Smokey Stuffed Squash
The brown rice with smokey gouda, shallots, with carrots and parsley to add some color all made a harmonious stuffing but what to use for the veg to hold this wondrous mixture. I settled on delicata squash as it had the thinnest flesh. Kabocha, Danish, monster zucchini, a small pumpkin, or red knori squash all work well but would take longer to steam. If you have surplus stuffing, bake it in a separate covered casserole to enjoy another day as a side dish with roast chicken...that is if it hasn’t been consumed by refrigerator midnight marauders as this would be tempting even cold.
2 delicata squash*, seeded, steamed
2 c. brown rice, cooked
½ c. shallots, minced – less if that’s your preference says husband
½ c. carrots, grated coarse
¼ c. fresh parsley, chopped fine using kitchen scissors to speed process
1 ½ c. smokey goat gouda, grated coarse
½ t. salt
½ t. black pepper, coarse
¾ c. pine nuts
1 – 15.5 oz. Great Northern beans, drained - optional
1 c. water
Preheat oven to 350 degrees. In a large fry pan, place squash cut side down in 1” of water to steam the squash until tender – cover if possible to speed the process. In a mixing bowl, add brown rice, shallots, carrots, parsley, cheese, salt, pepper, pine nuts, and beans – toss well. Transfer the filling to the squash cavity mounding if necessary. Place in a baking dish, add 1 c. of water to the baking dish. Cover and bake 30 min. until the cheese is melted and the filling is heated through.

CHEF ILONA: Make ahead Ham & Cheese Breakfast Bundles

For most of us breakfast can be one of the most challenging meals during the week. Those two snoozes can mean the difference between having a meal and leaving home with a grumbling tummy.
Challenge yourself to do some meal prep for breakfast & save yourself some time and money that you would have to use up hitting the drive-thru.
My Make Ahead Ham and Cheese Breakfast Bundles are hunger busting and BURSTING with flavour!
The wrapping for these breakfast bundles is phyllo.
Phyllo, also known as filo or fillo, is a type of very thin pastry dough used in various cuisines, particularly in Greek, Middle Eastern, and Balkan cooking. These sheets are layered together, often with butter or oil brushed between them, to create a flaky, crisp texture when baked.
Phyllo is commonly used in dishes like baklava (a sweet dessert with nuts and syrup) and spanakopita (a savory spinach and feta pie). The dough is delicate and requires careful handling, as it dries out quickly once exposed to air.

Let's break down what we are striving to make in simpler terms:
We are looking to make a breakfast burrito using phyllo dough instead of tortillas and filling them with eggs, ham and cheese that is bound together with some cream cheese.

Make Ahead Ham & Cheese Breakfast Bundles
Makes 6, but I recommend at least doubling this recipe for maximum benefits
1 package cream cheese, softened
1 cup whipping cream
1/3 cup shredded Cheddar cheese
2 tablespoons grated Parmesan cheese
1/4 teaspoon salt
2 Tablespoons butter
5 large eggs, lightly beaten
1 package deli-style Black Forest ham, chopped
6 sheets phyllo dough (14x9-inch size)
1/2 cup butter, melted
1/4 cup dry breadcrumbs
Topping
Brush with butter and sprinkle with additional cheese and/or sesame seeds if desired.
Directions
1. In a bowl stir cream cheese and parmesan cheese until well-combined. Stir in cheeses, ham, and salt.
2. In a large nonstick skillet, melt remaining 1 tablespoon butter over medium heat. Add eggs to pan; cook and stir until almost set. Stir in ham and the cheese sauce, heat through. Remove from heat.
3. Preheat oven to 375°. Place 1 sheet of phyllo dough on a work surface. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Brush with melted butter; sprinkle with 2 teaspoons breadcrumbs. Fold phyllo in half lengthwise; brush again with butter. Spoon 1/2 cup filling onto phyllo about 2 in. from a short side. Fold side and edges over filling and roll up. Brush with butter. Repeat with remaining phyllo, butter, breadcrumbs, and filling.
4. Place on a greased baking sheet; brush with butter and sprinkle with cheese and sesame seeds as desired. Bake 10-15 minutes or until golden brown.
5. Pop into a zipper seal bag. Reheat the breakfast bundle in an air fryer at 350 F for about 8-10 minutes, or reheat using a microwave until heated through.

Summer Vegetable White Bean Soup
It's almost here - summer that is! The gardeners are chomping at the bit, checking their tender plant starts for sign of growth. So far, I've planted onions, carrots, celery, dill, parsley...too early to use them in this cooking but in a few weeks - a different story. The dill weed adds a nice pop of flavor to your tried and true bean soup - who would have thought? Try this savory soup - see what you think.
3 T. oil
1 onion, diced
2 carrots, sliced thin
4 stalks celery, sliced thin into crescents
3 T. garlic, minced
2 T. tomato paste - optional
1 t. Italian herb mix
1 t. Hungarian paprika
dash chili flakes - use a light hand!
dash salt
dash pepper
4 c. vegetable broth
2 cans Cannellini beans, drained, mash one can as thickening
2 c. kale, remove/discard stems, cut in ribbons with kitchen scissors
1 T. dill weed
2 T. white wine vinegar
In a deep fry pan, saute onions, carrots, and celery to caramelize. Add garlic, tomato paste, Italian herbs, paprika, chili flakes, salt, pepper, and vegetable broth - stir in well to mix flavors. Add beans, kale, dill weed, and vinegar. Simmer 15 - 20 min. to blend flavors.

I don't know if it is the weird weather, me or the pollen in the air but I have not been in the mood to cook the last few days. These are usually the days that get me in trouble because I either eat an obscene amount of junk food or I default to take out. Both options my body does not love—furthering the lull. I have to thank my past self though for stocking the freezer with easy to reheat or cook food items. Right now I am loving having the freezer stocked with bagel balls, chorizo empanadas, mini corn dogs and potstickers. It doesn't have to be hard just simply double a recipe you are already making and store it away for later! I do have to hate on my past self a little though because I stalled on making freezer cookie dough balls and I'm now kicking myself. Oh what I would give for an ooey gooey chocolate chip cookie right now!!!
