Lunch/Dinner Recipe: Pantry Pad Thai

A rough and dirty recipe. Uploading from phone so the formatting is wonky. Sorry I've been neglecting this! Doing a busy convention year had taken up all my spoons!
But! This was inspired by the fact that my kroger had momofuku instant noodles on sale. They're higher quality and usually around $12 for a 5 pack but they were on sale for $4 per 5 pack.
So I bought a bunch and made some pantry pad-thai! It was sooo good and extremely filling! It only took about 10-15 minutes to make (not including the tofu, which I'd been working on passively since yesterday.)
INGREDIENTS
-1 packet instant noodles (including seasoning. )I used momofuku but you could probably use instant ramen/ noodles of most brands
-1 egg
-1 TB peanut butter
-1 TB soy sauce
Optional
-Fried marinated tofu (had some tofu in the fridge for awhile and spent yesterday drying and marinading it,) leftover chicken/pork/whatever (this will likely increase the time/price factors, so up to you!)
-Green onion
-sriracha
-sesame seeds
-whatever frozen veg you have on hand. (We accidentally got a big bag of frozen kale from kroger so I've just been throwing some of that in with everything. But you could use spinach, carrots, peas, corn, whatever!)
-I used some of the leftover tofu marinade in the noodles along with the flavor packet, which included brown sugar, rice vinegar, fish sauce, sesame oil, soy sauce, red pepper flakes, and water
Start cooking noodles in water according to package instructions. While you're doing that, cook up any optional proteins in a front pan. Just before the noodles are done, drain them and toss them into pan with your protein/egg on low-med. Add your spoonfuls of peanut butter and soy sauce (and any additional marinade.)
Serve in a bowl, optionally top with sesame seeds, sriracha, and green onion!

So on Good Friday I had drafted up a little post just—I dunno. It started off with me talking about my lunch (broiche toast with peanut butter, some slices of overpriced smoked cheddar and a pottle of cherry tomatoes that i’d halved and dressed with wholegrain mustard, salt and pepper and sesame oil), because i enjoyed it, and then because i had been thinking about it, i had mentioned how Australian grocery prices have climbed well above the global average.
I mentioned some of my favourite people to follow, on tiktok! Food accounts—the woman who does the Dollar Store budget videos, where she plans out meals around limited money, or accessibility. The young mum who’s videos are just her making lunch/dinner for her four little kids. The Palestinian man who used to review resturants and dishes before the war on Gaza—and who, before Tiktok took down the videos, had started posting himself making dishes from aid rations. In the end I just saved the post to my drafts because—there was no real point to the post, not really, beyond how unfair it is that food is swiftly becoming a luxury and how it shouldn’t be, for any of us, anywhere. Not us here in Australia with our 54% on average price increases, nor for American families that have to shop at Dollar Tree with their last $30 for the next two weeks.
And definitely not for the citizens of Gaza.
Israel is manufacturing a famine within Gaza’s borders. And just today, they murdered via airstrike a carload of World Central Kitchen aid workers. Seven in total, six foreign nationals and one Palestinian local. No aid organisation can operate within Gaza’s boarders without reporting their travel plans to the Israeli Invading Force. Their car was branded with the organisations logo. Israel has some of the best surveillance technology in the world—it is often the testing ground for the hot new stuff that then gets sold to the rest of our governments. Israeli knew who was in that car. And they targeted them anyway. And now because of their actions, the WCK is now “pausing (their) operations”. And who can blame them? Knowing that if you stay, you’re just putting more lives at risk—but it means how many less meals, now, less food for the Palestinians still there? All of our countries are cowards. The Australian government won’t even name Israel in its condemnation today, of the attack. The Australian government has let our only two real supermarket chains—Coles and Woolworths—create a duopoly where they can charge the public however much they want. We can’t help ourselves and we refuse to help other people—so what good are we, as a country? The boomers and the ignorant on facebook are too busy frothing at the mouth over the imaginary millionaire immigrants who come to Australia in boats and buy houses by the dozens, per family. So many of our problems—here in Australia, globally—would be solved if the majority of us realised the real enemy isn’t a people bomb-locked on their own land, or the refugees that make it here, or even each other but instead our own fucking governments, and the bastard corporations that are gripping them by the balls. I’m grateful for every meal I get to sit down to. But I would enjoy it a lot more if it were easier for all of us to eat—or if it were a CEO or politician or two on the plate itself.

