Your POV - The Meet Cute
You write lifestyle reviews for Chicago in the Chicago Times and you often get to visit really cool events in the city that you love. You get to attend music festivals, visit new hotels, and just enjoy the city for pay. However, your favorite part is getting to try different kinds of cuisine in the city and you love to shout out places that you truly enjoy visiting because they all deserve success for their hard work. You've always enjoyed food and writing, so this felt like the perfect job for you.
Your father is an amazing cook with restaurants and Michelin stars to prove it. You're used to people using that information against you or for their personal benefit, so you stopped telling people about him. You even started going by your mother's maiden name, so nobody connected you to your father. Your work knows who your father is and you host the annual holiday party at one of his restaurants, which is fine to mix work and family once a year. Your friends like your father, but they don't use you to get to him, which is nice to have people who truly care about you. It's why you find it hard to date because people seek to use you at every turn.
Your work brings you joy and you love doing it. So getting an email from one of the chefs asking you to meet at their restaurant to talk terrifies you. You went to the Bear, a new restaurant that had once been a sandwich shop called the Beef. Your father liked their sandwiches and would often get them when he was on that side of Chicago. The Bear had just opened with a new menu and they hosted a press night where reviewers in the city came to discover more about the restaurant. You were sent by your newspaper company. You met up with other reviewers that were attending the event and you had a blast. The staff was courteous and kind, they also knew what you needed before you needed it. The food was hot and tasty and melted in your mouth. The bathrooms and space were clean. The wine selection matched perfectly with the meal. The Head Chef, Carmen Berzatto even came out of the kitchen to thank everyone. He was young and cute, and he seemed passionate about his place. You commended the event as one of your favorites and talked up the staff in your article. You even mentioned going to the Beef before it became the Bear. You showed your support, so you were confused about why you were being invited back for a chat. It worried you.
You get off the metro train and make your way over to the Bear. You show up outside and notice they're not even open. This makes you even more confused. You open the front door, step in, and see the staff all sitting at the tables eating lunch from what it looks like. They all turn to face you and you exclaim, 'Hi, I'm Ginger from the Chicago Times. I was told to meet Chef Carmen Berzatto here for a meeting now." The guy you recognize as the chef, Carmen Berzatto, looks up and says, "Oh wow you're on time." You reply, "Yes sir, I recognize that we all have a lot going on, so being punctual is always something I strive for. I usually am 10 minutes early to events, but the metro here was packed." A girl sitting at the table says, "I get that, I hate the metro. My name is Sydney. Nice to meet you, Ginger." You reply, "Nice to meet you, Sydney." You see a man near Camen Berzatto ask, "What made you get into reviews? Oh, and I'm Richie." You answer, "Hi Richie. Well I love writing and I love food, so I wanted to combine them for my job. My mom has always told me to work hard to succeed and that's what I did. Chicago Times liked some of my pieces for college and I started as an intern before I became the full-time lifestyle reviewer I am today. It's great." Richie asks, "And you've been to the Bear before opening?" You answer, "My father used to take me here growing up when I was a kid. And whenever I was on this side of town after college, I always returned to the Beef. You all were always packed and everyone was always friendly." Carmen Berzatto asks, "So you weren't lying in your article, that was all real?" You answer, "Yes sir. I am always completely open and honest about my experiences even if they're being paid for by the company. I never want to lie to readers or companies about what I feel." Carmen Berzatto replies, "Your article helped us a lot after you visited. People kept coming in mentioning the Chicago Times article and your support for us. We just wanted to see if you would sign some copies for us to keep." OH MY GOSH!!! Why am I going to cry?!?! You reply, "Oh my! I would be so happy too. That makes me so happy. I truly think you all deserve so much success. You can tell each of you has worked so hard to get to this point and you're all passionate about food. I am a happy supporter of The Bear." You sign copies of the newspaper, get a slice of cake to go, and you say goodbye to the staff. They encourage you to come back and they will push everyone out of the way to serve you, which you thank them for.
As you leave, you start walking down the street until you hear your name. You turn and see Carmen Berzatto running after you. You start walking back towards him and he stops running. You ask, "What's up?" He answers, "I just regret not telling you this one-on-one. I really did appreciate what you said and how you mentioned that I seemed so passionate even just from my small speech to everyone. It was nice to see that people could tell from one moment and it made me feel hopeful." You reply, "No problem, Carmen Berzatto. I can tell you'll do great things with the Bear." He smiles and says, "Please call me Carmy." You reply, "Ok then thank you Carmy." He smiles even wider and says, "I don't normally do this, but you seem so bright and happy. I just think if I don't ask then I'll never see you again and I want to see you again, so would you want to go out on a date?" You answer, "Sure. I'd love to. You already have my number, so just text me. I know you have a crazy schedule and I'm pretty open this month, so let me know when you want to go out." He nods and says, "Ok I will. You got it. Well, have a great rest of your day." You reply, "You too, Carmy."
That was the start of your relationship with Carmy.
Your POV - Telling Your Dad
You smile as Carmy texts you during your family dinner and your father asks, "Ginger, what are you smiling about? Surely it's the roast and potatoes, right? Or is there something you want to tell us?" Your father was honest like you, so there was no way to hide this any longer than you have been. You answer, "I have a boyfriend and we've been dating for 6 months. He is taking a 15-minute break at work right now, so he was texting me. He's a chef and his name is Carmy. He used to work at the Beef, but now it's the Bear." Your father says, "No way, I loved the Beef. I'd love to go sometime to the new restaurant, can you ask for his availability on Wednesdays? I'm always off on Wednesdays and you, your mom, and I can go eat there one day or night. It doesn't have to be next week, but by the end of the month would be cool. I'd love to meet your boyfriend." You reply, "Sure Dad. I can ask." He replies, "Good good. Now tell me more about him and his food." You laugh and talk with your family.
Your POV - Telling Your Boyfriend
You did the nice thing and told your boyfriend about your family wanting to eat at his restaurant on a Wednesday day or night. Carmy was excited and he was able to find a table 2 weeks after that you could sit at for a lunch service. Carmy even told you that lunches are calmer, so he could stop by for his break to talk to your family. Richie would be working as your server, which you liked because Richie could talk and your father loved to ask questions.
It's one week away and Carmy is cooking you both dinner. He always takes off at least one night a week to have a normal night with you and you love it. It's always nice and his food is amazing.
