buying avocados for an event, such as a party that absolutely needs guacamole, purchase unripe avocados 4-5 days in advance. That should give you a nice window and help to ensure you won’t wind up with over-ripe berries at your party.
Taking off the steam is the easiest way to tell whether it’s good to eat or not!

How to store avocados:
Once you’re a pro at choosing avocados, you still have to be able to store them. If you’re like me, you don’t always use the entire berry in one sitting; sometime’s I’ll put half into my smoothie, and sometimes I spread a quarter on toast. I typically put my leftover avocado in Tupperware before sticking it in the fridge, but there are better ways to store the green goodness and ensure it won’t be gross by the next morning [2].
Storing a cut avocado:
No matter what form it’s in, cut, sliced, mashed, or even guacamole, put the remainders in a bowl and sprinkle some lemon, lime or even fresh orange juice on top. The acid slows down the oxidation process (that’s what leads to the brown slime) and prolongs the life of the avocado. But if you do start to see some browning, just scoop those parts out and toss them.
If your avocado is simply sliced in half, you can just run some water over the cut surface and put it in the fridge. It’ll most likely develop a little brown film, but it’ll peel back easily and can be tossed.
Storing an avocado that’s close to going bad:
If your avocado is perfectly ripe but you don’t have the time to use it, don’t throw it away! Puree your avocado with a food processor or blender and store it in the freezer. When you are ready to try out that new dip or spread recipe, you can take it out and use it.
How to ripen an avocado:
I think we’ve all been there: in the produce section of our supermarket standing in front of the lousy selection of avocados and being forced to find the best of the worst. Obviously you want to choose one that is under-ripe and not over-ripe, but it still means you are going to have to wait to be able to eat it. Maybe as long as four days! Or does it?
It turns out, there are some simple and effective methods to ripening an avocado quickly.
Place the under-ripe avocado in a paper bag. Make sure the bag is in good shape and there aren’t any rips or tears. The bag is going to seal in the ethylene gas and ultimately ripen the berry.
Add a banana in the bag with the avocado. You can use an apple or a tomato if you don’t have any bananas lying around, but the banana is your first choice. These fruits emit more ethylene gas than others, and the more they produce, the faster they’ll ripen.
Close the bag by rolling it down and keep it at room temperature and away from sunlight.
Check in often. The avocado will ripen as quickly as one day, so be sure to check it out. As it ripens, it will get some hints of deep purple and black. Once it’s ripe, store it as discussed, but only fora few days.
How to ripen a cut avocado:
If you forgot to check for the ripeness of the avocado and went straight to slicing it open, you may be disappointed to realize it’s not read to eat. Luckily you can take a couple steps and ripen the halves in no time.
Sprinkle the avocado slices with lemon or lime juice. This will help avoid that brown mush.
Cover it in saran wrap with the two halves facing each other like you are reconnecting it. Stick it in the refrigerator.
Check in often! The length of time it will take to ripen will vary, but check in every day to ensure it doesn’t go bad. Take the avocado out of the wrap and poke it gently. If it seems soft enough, feel free to sample it. If it doesn’t quite taste right yet, put it back in the fridge.

