Basil Orange Shrub (Nonalcoholic Drink)
shitton of basil
1 lb oranges
2 cups sugar
2 cups apple cider vinegar
the bookstore bar that i like has this amazing, lip-smacking, mouth-watering drink that i cannot get enough of, and they keep selling out. So. I begged the bartender for the recipe and turned to my alchemical roots.
Recipe:
peel the oranges and remove the white pith from the rind with the exacting precision of a surgeon - save the peel
remove pith from the orange segments as much as possible
chop up the oranges a little
chop or tear up the basil roughly
shove the oranges, peels, and basil into a large glass container and thoroughly mix with 2 cups of sugar. don't mash it too much
let sit for 2 days+ and juices will be drawn out of the oranges and basil leaves by the sugar (woo chemistry). stir infrequently just to mix it all up
add 2 cups of apple cider vinegar and mix thoroughly
you can either let it sit for even longer now in the fridge, or, when ready to serve:
dilute with water to taste, and *maybe* a pinch of salt
should literally start making you drool, smack your lips, but not grimace with apple cider vinegar harshness. dilute with more water if needed.
I'm told shrubs are great additives for cocktails and other drinks, or great to add club soda to, but honestly this drink by itself is all i want to drink forever.

BELLARA
Continuing the Veilguard cocktail series with a non-alcoholic mocktail for Bellara. Bright and bubbly with the fizzy zing of the Veil and a hint of Arlathan’s wild herbs.
2oz fresh squeezed lemon juice
2.5oz honey syrup*
5-6 basil leaves
2 sprigs rosemary
About 2 oz sparkling water or club soda
Optional: Mint sprig and lemon wedge for garnish
* To make honey syrup: Warm up equal parts honey and water until they fully combine, then let the syrup cool. This can be done in a microwave in short 15-second bursts stirring between each.
Add everything except sparkling water/club soda to a shaker tin
Add ice
Shake well
Strain through a fine mesh strainer into a highball glass filled with fresh ice
Top with sparkling water and gently stir
Optional: garnish with a sprig of mint and a lemon wedge

cloud cider:
-place freeze-dried apple pieces in wine glass
-pour sparkling cider over it
-sprinkle cinnamon-sugar generously over top
-add a little whipped cream
-add a little honey
-stir mixture slightly with a spoon
the whipped cream should inflate from the carbonation, creating a cloudlike mass of cream, apples, cinnamon sugar, and honey. sip as-is or use a spoon to scoop out apples as you sip

Brazilian-Style Lemonade !
Ingredients:
4 unwaxed limes, plus extra slices to serve
150g condensed milk (see Tips)
15 mint leaves, plus extra to serve
Juice 1 lemon
Ice to serve
Method:
Top and tail the limes, then cut each one into 8 wedges. Transfer to a blender with the condensed milk, mint leaves and 1.2 litres water. Pulse about 5 times until the limes have broken down but aren’t fully blended (the longer you blend, the more bitter the drink will taste). Stir in the lemon juice, then set aside for 30 minutes to infuse.
Pour the mixture through a fine sieve into a large jug. To serve, bash some extra mint leaves, then put in a glass with slices of lime and plenty of ice. Pour in the lemonade.
