my BEST potato salad

I have made many a potato salad over the years.  some healthy, some not.  this isn’t gonna make the cut for the american heart association but sometimes you just have to splurge.  this is my best potato salad to date.  it is similar to my grandma’s but made a few additions for extra flavor!  sweet pickle juice being one of them!  there aren't specifics with regard to measurements because, with a 3 month old, I just didn't  have enough time.  check back for a revised version of this recipe complete with measurements when I am able to find the time!  besos y buen provecho!

serves about 10 

ingredients

about 4-5 lb yukon gold potatoes

1 cup chopped celery

4 hard boiled eggs

large handful of chopped parsley

1/2 can large olives, drained

about 2 or 3 cups full fat delicious jarred mayo (I used Best Foods)

sweet pickle juice (about 1/4 cup)

a large squeeze of plain ol’ mustard (about 3 tablespoons)

about 1 teaspoon sweet paprika (not the Spanish smoked variety)

salt & pepper

method

Clean potatoes and boil until tender.  Refrigerate once cooked.  Chop cooled potatoes in bit size pieces (about 1/2″).  Place in large bowl and add celery, parsley, and 2 roughly chopped hard boiled eggs.

In a separate bowl combine the mayonnaise, pickle juice, mustard and spices.  Add this dressing to the potato mixture and stir to combine.  Use a masher (not sure of the its proper name but we use it to mash beans) to help break down some of the potatoes while still leaving most of it chunky.  This produces a creamier salad as the starch emulsifies with the dressing.  Finally, add the olives and any additional salt and pepper (to taste) and stir to combine.  Finish with 2 sliced hard boiled eggs and a sprinkle of paprika.  voila.  picnic ready!