After dinner, you turn on the TV and it's your dad's cooking show. Carmy hands you a glass of wine and your box of cookies before you ask, "How do you feel about cooking shows?" Carmy sits next to you on the couch and answers, "You know how I feel about them. They're just ways for chefs to promote themselves and their businesses, which is nice. But usually, they do it because you get paid a lot. Why?" You answer, "Oh uh well Chef L/N's cooking show was on. I just wondered how you felt about his show." He replies, "I admire the he** out of him. He's inspirational. The way he compliments each drink from appetizer to dinner to dessert on his menu is next-level genius. His staff are also brilliant at transforming the guest experience. I want the Bear to have that level of success. And..." Carmy then goes on a whole monologue about your father and how he loves him. You smile and say, "Ok well let's just say he is my dad and you're meeting him next week. He'd probably love to hear that from you." Carmy gasps and asks, "What are you talking about?" You answer, "I don't ever tell people about my dad because they use me... but you're meeting him next week and I think you should know who he is before then. The last name I've been using for the last 6 months is my mother's maiden name." He replies, "Holy sh**!!! And he's going to be at my restaurant next week! He's been to the Beef several times." You reply, "Oh don't bring that up. He misses the Beef like crazy." He laughs and replies, "Okay. Wow, let's not watch his cooking show right now. I think I'll go crazy." You laugh and turn on a movie.
NEXT WEEK ~ YOUR POV
You spent the night with Carmy and at 5 am as he is getting ready, you hand him your coffee and exclaim, "I'll see you at noon baby." He gasps and says, "Oh sh** I am cooking for my idol today. I need my lucky knife and my lucky shirt." He then starts running around frantically and you rub your eyes. Is he freaking out? Is it too early for this? You are tired. You move in front of Carmy as he walks and you place your hands on either side of his arms. You say, "Please, don't freak out. Treat today like a normal day. Be calm and you've got this. My father is just a normal human at the end of the day. Remember that." He replies, "Yeah yeah. I'm going to tell my staff beforehand because this is big." You reply, "Okay. Well, goodbye and good luck." You send him out with a kiss on his lips.
Hours later, you show up at your house and are driving to the Bear with your parents. You park nearby and walk to the restaurant.
As you walk there, you ask, "Hey Dad, can I tell you something?" Your father answers, "What's up sweetie?" You answer, "Carmy is a huge fan of yours and nearly freaked out this morning. He was calm when I first told him, but today was bad. He couldn't find his lucky shirt and he said his lucky knife was at work. I just want you to go easy on him because I really care about him." Your father replies, "No problem, sweetheart."
You arrive and Neil Fak greets you happily. He shows you to the table and Richie immediately pops up. Richie's jaw drops a little at seeing my father, but he quickly recovers. Richie introduces the Bear and the menu then leaves to get the wine my father chose.
My father exclaims, "I like this place. The people are friendly." My mother adds, "And their service is fast." You reply, "Carmy told them that Dad was going to be here. I think they're all nervous and excited." My mother replies, "I bet they are. Poor things. We should invite them over. Are they ever closed?" You answer, "Mondays. They sometimes are unloading and restocking stock though, so they go in for half the day. You should ask Carmy for the specifics." Your father replies, "Oh I have a few things to ask ole Carmy boy now." You reply sternly, "Dad." He replies, "Ok fine. It's nothing bad. Don't worry."
Richie returns and you're all served. You three eat up the food and it's delicious as always. Dessert shows up and you notice Carmy walking your way. You notice his hands are a little shaky and you stand up. You hug him as soon as he reaches you and he presses a kiss to your cheek before you whisper, "He's just a person. It's all fine." You kiss his lips gently before introducing him to your parents. He slides into the seat next to you as you three talk over dessert. Conversation flows and is going well.
My father asks, "So, I hear you really like my daughter and she really likes you." Carmy smiles and says, "Yes sir. I really like your daughter." My father asks, "And what are your intentions with her?" Carmy answers, "Well sir... uh... I really like her and I'm falling in love with her. She's always supportive and kind. She lights up every room she walks in and people like her. I find her to be the person in my life that I look to for cheering up. I also think I cheer her up. You'd have to ask her though. I just think she's the most perfect and amazing that a person can be... and she has you as her father. Sir, I've looked up to you for a while. I think your work ethic and your drive set you apart from other chefs. Your show doesn't feel like a money grab and it's clear to me you love your family, which is great." My father smiles and says, "Well I appreciate it, son. Now do you think your staff would be free on Monday afternoon? Ginger says you have to unload stock, but I assume you get hungry doing all that heavy lifting. I'd love to treat your staff to some lunch at mine." Carmy replies, "Sure sir. That sounds amazing. We're usually done by 2 pm, but then we'll have to drive there. I'm not sure how long it takes, but I'm sure no later than 3:00 is fine for us." My mother replies, "Great, we cannot wait to host. We'll have Ginger give you the address and times. You can give her the number of staff that will show up, so we can plan accordingly." Carmy nods and my father asks, "Can I say thank you to your staff? I noticed they kept trying to get a glimpse of me from the kitchen. I just want to thank them and you. I really did have a lovely time this afternoon and would love to come again." Carmy answers, "Yeah haha they'd really love to hear it. I better get back to work. I'll see you all soon then." He kisses you, hugs your parents, and goes back to the kitchen.
Your father goes in after him and you watch through the window at your father giving some big speech. You see the smiles on everyone's faces and you're happy for them all. You notice your father pat Carmy on the back and you laugh. Carmy is going to freak out. HAHA!
NEXT WEEK on Monday ~ YOUR POV
You had asked for a half day at work and you were still at work at 2:00 pm in a meeting. It finished, you quickly packed up, sent your last emails, and dashed to the metro. You hopped on and went to your family home.
As you walk your way down your street, you see cars parked out front of your house. I guess everyone from the Bear is already there. Hopefully, your father has kept the questioning Carmy to a minimum. Carmy told you last week that it was so exciting to have him there and meet my family. He also said his staff couldn't stop talking about the meal at your parent's place.
You knock and your mother opens it. She pulls you into a hug and says, "Oh hi sweetie. I thought you would be here earlier." You reply, "I tried to leave, Mom. But I didn't want to leave in the middle of the meeting." She replies, "You're just like your father... Speaking of, your boyfriend has been helping him this afternoon and they seem to be getting along. You should grab him and get him to eat. He's only been eating little snacks with your father." You laugh and say, "Ok Mom." She replies, "You look lovely sweetie. You in business casual make us all look lame." You laugh and say, "I was actually going to change up in my room real quick before I say hi to people." She nods and she lets you go. You finish changing in your bathroom and jump when you see Carmy in your bedroom looking around. You exclaim, "Hey Carmy. What are you doing up here?" He sees you and smiles. You kiss him and he answers, "Your mom said you had to talk to me. You were in the bathroom, so I just waited out here." You reply, "My mom thinks you've been working too hard today. She said you started helping him when you got here and she wanted you to have lunch. She wanted you to see me so she knew you were being looked after. It's a mom thing." He replies, "Oh that's really sweet of her. I can take a break and eat with my lovely girlfriend." You reply, "I almost thought you said eat your lovely girlfriend." He gasps and replies, "Babe, we're at your family home. Oh speaking of it, your mom did show your baby album to everyone. Everyone loved it. You were so cute." You reply, "We're making a pit stop to talk to my mom first then we can eat." He laughs then follows you.
You make a plate of food and find space on a couch next to Sydney. Carmy slides next to you and puts an arm around your waist. Everyone starts asking you about your baby photos. Oh gosh... this is great. Richie seems to like this one where you resemble a gremlin and everyone suddenly thinks you need bangs again.
Your father pulls a chair up and so does your mom. Everyone talks, laughs, and enjoys the day.

