There is a lot of protein-rich quinoa and the sweet smokey taste of roasted red peppers and tomatoes in it. This soup is easy to make, tastes great, and will warm you up.
Ingredients: 1 cup quinoa. 2 red bell peppers, halved and seeded. 3 large tomatoes, halved. 1 onion, chopped. 3 cloves garlic, minced. 4 cups vegetable broth. 1 teaspoon dried thyme. 1 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil. Fresh parsley for garnish.
Instructions: Preheat oven to 400F 200C. Place red bell peppers and tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes or until softened and slightly charred. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, saut until softened. Add roasted red peppers, tomatoes, quinoa, vegetable broth, thyme, and paprika to the pot.