- bún bò huế (wth tumblr. very delightful thingy. a little bit spicy??) - bánh mì (the classic!!! no need to explain) - hủ tiếu (actually a khmer dish but i think they got it mixed up ;-; not my favorite but it's yumm!!) - cháo lươn (nostalgia for me. Porridge with eel.) - kẹo cu đơ (stuck between two pieces of bánh đa is a delightful layer of sweet peanut stuff!!!) - bánh căn (yom yom little rice cake thingy without oil) - bánh canh (yes. Completely different things. this one is a bowl of noodles [??] with chả cá and other toppings) - bánh đa cua (not my favorite but,,,yum. not sure how to describe) - kẹo kéo (YOOO it's basically cotton candy. food stalls on the street sell the best ones at the cheapest price.. stretchy candy that sticks to your teeth but u dont care cause it's so yummi) - bò bía (toppings put on a really sweet tortilla-like base that you fold and eat!! sweet viet tacos!!!) - bánh xèo (xèooooo. Not sure what they're made of but they're oily and delicious) - bánh đậu xanh (foreigners don't get it. it's delicious. More accurately, this one website doesn't get it.) - AND SO SO SO SO SO MUCH MORE!!!!

uppon arrival you see two large delivery boxes sitting upon the doorstep and you question what it could be. ran carries them inside with ease. ran removes his shoes after taking the boxes inside and tells you to sit infront of him and open the packages. you look at him with a puzzled face but nonetheless, you open the first box.
anticipation kills you as you remove the loads of packing peanuts and tissue to finally see a clear bag that says “SKIMS” on it and you almost pass out.

Weekly Groceries
I thought I'd try to make this a somewhat regular thing (as much as I find the time for it lol). I'm not promising these will be the healthiest or cheapest meals ever, they're just average person meals. I don't hold myself to this schedule, I just make a list of meals and make what I feel like eating whichever day it sounds good. I just thought it'd be easier to format for you guys if I did it this way.

These are white people burritos, I'm not doing anything fancy lol. I do make my own taco seasoning so you'll see individual spices on the grocery list. The fried egg on a bagel has become my new obsession breakfast. I use a plain bagel and put jam and sometimes bacon if I have some premade.

As you'll see on the grocery list I don't buy pasta sauce. I just buy a can of plain tomato sauce and add Italian seasoning. I'm sure there's great recipes out there that accurately replicate store bought pasta sauce, but a small can of tomato sauce is like 50¢ lol.

I use a cheese ball recipe for the stuffed chicken breast. Whatever I don't use for the chicken (at least half of the recipe) I eat with crackers and vegetables as a snack. If I feel like being extra fancy I wrap the chicken in bacon before cooking.

I love doing breakfast for supper! I love breakfast foods and I don't subscribe to the idea that certain foods are for certain times of the day. I had leftover chicken parmesan for breakfast this morning lol.

This list is not reflective of what I'm buying this week. It assumes you don't have any of the ingredients needed for these recipes, including spices. I'll include prices from Walmart because it's the most popular grocery store in the US, I fully understand it's not the closest for everyone (when we move the closest one will be an hour away). For the most part I'll assume the cheapest version of each item is being bought. I buy certain things in bulk so I won't have to buy them again the next week. You may notice this lacks much produce, I wanted to leave that to personalize. So, depending on personal preferences and where you actually shop your total could be higher.