Knife Theory

This is the third part of the Spoon-Fork-Knife Theory  that I believe makes up the main themes of the whole series and each season. Make sure to read The Spoon Theory and The Fork Theory too.

Carmy was on his literal last knife, as none of them were sharp, until he found his good knife on the floor after trying Sydney's stew. Sydney spent years working at Michelin restaurants and then overworking herself and spreading herself too thin with her catering business, and this was her her last hope and push forward after failing on her dream. Carmy has been on non stop knife mode for a decade, he did not even stop to grieve his brother, he just kept working and working.

When Carmy didn't have any "spoons" or help, he hurt himself using a knife. The same thing happened to Sydney because she was over exerting herself. Both of them are used to living in full knife mode. Carmy was selling jeans and his brothers jacket just to buy meat. He was literally giving his blood, sweat, and tears for this place.

Season 1 was all about Sydney and Carmy's "knives" and having to push themselves to the limit because of their passion to try and make The Beef into something better. Sydney used her knives and overspent her energy until she hurt Richie, the person that kept getting in the way of her using her knives both literally and metaphorically, and eventually she broke down and crashed. Carmy who was already on his last knife, struggling just to keep the lights on before Sydney arrived, finally felt the burn out when she left and almost let the restaurant burn down.

At the start of Season 2, Carmy is at a somewhat peaceful and chill place where he actually has free time, and the first thing he does when he's by himself is play with a knife. He needs the chaos and he doesn't know how to exist without being on high alert and pushing his passions to their limit. He then goes and sets practically impossible standards by planning to open in 3 months. He thinks he's using his knives to push himself to greatness but at the end of it all, what he has done is created new set of problems, also known as "forks", by avoiding his responsibilities and forcing others to have to use their "knives" and "spoons" to get things done because he is absent.

Tina ends up getting Carmy's knife both literally and in terms of being the one to push herself to her passion. She was putting all her energy into helping Sydney with the menu and to trying to get Ebra to have the same drive as her. Both things that really should have been Carmy's responsibility as Syd's partner and Ebra's boss. All while Carmy is off doing whatever with whoever.

Now, in the words of Carmy: if they want a Michelin star they are going to have to care about everything, more than anything. They are going to have to push themselves to their limits and they are going to have to use their "knives" again, but if they do there will inevitably come a big crash and burn at the end when everything comes catching up to them.

Notes: Its been one year since The Bear's soft open, and with everything running smoothly, Carmen's lost in his thoughts, until the final table of the night is seated.

