Cilantro Lamb and Broad Bean Soup

On a grey and wet day, this fragrant, brothy and hearty Cilantro Lamb and Broad Bean Soup is a warming hug in a plate, a comforting dish which elevates leftovers into a properly delicious meal! Happy Thursday!
Ingredients (serves 2):
2 heaped teaspoons Capon Fat 
1 teaspoon Graines à Roussir
300 grams/10.5 ounces leftover Roast Lamb 
a small bunch fresh Cilantro 
1 garlic clove, minced
1/2 teaspoon freshly cracked black pepper
2 tablespoons sweet soy sauce
1 1/4 litre/5 cups water
1 cup frozen broad beans
1 tablespoon demerara sugar
Melt Capon Fat in a large pot over medium-high heat.
In a mortar, quickly crush Graines à Roussir with the pestle, and add them to the hot, melted Capon Fat. Fry, a couple of minutes until fragrant.
Meanwhile, with a sharp knife, cut leftover Roast Lamb into thin slices, and add to the pot. Cook well, to brown nicely, a few minutes.
Finely chop half of the Garden Cilantro, and stir into the Lamb, along with minced garlic. Cook, 3 minutes more.
Then, season with black pepper, and deglaze with sweet soy sauce. Stir in 1 litre of the water, and bring to a rolling boil. Cook, stirring often, for about 10 minutes, then reduce heat to low, cover with a lid, a simmer, 2 hours.
Bring a small pot of salted water to the boil. Once boiling, add broad beans, and cook, about 5 minutes. Drain broad beans, and immediately plunge in a bowl of ice water to stop cooking and cool.
Once cooled, peel broad beans.
Once the broth has reduced and is very fragrant, stir in demerara sugar until dissolved.
Add broad beans, and gradually stir in remaining water. Bring to the boil.
Finely chop remaining Garden Cilantro.
Serve Cilantro Lamb and Broad Bean Soup very hot, sprinkled with chopped Cilantro,

Feta cheese and wilted baby spinach are used to garnish the soup. 3 carrots peeled and diced, 3 tablespoons olive oil, 1/4 cup chopped fresh parsley, 6 cups chicken broth, 3 cloves garlic chopped, 1.5 cups canned roma tomatoes with liquid, 1/2 pound baby spinach leaves, 3 stalks celery diced, 4 ounces feta cheese crumbled, 1 onion chopped, salt to taste, 1/2 pound dried great Northern beans sorted and rinsed, 1 teaspoon dried thyme, 1/2 teaspoon dried oregano, fresh ground black pepper, 1.25 pounds ground lamb

ok, so i was in the mood for lamb stew, however I did not have any lamb medallions, just ground lamb meat. so i googled recipes for lamb meatball stew and found this
however i made mine slightly different as i had to use what I had in my pantry
my recipe:
preheat oven to 325
in a large dutch oven, pour in idk about 2-3 tablespoons of olive oil (don't be stingy) on medium heat
then throw in about half an onion roughly chopped and sauté until softened (I use spanish onions)
while sautéing, season generously with salt, pepper, garlic powder, thyme, rosemary, cumin, oregano (it smells so goooooood)
once softened, add a small can of sliced carrots and one small can of mushrooms (add additional seasoning as needed) - i use canned carrots because i hate frozen carrots (they have just an ughhhh texture for me) and I didn't have any fresh carrots
sauté and marry it all together for a few minutes
I also added half can of diced italian seasoned tomatoes (garlic, oregano, basil) - because i had to use up my left overs, but you do you
sauté it a bit more and then add about 1/3 cup of good red wine
let that simmer for a bit to cook off the alcohol
then add about 6-8 cups of beef broth (enough broth to cook meatballs in)
re-season to taste (i added a bit more salt, garlic, & thyme, then added a sprig of fresh oregano from my plant)
add 2 bay leaves
then about 1/3 cup or so of frozen spinach
while that's cooking you make your lamb meatballs
defrosted 1 lb of ground lamb, put in bowl with about 1/4 cup of italian style bread crumbs, salt, pepper, garlic powder, thyme, cumin, shawarma seasoning, oregano
the recipe called for uncooked rice, but I used one of those single serving ready to go rice portions and added about half that container to the meat mixture
i threw the rest of the rice into the soup to cook
While mixing your meat: add 1 egg then mix all your ingredients together by hand and start forming meatballs to drop in your simmering hot soup
once done, put the lid on your dutch oven and throw that bad boy into the oven for about 25 minutes for the meatballs to cook
serve with fresh crusty bread
the soup smells and tastes amazing, absolutely best broth
the only thing i might change going forward is I might bake my meatballs a bit beforehand for a nice crust, then throw them in (i'm italian/sicilian american and grew up baking my meatballs)
this all makes a big pot of soup that could feed 4-6 people, or if it's just your little old self, you can freeze some portions for some other cold day

edit: for anyone who's interested and are able to afford it, I HIGHLY suggest getting some shawarma seasoning in your pantry for cooking lamb or chicken

Guiso Carrero (Argentinian Stew)

It's still all for play in Pool D with Argentina and Japan meeting tomorrow, and the winner of that match going through to the quarter finals! I have no particular favourites, but as the nights get much chillier, a warming Guiso Carrero makes a hearty and comforting dinner! Happy Saturday!
Ingredients (serves 4):
2 tablespoons olive oil
725 grams/ 1.60 pound good quality stewing meat (I used veal osso bucco)
1 onion
1 green Garden Bell Pepper, rinsed
1/3 red hot chili pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon Cayenne Pepper
1 large garlic clove, minced
6 tablespoons red wine vinegar
450 grams/1 pound Garden Red Kuri Squash
4 medium or 8 small Garden Potatoes 
4 Whole Peeled Tomatoes + 1/2 cup of their juice
1 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1 1/2 cup Beef Broth, warmed
a dozen fresh Garden Green Beans 
1 cup egg noodles
Heat olive oil in a large pot over medium-high heat. Add veal osso bucco (or the meat you are using), and brown well, a couple of minutes on each side. Once browned, transfer the meat to a plate; set aside.
Peel and finely chop onion, and stir into the pot. Fry, a couple of minutes, until softening.
Halve and seed Bell Pepper, then chop it and add to the pot. Thinly slice chili pepper, and stir into the pot, as well.
Season with dried oregano and thyme and Cayenne Pepper. Stir in minced garlic, and deglaze with red wine vinegar. Reduce heat to medium.
Peel and seed Red Kuri Squash, and cut it into cubes.
Peel Potatoes and halve (or quarter) them, depending on size.
Add Red Kuri Squash cubes and Potatoes to the pot, stirring well to coat in onion and herbs. Increase heat back to medium-high.
Roughly chop Whole Peeled Tomatoes and stir them, along with their juice into the pot.
Return reserved osso bucco, along with its resting juices, to the pot. Season well with fleur de sel and black pepper. Cover with warmed Beef Broth, and bring to the boil.
Once boiling, reduce heat to medium, cover with a lid, and simmer 45 minutes to an hour.
Rinse Green Beans and top and tail them. Add to the pot and cover with the lid. Cook, about 10 minutes.
Finaly, stir in egg noodles, cover with the lid, and cook 5 minutes more.
Serve Guiso Carrero hot, with a robust red wine like an Argentinian Cabernet or a French Ventoux. Buen provecho!
