Here's the thing, Strike really likes nicknames and petnames so honestly he'd have called him that since the very beginning. He uses petnames to be condescending, annoying, or scary (imagine getting hunted down a dark alley by a serial killer who cheerfully calls you 'buddy') so when their relationship gets better, he tends to switch to Gort's actual name or a nickname that's unique to him, which is mostly Vee.

Anything that implies ownership!