A year after their soft open, The Bear is like a well oiled machine, working perfectly as Richie calls out the orders and their corresponding tables. Carmen’s on auto pilot as he works, doing his best to not think about where he was this time last year: breaking down in the walk-in and subsequently breaking up with Claire. If you can even call it a break up, he still isn't sure if they were actually dating. 
He’s pulled from his thoughts as Fak enters again announcing the final table of the night was just seated. Almost from memory Richie calls out your name and party of one, doing more than trowing Carm from his thoughts; practically gut-punching him through the thick metal wall of the walk-in with memories of New York, not the asshole of an executive chef he worked for but of the calm and blissful three months he had from December to February with you. 
Before his life got uprooted. 
Before The Beef. 
Before Mikey…
He’s brought back as Richie yells at him before he looks up at him, looking at his face.
“Cousin, you good?”
“I’m fine.”
“You don't look fine, chef.”
“I’m fine.” Carmen insists again.
Richie rolls his eyes as he returns to calling out orders for a moment.
“You look like your gonna throw up,” Sydney mutters.
“I’m fucking fine, Jesus fuck,” Carmen snaps. Stoping his task as he looks up to Sydney then Richie, whose still scribbling something down.
“Take five chef.” Richie says, still not looking up.
“Richie, I said-”
“It wasn't a request Carm.” Richie finally looks up at him, ever sense that test night a year ago, and when Richie started wearing suits, hes been more final in his input. Telling and suggesting and researching rather than just complaining. Fuck he even learned to do more prep properly to help out on the busier nights. Why Richie even stayed after that night he isn’t sure, the shit he said was fucked. He wouldn't have blamed him, Syd, or anyone else for walking out on him if they did. 
“Syd take over for Carm, Tina for Syd, and Alex for Tina; Carm needs a sec.” If the uniformed call of “Yes Chef” from the kitchen doesn't do it, the sudden movement of the kitchen to function without him more than solidifies it. Carmen’s taking five wether he wants to or not.
Not wanting a repeat of a year ago, Carm takes to the office instead, seeing Sugar seated at the desk looking at paperwork, all shes been relegated to now that shes just had little Mikey. A name Carmen was surprisingly happy to approve of when Pete brought it up to the two of them, asking if it was okay. Nat had nearly bawled her eyes out thanks to the combination of pregnancy hormones and the normal grasp she had on her emotions compared to Carmen.
“You look like your gonna throw up,” she says, glancing up from the papers before her. A half hearted fuck off is all she gets in responce as Carmen flops back on the soft leather couch in the office. She tosses him the pepto before she turns to sign something.
“You wanna talk about why Richie kicked you off?” she asks, her back still turned.
“It’s nothing,” he says before taking a swig of the pink liquid as he sits up and faces her.  
“It’s not nothing if you look like that.”
“Like what?”
“Like that,” she says turning and gesturing vaguely at him. “Like you just found out Santa isn’t real or some-fucking-thing.” Carmen shakes his head avoiding her gaze and looking out the door with a huff. Crossing his arms trying to end the conversation. It wasn't that he never wanted to talk about it, he did. He just didn't have the time. 
The last time he had told any one about you, he had talked to Mikey about how awkwardly ended things with you. Mikey told him not to be a jagoff after hearing his rant. That was almost a week before he died. It became easier to not think about you because it always led to thoughts of Mikey. How Carm should have known or should have talked to him more about how he was, how the beef was doing, how ma and Natilie were, if there was anything Michael wanted to get off his chest or was stressed about or something other than Carmen's girl problems.
Then Carm had to worry about selling his apartment in New York, quitting his job, getting an apartment here and moving, running The Beef, which was its own massive undertaking, turning it into The Bear and worrying about Claire, dishes, codes, tests, money that was likely tied to the mob via Uncle Jimmy, chefs, the building, new hires, the test night and the the dreaded walk-in he had to thank for letting him rant until he talked out of his ass and fucked up his personal life even more.
“Fine whatever avoid it if you want but thats not going to make it any better,” Nat huffed out, rolling her eyes as she turned. Carmen knew she was right, but that didn't make it any easier. But if the Al-Anon meetings had taught him anything it was that talking about it did actually help. 
He sighed and pinched the bridge of his nose, leg bouncing with the nerves of from trying to find the words he wanted to say.
“When I was in New York,” he started, already feeling a nervous sweat breakout on his face, back, and hands. “There was this girl…”

Alright SydCarmy Mafia AU Premise
There are still chefs, same family restaurant and other businesses, psuedo family, but the businesses are used as a money laundering front.
Richie is still involved with drugs but is a higher ranking lieutenant, Natalie still has that finance degree and background, works at the bank as a cover but is involved.
Just like in canon, cousin Michelle is a restauranteur, something the family doesn't see as viable like real estate had been as a cover, but as things bloom for her, they see the opportunity to move into a larger bracket because a lot of money moves through fine dining establishments each week.
And with that, they invest in the beef a bit more, and when they see the nascent talent of a prodigy, they push for Carmy to be out in the world to become the canon chef we know.
Mikey hopes that being away from the family will keep Carmy on the straight and narrow, clean and unsullied by their bullshit. Mikey failed to make it beyond the Berzattos, but Carmen would be different, if he keeps him at arms distance. Little did he know, the Family was reaching further than he could push his baby brother away.
Syd is tapped after catering for a private party to stage for a CDC position at one of the BZ Group restaurants, an opportunity that could take her 20 year plan to have her own restaurant as a culinary iconoclast and cut it in half. They had inventive and successful establishments in New York, California, and here in Chicago, and if she could lead a program in one of their kitchen's to snag a F&W award, or retain and increase one of their Michelin Star kitchens...This could accelerate her career way more than micro-planing citrus.
The Restaurant group has a reputation in the city, but in the food world, that reputation is a life time opportunity. And one of the reasons for that reputation is successful, famous, nay, legendary hometown hero Carmen Berzatto that might even be her EC if she nails this. It's not like she'll work their forever, right?
Possible routes:
Shy anxious Carmy is a cover to get her to join in and she falls deep into the life before realizing what this is all a front for. he's been in on all of it and groomed to take over, he just needs a partner to expedite by his side.
OR
Carmy is trying to keep her out by being an asshole because he doesn't want her to get sucked into their underworld as he tries to figure out if the story he was told about his brother's death was true.
OR
Sydney witnesses something she Should Not See™, so they have her marry Carmy so she can't testify against him (fake marriage au) but they fall for each other over time as they bond over food in the menu of chaos around them.
BONUS: Mr. Berzatto was taking care of and/or his family was offered up as collateral because he owed folks money. but he is still out there and might come back 👀👀
Or he's the big bad boss behind it all but none of his kids know him or see him "for their safety"

my initial thoughts on the bear s3 (having only gotten to ep 5)
im not even mad ab the whole sydcarmy breakdown in s3 rn I’m just like disappointed because what the fuck man
I’m only on ep 5 and I’m not gonna lie to y’all if this was as good and actually interesting as season 2 I’d be eating it up and binging that shit as much as I did last year. Well now I rlly can’t because I just HAD to rewatch the show w my parents so now that means I have to wait until they’re in the mood to watch it to watch it with them so I don’t feel like I’m betraying them for watching episodes on my own (mostly my mom tbh) but like ts is NOT speaking to me man