It's The Era Of Avocado! Try these 50+ Super Easy Avocado Recipes At Home Now!
Avocados are gaining popularity because of their rich nutritional value plus it’s mild and unique taste. It’s a versatile food that works with all kinds of dishes. Avocados are not only nutritious and delicious, they seem to be the hipster icon of the year. I have seen so many avocado tattoos on calf muscles and biceps that I’ve lost count. So if you love that green berry (yes, avocados are berries) so much that you would eat it for every meal and get a tattoo of it, stay tuned. The potential to add them to everything from smoothies for a rich and creamy texture, to desserts in order to substitute unhealthy fats, is endless! Avocados are super nutrient-rich, and the fact that they taste delicious makes it easy to get all your vitamins and healthy fats with every bite.
How to shop for avocados:
I love a good life hack, and luckily there are plenty for picking avocados. It’s difficult to base your decision on color alone (though you should observe any discoloration and bruising,) so it’s better to squeeze the berry gently and see if it’s firm but gives just a little. Don’t use your fingertips though, because you could wind up bruising it! If the avocado yields to firm, gentle pressure, then it’s ripe and ready. But if it just feels kind of tough, it’s going to need a couple more days [1]
My favorite life hack for avocado selection is this one: peel back the stem! If you scratch off the tiny little stem on the top of the avocado, you’ll be able to know if your choice will be delicious or just brown and slimy inside. If the stem comes off easy and what’s underneath appears green, then it’s ripe! If you find brown underneath, then it’s overripe and won’t be good. And if the stem doesn’t come off and all, then the avocado is under ripe and won’t be ready for some time.
If you’re buying avocados for an event, such as a party that absolutely needs guacamole, purchase unripe avocados 4-5 days in advance. That should give you a nice window and help to ensure you won’t wind up with over-ripe berries at your party.
Taking off the steam is the easiest way to tell whether it’s good to eat or not!

How to store avocados:
Once you’re a pro at choosing avocados, you still have to be able to store them. If you’re like me, you don’t always use the entire berry in one sitting; sometime’s I’ll put half into my smoothie, and sometimes I spread a quarter on toast. I typically put my leftover avocado in Tupperware before sticking it in the fridge, but there are better ways to store the green goodness and ensure it won’t be gross by the next morning [2].
Storing a cut avocado:
No matter what form it’s in, cut, sliced, mashed, or even guacamole, put the remainders in a bowl and sprinkle some lemon, lime or even fresh orange juice on top. The acid slows down the oxidation process (that’s what leads to the brown slime) and prolongs the life of the avocado. But if you do start to see some browning, just scoop those parts out and toss them.
If your avocado is simply sliced in half, you can just run some water over the cut surface and put it in the fridge. It’ll most likely develop a little brown film, but it’ll peel back easily and can be tossed.
Storing an avocado that’s close to going bad:
If your avocado is perfectly ripe but you don’t have the time to use it, don’t throw it away! Puree your avocado with a food processor or blender and store it in the freezer. When you are ready to try out that new dip or spread recipe, you can take it out and use it.
How to ripen an avocado:
I think we’ve all been there: in the produce section of our supermarket standing in front of the lousy selection of avocados and being forced to find the best of the worst. Obviously you want to choose one that is under-ripe and not over-ripe, but it still means you are going to have to wait to be able to eat it. Maybe as long as four days! Or does it?
It turns out, there are some simple and effective methods to ripening an avocado quickly.
Place the under-ripe avocado in a paper bag. Make sure the bag is in good shape and there aren’t any rips or tears. The bag is going to seal in the ethylene gas and ultimately ripen the berry.
Add a banana in the bag with the avocado. You can use an apple or a tomato if you don’t have any bananas lying around, but the banana is your first choice. These fruits emit more ethylene gas than others, and the more they produce, the faster they’ll ripen.
Close the bag by rolling it down and keep it at room temperature and away from sunlight.
Check in often. The avocado will ripen as quickly as one day, so be sure to check it out. As it ripens, it will get some hints of deep purple and black. Once it’s ripe, store it as discussed, but only fora few days.
How to ripen a cut avocado:
If you forgot to check for the ripeness of the avocado and went straight to slicing it open, you may be disappointed to realize it’s not read to eat. Luckily you can take a couple steps and ripen the halves in no time.
Sprinkle the avocado slices with lemon or lime juice. This will help avoid that brown mush.
Cover it in saran wrap with the two halves facing each other like you are reconnecting it. Stick it in the refrigerator.
Check in often! The length of time it will take to ripen will vary, but check in every day to ensure it doesn’t go bad. Take the avocado out of the wrap and poke it gently. If it seems soft enough, feel free to sample it. If it doesn’t quite taste right yet, put it back in the fridge.