I've had rats for years at this point now and finally want to put down the best tips I've learned. This won't work for everyone, some are very conditional to me, but maybe some of these will help someone. Fleece hammocks: Boo. Microplastics and too warming. Canvas hammocks: Yes, please. Highly washable. Far more tough. I wish they were easier to find. Coiled rope baskets are also a godsend. I hang them by the handles in the cage, they love them way more than anything marketed to rats. Bottles are nice but some rats wanna splash and have a place to wash their little hands. Fresh in pod peas are by the pound at my supermarket. I usually spend 70 cents on the amount for several treat sessions. All my frozen peas end up getting freezer burnt by the time I get halfway through the bag. Antibiotics will be needed if you keep rats. Do not give antibiotics with dairy, many classes of antibiotics bond to calcium thereby making them far less effective. Speaking of, antibiotics seem to have the hardest taste to cover up. Ground meat baby food, Hershey simply five syrup (Just a little), peanut powder (No added sugar, oils), fruit compote/jam/jelly, small absorbent bread snacks/cereal, smushed pasta, cream of wheat, are all options to get meds into rats. You can call exotic vets and ask for an estimate on a basic rat exam. Do it, the prices vary WILDLY. We had a vet who charged us 35$ to see three rats at once and one who quoted us 200$ to look at one. You're gonna notice a trend if you call vets in higher class/rich areas. Fuck em'. Also ask your vet if you can keep a supply of meds on hand just in case. If they last at room temp you can buy some preemptively. Things like doxycycline you can get from human pharmacies.
Zip ties are god. All hail zip ties. Same with swivel clasps. Between them both you can cage mount anything your heart desires.
Leave bedding in a hot car or freezing conditions for a night. Warehouses get mites. Mites are a dick to deal with. Kill em' all.
Give them a variety of fresh things while they're young. Not always but sometimes I'd get an older gent rescue who had no idea what to do with berries or tomatoes and would refuse them. They learn better what is safe when young. At some point you will have an emergency. Make sure you know where an emergency vet is and that they keep night/weekend hours. Keep funds on hand for that day.
Rats hide pain well. When they age you may need to start pain management if you notice them moving differently even if they don't show their pain blatantly. Just start with low doses and see if they act like their old selves again. Research your breeders. Get recommendations from other rat people. Check and see if there are rat rescues in your area. Also the Humane Society sometimes takes in rodents.
Controversial take: You will encounter people in ratkeeping who say buying feeders is a sin. It's not. Feeder supply will exist whether or not every rat fancier boycotts them. We are far far fewer in number than snake/lizard people. Wherever you got your rats it's valid so long as you give them healthcare, good nutritious food, love, and mental stimulation. A lot of the 'foods to avoid, foods to include' lists are not researched. I've seen lists that ban chocolate. Rats freaking love chocolate they just need to take it easy on fats and sugars but cocoa powder can be a good mix in and can help ratty blood flow. I've seen people ban mango. if you read the study that led to this they gave rats an obscene amount of D-limonene to trigger cancer and small amounts had no side effects at all. Read the studies, look for sources.

You and I agree on the CLSW (cranlime sparkling), haven’t tried the others but I’ll look into them. The normal lime one is also amazing on its own, as well as a mixer for both alcoholic and non alcoholic drinks. Summer must!

I’ve bought their towels, seasonal decor (usually those felt garlands), face lotions and oils. Loved all of them. Usually I only restock on the lotion, hand soap, and lavender laundry bags. Their detergent is nice tho, and I’ve also gotten their wool laundry balls but you really only ever gotta buy them like once. They also usually have pretty cute cards at the checkout! I like their cheaper flowers too, but there’s also a lot of very cute seasonal items they carry that I just can’t justify buying bc of price (have you seen their felt sunflowers? So adorable)

They have cute, weird heirloom hybrid squashes during the fall a lot too that are pretty tasty
Things I’ve gotten from there that I hated? I didn’t like their orange chicken, ANY of the cereals I’ve gotten from there oddly enough, their pecorino Romano only comes grated and mixed iirc and I didn’t care for it. Some of their beers have made me scowl but also those are all random brands. But their wine (yes, even SHAW. But shoutout to coco bon red blend and blue fin moscato RIP!) has never does me wrong…except for any other flavor of the simpler wines canned ones. I can only do the sparkling white and literally no else I've forced to drink it has liked it! some of their salads have done me wrong. the canned chickpeas and dolmas were off. and some of their pricy juice mixes left me a bit disappointed.

This is not an all-inclusive list, there are tons of regulations meant to protect us he has overridden, countless people he has insulted, untold number of norms he has violated and more. At least this is a starting point though of why you should not vote to give him four more years. If he is reelected it will be an incomprehensible disaster for this country.
So read over this short list one more time and go vote for Kamala Harris.