Fic idea where Richie fully tries to reconnect with life
First chapter is Richie being invited to go dress shopping with Frank and Tiff as she's their flower girl. He gets along with them and thinks he could be friends
Second chapter is him reaching out to his parents, who he cut off contact with since he left home. He tells them what they missed, how they were partially right by their suspicion of the Berzattos because Richie feels like he keeps getting drawn in only to be pushed out when things get tough, he feels like their caretaker and the one putting them back together. It's rocky but it's a start. His dad apologises for the hard, neglectful way he treated him, and that he missed having him in his life a lot more than he cared about the rules he put in place. He shows them the Bear and his mother apologises then.
Third chapter is Richie applying for jobs. He's realised how this is another sinking ship and he can't go down with another Berzatto. I think it would be interesting if Carmy started to improve, he talks with Sydney and she ends up staying but Richie ends up leaving. He's spent most of his career in the same place and he's grown more than that. I think it would be a nice end to his character arc to have him leave the Bear, and in some ways the Berzatto family or at least him putting boundaries in place, while Sydney gets accepted in and let's herself be accepted.
This could also have him having some interviews that don't go well. Him being rejected, perhaps mirror Tina's episode with him putting so much time in at the Beef that's now the Bear but not being good enough for the same role elsewhere as he's not educated and doesn't have enough experience.
Fifth chapter is him getting a job. I can see him working somewhere not Michelin star as he doesn't care for them, but somewhere that cares about the food and the people. I can also see him working in a hotel, or, controversially (?) leaving the hospitality industry as a whole and taking his passion for people and working somewhere else.
Can anyone else see Richie as a good nurse or is it just me? Him seeing the same faces, having a rapour with them, making them smile and helping them, I can see him flirting with elderly ladies to make them smile (yes I'm thinking of him being a palliative care/geriatric nurse
He hands in his notice at the Bear and when asked why he goes into how it's heartless. He's trying so hard to improve himself but how can he when there's so much tension and he's not respected, he's earning the same wage as he did at the Beef but is working so much harder and longer and is still relying on tips even though people pay $175 a head. He also tells them, trying to be respectful, how they've all collectively failed at making the Beef better by wrapping their dysfunctions in a different jacket, so to speak. Syd wanted things to be better, for people not to feel and act shitty but now it's even worse because there's no fun. They've got more debt and everyone's unhappy and he can't put another Berzatto back together, he can't go down with another sinking ship and he respects himself more than that.
Sixth chapter could be a time skip. Think 2 years later, Richie’s finished his associates degree in nursing and is starting as a nurse for a carer company. He goes out to celebrate, someone books the Bear, he's heard that things are better, not Michelin star but not shitty quality like the Beef, somewhere in the middle.
It's strange for everyone else, seeing Richie as the customer. He kept in touch, but life's busy, he became more like a true cousin, one you see more at family functions than day in day out. He’s on good terms with his parents, good friends with Tiff and Frank, Eva’s growing up, turning 8 now. They stay close to closing, he leaves a big tip but waves through the window before going.

I'm rewatching The Bear...... And Lord Syd really walked into fire the same day she started working at The Beef. T being a pain, the loud music, and Richie being loud like Mickey. I got some boring opinions. Let me rant n be delulu 😂🤣🤣😍

Richie saying that The Beef didn't have money problems until after Carmy showed up😬😬😱😱😱..... Knowing what I know about season 3, I see a pattern of Carmy trying to change things too fast, too soon. The Beef been running for 25 years, which means something was going right for it to last that long (we know some d.rugs money was involved lol). Richie confessed about selling from the back a few times lol.
Anyways, I say all of that to say, I think Syd was the only one who walked into Carmy's life with a plan. Carmy saw that n respected her for it. Everyone else was going with a flow that was no longer sustainable (this includes Claire). Yes, she and Carmy had a past, (well to be honest they don't even have a past. They never dated or hangout in HS) it's more like a fantasy. People grow n change..... n love interest can also change. I don't think Carmy like Claire the way he did bk then. It's life!
Carmy was happy he found someone who shared his passion, yes he wanted a business with Mikey..... but I honestly think Carmy wanted it for himself too. He's only wanted 2 things The Bear with his brother and Syd (yes, Syd). He was willing to make a complete stranger help him run his family business after 1 - 2 weeks of observing her. He made that decision with no outside influence (his family). HE WANTED SYDNEY and that want slowly turned into NEEDING HER. I'm not talking on a romantic level of want/need, but business wise she will always be his first option.
The romantic level, based on my opinion started flickering when the mere thought of her calmed him. Now, he's probably too naive to notice that he has developed romantic feelings for her and its pushing to the surface. The mere thought of her brought him peace and steady the tsunami in his mind. That is a leave of intimacy that is top tier. She touched him mentally. Carmy n Syd's conversation in the beginning of Season 2 are soo charged that they don't have to touch to sell the audience a romantic story. This is because their way of intimacy is through food, thats how they express themselves to each other. It's like talking about the menus n stuff is foreplay. It was also funny to see Carmy gave Syd the best orgasm of her life and then take it back. (This was when he said her braised short ribs was tremendous, and then decided to take it back). She like, no sir, we ain't doing that cause I'm still on cloud nine trying to come down. 😂🤣😂🤣
Carmy suspected this and he didn't want to entertained Claire (gave her the wrong number). Now, she's all tangled up in Carmy n Syd's weird mind fuck with food..... Syd feeling jealous is kinda vaild (hear me out). It's valid because all the time they spent together being mentally intimate through food...... those feelings were reciprocated. So, CARMY out here cheating on Syd.... giving all the focus she deserved and EARNED to Claire. Like, Syd should packed his shit up and put him out!

BUT, at the end of season 3 they stopped connecting through their food. It's like when married couple is so far apart that sex/intimacy longer plays a role in the relationship or it took the back burner. Days or weeks would pass and they wouldn't touch each other...... This is what Carmy n Syd are facing. Their relationship is so disconnected that intimacy is no longer on the table.
Let's see if they get a divorce or make up.

The Bear Enneagrams because personality database is wrong and stupid/j
My interpretation of enneagrams is based purely on the motivation part of it, plus I also use the wings for funsies, and here’s a little cheat sheet of the enneagram motive types:
1: being morally correct
2: being wanted by those close to you
3: having status and importance, being known/liked by the most people
4: having a strong sense of individuality and being memorable
5: being able to understand and make sense of the world around you
6: feeling secure and able to rely on your environment
7: getting excitement or amusement or enjoyment
8: having control over your environment
9: there being harmony and minimal conflict
Carmy:
I think Carmy’s mains are going to be 2, because he literally did everything for Mikey’s approval, 6, because of his dedication to consistency (and being consistent) and 8, because in review at the expo and potentially his focus/ near hovering on the braciole in the ceres flashback could be viewed as him feeling like a kitchen isn’t under control unless he’s in control
I’d put him as a 2w1. I think a couple years ago, he might have liked the high status kitchens for the amount of praise they received, but he’s working on a much more personal level now, and he tries very hard not to be shitty to the people he’s close to
Sydney:
Her mains are probably 2, with her wanting to make others happy with her cooking, 3, similar to a 2 but going for the most happy people she can get, 4, because she wants to make something big, not just be part of another restaurant’s crew, and 8, because at least toward the beginning, she seems to feel that if she doesn’t micromanage things, then they won’t be done right.
I think I’ll put her as a 3w4, but she’s just kinda ended up a mix of 2, 3, and 4
Richie:
So this gets a little complicated with stated motivations (easy type 7) vs what’s actually going on there which became a lot more evident in season 2, but anyway
His mains are 2, because his restaurant found family is incredibly important to him and feeling like he’s important to them is a big part of his whole thing, 6, because he starts out very resistant to change because of his intense fear of losing his place in the Beef/Bear, 7, because he did heavily prioritize hanging out and enjoying himself with his restaurant family above the functioning of the Beef sometimes.
I’d probably put him as 2w3, but it’s complicated because his 2 and 6 motivations are almost interchangeable. 2: he found a purpose of being wanted around by customers in order to be wanted around by his restaurant family vs 6: where he finds a purpose in life in order to stay secure in his life. I don’t know honestly
And that’s all I have for now but I absolutely love thinking about enneagrams and these messed up little chefs

Summary: Sophie and Sydney bond over dealing with Carmy's bullshit. And Sophie and Carmy get close in the kitchen.
Sophie started building a friendship with Sydney, the sous chef in Carmy’s kitchen. Their short time cooking together at The Beef acted as an introduction and when Sophie ran into Sydney at a farmer’s market, they reconnected and ended up spending the afternoon together. They wandered the market and eventually decided to chat over coffee and pastries at a coffee shop nearby.
The two bonded over their experiences in restaurants, exchanging stories. Sophie learned about Sydney’s catering experience and her time in culinary school. Sophie shared about her time in San Diego, how she missed California but had to admit Chicago had its own charm.
Sydney updated her about the restaurant. Carmy and the crew at The Beef had found money Mikey was hiding in cans of tomatoes. And they were planning to rebuild into an entirely new fine dining spot, with a window to keep hold of their roots and still sell their famous sandwiches.
Sophie was happy for them. Carmy had talked about his dream to help Mikey turn the restaurant into the Bear for so long. Syd was also excited to be working in a restaurant more fitting of her experience. She deserved the role of CDC and Sophie was thrilled for her.
“I needed this,” Sydney sighed into her coffee mug, looking at Sophie after she vented some of her frustrations. “Carmy is driving me insane.”
“Yeah?”
“He’s been even more unresponsive lately. And I know after his brother– I mean, I can’t imagine.” Sydney had quieted. “Tina was telling me how close they were. How Mikey had been a little unstable but no one ever expected–” she trailed off and Sophie went cold.
“Richie told me he had passed but I didn’t realize.. he- Mikey killed himself?” Sophie asked, feeling her heart start to race.
“You didn’t know? Oh shit. I assumed since you and Carmy were friends you must’ve– it was all over the internet too. With the Beef. There was a couple articles. And Carmy being Carmy…” Sydney was clearly uncomfortable, feeling guilty for spilling something she worried she shouldn’t have.
“No it’s okay, Syd. Carmy and I hadn’t really talked since he went to work at Noma. And I hadn’t really kept up with his career,” Sophie regretted not trying harder to keep track of where he had ended up.
“It’s hard because I know it explains some of this. I can’t blame him. But also, this is my future too. I can’t risk my career if he isn’t all in. And he keeps leaving me hanging.”
“You are absolutely right. Even if he has a reason it doesn’t make it okay for him to abandon you,” Sophie agreed, head still spinning with the news of Mikey’s suicide. “Damn, sorry Syd. I wish I could help. I don’t think me talking to him would be any help though.”
“Did something happen between you? It seemed like you two were talking and now you’re avoiding each other,” Syd said, leaving it open for Sophie to respond.
“It’s a long story. We had a bit of a disagreement,” she paused. “But I wish I knew about Mikey. My dad– uh. My dad also took his own life. A few years before I met Carmy actually. So I know what it’s like,” she said, softly. “Should have given him the benefit of the doubt. He has other things on his mind,” she explained.
“Oh I’m so sorry Sophie,” Syd was instantly sympathetic and Sophie nodded. “I’m sure you and Carmy will work it out,” Syd smiled at her encouragingly.
Sophie hoped she was right.

It seemed as though Sydney must’ve said something, done some urging, because Carmy called Sophie a few days after they spoke. He asked her to visit, to come see what they were doing with the new restaurant. And to discuss their decor decisions. He said she had the better eye for art and design. She disagreed, Carmy was one of the most detail oriented people she’d ever met. But she did enjoy it and it was a good excuse to put what happened behind them.
Her visit was fairly short and Carmy was quiet, as usual. She learned a little about the stress of kitchen prep, getting all of the permits, making sure the new space was up to code. She met Carmy’s sister Sugar and offered her help where she could.
She still felt a little awkward around him, a little annoyed at him and herself. But she wanted Carmy’s restaurant to be successful. He deserved it.
She left before they could ever interact without Sydney or Sugar also there.

Weeks later, Sophie received a call. Carmy’s voice sounded through her phone. “Soph. I– I know this is sudden. But I have an idea for a dish and I was hoping I could cook it for you.”
“A new dish for the menu?” she asked, confused.
“Yes. I had this idea and I couldn't get it out of my head. Could I come over? I want you to try it.”
“Oh– of course, Carm. Tonight?”
“Yeah. If that’s okay,” he sounded unsure. As if he just realized he was making a strange request.
“Yeah. That would be fine. You can come over whenever.”
Carmy called when he got to the front door and she found him outside, looking slightly flustered, holding a giant bag of groceries. She grinned at him and led him upstairs.
“I won’t get in your way but let me know if you need help. Or a taste tester,” she said. She walked back to sit on the couch and tried to work a little on her laptop.
Something about the sounds of Carmy cooking in her apartment made her feel at peace. Like all of the nights in New York, shuffling around in her tiny apartment, cooking into the early hours of the morning. She missed it. The comfort of just having him around. Eventually she stopped pretending to work and found herself just looking over at him while he cooked.
“This feels a lot like New York, doesn’t it?” he asked, as if he could feel her attention on him.
“I was just thinking about that”, she admitted, walking over and leaning against her kitchen island to get a better view of his cooking. She hummed. “Do you remember that night we made those god awful ginger prawns?”
Carmy laughed, loudly, caught by surprise. “Fuck, I forgot about that.”
“My roommates were so mad. Our apartment smelled terrible for a week.” She shook her head with a grin.
“This smells amazing though. Almost like–” She stopped for a second when she saw the chicken and herbs in the cast iron skillet on her stove. “Chicken Paillard?”
“It is. A little bit of a twist. Because you used to be obsessed with potatoes. And bacon lardons.”
“This is like our lazy sunday dish.” She was astonished. “But French.”
“A little French. A little Danish. Mostly just– our dish. It’s what I want the Bear to be. All of the things I love.” Sophie blushed at the softness in his voice.
He had started plating it, his hands sure as he placed the chicken over the salad of greens, roasted veggies, and crisped polenta– alongside the small caramelized potatoes. An herb and lemon scented pan sauce carefully poured over the top. He turned and handed it to her.
She bit her lip but took the plate and looked it over. Devouring the details, the mix of colors, the golden potatoes and the bright greens and the crispy, browned chicken. She took a bite.
“It’s amazing,” she said, knowing she was blushing. After another moment of thought, she looked up at Carmy with wide eyes. “I remember these potatoes. The Danish recipe.” He had cooked them for her the night he told her he was applying to Noma. She remembered so clearly sitting and watching him cook for her. Sad about his possible departure but happy for him. He was so excited. And he deserved good things.
This dish was all of it. It was New York. It was them, sitting in the kitchen at 2am laughing over complete nonsense because they were so exhausted they had become giddy. All of the quiet joy they had found amidst the chaos. She took another bite. Then she slid the plate over to him. He reached over and took a bite as well, looking at it thoughtfully. “You’re too talented for your own good,” she said, voice too intense for what she meant as a way to play off how much it meant to her. For him to make this dish.
He smiled at her, his own cheeks flaring pink. “I’ve been so fucking lost. Making the menu for The Bear. Syd has helped a lot but we’re both just taking swings wildly, trying to make something memorable. But for some reason this afternoon I couldn’t get our chicken dish out of my head. And I wanted to make something that felt like that. I wanted it to feel like your kitchen in New York.”
Her heart pounded. She was getting caught up in him again. She didn’t want to mess it up. She knew what he was going through. With Mikey. Didn’t want to make things worse for him.
“It’s perfect,” she blinked and looked away, trying to cut the tension. “But you improving on our dish feels a little like that terrible Bobby Flay show,” Sophie joked, lightly. He huffed out a laugh before looking at her with his unbelievably emotional eyes. “I think this is my new favorite dish,” she said, thoughtfully. His eyes lit up and she decided to tell him just how much she loved his cooking– had always loved his cooking. “For years my favorite has been that veal saltimbocca you made for us on our last night in New York,” she admitted quietly, hoping he didn’t feel odd about her obsession with his food.
“That was your favorite?” he asked, eyes wide.
“Yeah. Are you kidding me? It was simple but perfect. Back to basics, that’s what we talked about back then, remember? I was so annoyed with fine dining then, turning everything into foam. I feel like that conversation, that dish changed my career. It has stuck with me ever since.” She realized she had rambled, gotten too passionate, and bit her lip.
Carmy had stepped closer to her. “That day– those dolma you made? I tried for months to get that recipe right,” he said to her, eyes burning into hers. She felt the air leave her lungs. It had changed– the energy between them. Her hands gripped the edge of the counter, nervous. “And those caneles– I get a canele every time I see it on a menu now.”
She blushed, feeling nervous energy shoot up her spine as he stood in front of her, hands on either side of her hips against the counter. “I remember wanting to make something so you wouldn’t forget me when you were off traveling the world,” she responded softly.
He was standing so very close and shifted even closer, she moved slightly, making space between her legs so that they were on either side of his hips. Her heart pounded. He moved his hands and the feeling of his palms on her thighs burned through her jeans. “It worked.” It was a whisper.
And then his lips were on hers, the taste of lemon and smoke still on his tongue from the dish. He was soft and gentle, hands unmoving on the outside of her thighs. But she wanted more. She lifted her hand and tangled it into his hair.
Her thoughts had found her here numerous times before but none of it compared to the reality. The feel of his lips against hers. His hands as they smoothed up from her thighs to her hips, pulling her against him. His hand traveled up the curve of her back and cupped the back of her neck, fingers entwined in her hair. She was burning, every inch of her he touched suddenly alight.
And then it was over.
He pulled back and she found herself looking into his eyes. Something had changed. He was pulling away again.
“Wait.” He stepped back and pushed a hand to his forehead. “Shit, I shouldn’t have.” He was panicking, eyes wide. Gripping his hair, he turned and cursed to himself.
She reached out to him, still breathless. Her brain struggled to catch up but something kicked in, seeing Carmy’s clear distress. “Carm, it’s okay. I know you are about to start a restaurant. Not a good time to make things complicated,” she said, quickly changing to comforting mode. She was still thrown for a loop, her lips and fingertips tingling from the kiss. But she was worried about him. “It’s fine,” she said, again. Trying to mollify whatever feelings he was having. Remembering what she learned about Mikey. Knowing he must be so fucking exhausted with it all. She didn’t want to be another problem.
“No.” He shook his head, hands running through his hair. “Fuck. I ran into Claire. From high school.” She recognized the name, of course. The two had talked about their childhoods and she came up. “We ran into each other and then I helped her move some furniture. And she took me to a party.” He had let go of his hair and it fell across his face. He looked disheveled and broken and apologetic. She realized what was happening. He was choosing Claire. Then why did he kiss her?
Her heart raced. Shame burning the pit of her stomach. But she forced herself to respond. The embarrassment and hurt could come later. “Oh that– that’s good, right?” She asked, her voice sounding much more clear and confident than she expected, even with the stutter. “I know what she meant to you,” she said when he remained silent.
Why did you kiss me? She wanted to ask. Wanted to rewind and have him take it back. It wasn’t fair to do this to her. Make a dish for her. For them. Kiss her. Then say he was with someone else.
“I’m–fuck.” His hands were shaking. “Fuck I’m so sorry, Soph.” He walked over to the table and grabbed his jacket. “I’m going.” And he ran out the door.
She stood there in the kitchen as he left. Eventually she turned to look at the plate of food. Their relationship on a plate. Their hopes and dreams as young chefs. The little safe friendship they had built. She grabbed the plate and threw it into the trash.
She felt tears streaming down her face before she realized she had started crying. She walked over to her couch, grabbed her cellphone from the table, and called Mallary.
“Hello?” her sister’s voice answered almost immediately.
“Mal,” Sophie’s voice wavered, a sob escaping before she could help it.
“Are you okay? What’s wrong?”
“He kissed me.”

Behavior that was unacceptable:
(1) How she spoke to Richie and Tina.
Sydney's intention was to hurt Richie as much as possible when she snapped. She went way too far when she mentioned Eva and called him useless, all while not doing her work and distracting him from his attempts to help. Also she literally threatened to stab him and then did stab him...by accident, so it's not truly her fault, but she couldn't at least apologize? Like, "Sorry I stabbed you in the ass"?
Admittedly, Tina didn't treat her well at the beginning. That was uncalled for. However, that doesn't excuse the fact that Sydney cursed and yelled at Tina when Tina was just checking in on her and being gentle and taking a moment from her own work to make sure Sydney was okay.
(2) How she spoke about The Beef.
This is a small note, but she outright called The Beef a shit hole. She said something like "I don't know what Louie is supposed to learn from this shit hole!" Hello??? I do understand the sentiment since shit had just hit the fan. OK, it's run down and it was a shit show up to quite recently, but this is still the restaurant that Mikey owned for years. The Beef is still, in Carmy's eyes, his last connection to Mike. Everyone (yes, including Richie) is doing their utmost to turn it around and make it work, so I don't think it's fair to call it a shit hole.
(3) She took out her emotions on Marcus.
Just before Carmy stepped in, Sydney was berating Marcus for not working on the cakes and would have continued to yell at him instead of working if Carmy hadn't interrupted.
(4) She quit and walked out just as the absolute worst case scenario was unfolding.
This is probably the absolute worst thing she did. She quit just as service was beginning. She walks out, not giving a shit about anyone else.
(5) She refused to take responsibility for her actions.
As Sydney's walking out, she says "This isn't on me. Good luck." I am of the opinion that, yes, the events of Review are her fault. The fact is, she needed to turn off the preorder option but she didn't. While it wasn't her intention, it was her action (or lack thereof) that completely overwhelmed the restaurant. And she refused to accept that.
This is all after she tells Carmy that she feels it's unfair that he lets everyone else "act like trash". Yet, Sydney serves a dish to a customer after Carmy specifically said that it's not ready. She went behind his back and, in doing so, gave a dish that isn't ready to an undercover critic. When this is revealed to Carmy (by Ebra, no less), he gives her the benefit of the doubt and even defends her. And what does she do? She walks out. She leaves.
To top it all off, Sydney calls Carmy a piece of shit. Now, I know that comparing him to NYChef isn't very effective, because if NYChef is the bar, then the bar is so low that it's in hell. But I think it's important to acknowledge it. Carmy has been in incredibly toxic kitchens and he does his best not to act like them. Obviously, he fucked up and was cruel to both Marcus and Sydney, but he's not the only cruel one. What's more, he's been treating them as his equals from the very beginning, all while Carmy has worked in arguably the best restaurant in the goddamn world. But he's patient and encouraging with them, giving time and energy for both Marcus's creativity and Sydney's ambition/skills among the chaos of keeping the restaurant afloat. It's what they deserve, of course. But that doesn't mean that Carmy hadn't been kind and supportive. I think it's truly unfair to take that for granted. Compared to NYChef, Carmy is the farthest thing from a piece of shit. Really, even without comparing him, Carmy is nowhere near a piece of shit.
What Carmy said and did during Review hurt Marcus and Sydney and his apology was necessary. This doesn't mean that Marcus and Sydney are without fault, though, and Carmy also deserves an apology. (Tina and Richie, too. And everyone, actually, since they had to deal with that awful day with two chefs down.)
so, i wanna talk about sydney in ep 7 (review). what i mean is i need to acknowledge that her behavior was also completely out of line. between her and carmy's actions? i think i'd classify sydney's as worse.
