I spent like 4 months craving caprese salad and then when I finally made one myself (no restaurants in my local area had it) I didn't even really like it. I've come to realise I just don't like mozzarella cheese unless blended with cheddar. I just like tomatoes which is why it sounded so good. Here is a picture of it alongside some chorizo wrapped pork sausages and a glass of mango lassi. This was also my first time ever properly making my own dinner; the sausages were still very nice and I guess I enjoyed the salad overall but the tomatoes and sauce carried.

Monday's lunch was leftover pasta cacio e uova and some eggs with lao gan ma.
Tuesday's breakfast was leftover skillet chicken, broccoli, and ziti. I don't remember if I ate anything else this day but it was probably pico de gallo.
Wednesday's lunch was a grilled cheese with Lao gan ma in it and more leftover skillet chicken, broccoli, and ziti.
Thursday's lunch was chicken biryani and mango lassi. This was my first time having chicken biryani, and i honestly feel like there was too much chicken. Next time I may get biryani with egg instead.
I forgot to take photos on Friday, but I was just trying to finish this leftover skillet chicken, broccoli, and ziti. I also made a grilled cheese.

earlier in the week i wanted to make a version of the wishbone kitchen swamp soup as congee (basically made congee and cooked in blended fresh garlic, ginger, greens, serrano, also of course put peas in it). i would have preferred to make it with bone broth for nutrition but i didn’t have any. then i prepped some protein macaroni to turn it into heartier work lunch, even though i keep working remotely. after my congestion was mostly over the swamp congee started to taste really all-ginger and bitter (it’s literally medicine) so i wanted to make a second stewed vegetable dish to give it the flavors it’s missing and bulk it up with more veg. i used veg remnants (cooked potatoes, leftover canned crushed tomatoes, wilty kale, half a chopped red onion, wrinkly tomatoes) plus peas of course. this turned out delicious. now i’m eating all of these together and it’s Good
also last night i wanted yogurt dessert so i made a mango lassi (also satisfying my ongoing cardamom desires) which i split up into today’s breakfast (with walnuts). second breakfast was chocolate tahini on sesame bread so now i have that too. i’m still generally hungry so i can make anything i want for dinner tonight—i have potatoes, lots of good pasta, beans. veg wise i have to make these brussels but i don’t know if tonight is her night. i also have cucumbers i’m gonna try the marinated cucumbers from whatever that trendy restaurant is they’re all copying

Ft. Some idiot (*cough* me) who doesn’t know anything about alcohol trying their best to make it sound like they do- also tryna make the dishes actually sound okay, but as a human even tho I cook I have no clue what a dragon would like lmao
Hoarfrost
Food: Salt cured seal w/ juniper and seasalt sauce! With fresh herbs and a berry garnish.
Beverage: A slow brewed dark juniper and herb ale, generally served on ice with a cup w/ a salted rim. Sorta a richer twist of a low class beverage he drank before becoming king.
Hyacinth
Food: Slow smoked salted boar roast, with a side of wild rice and roasted root vegetables.
Beverage: (Mudwings have ridiculously high alcohol tolerance- and tend to just drink it because they enjoy the taste) A dark mead made from fermented honey and wildflowers, with herbs! Warm and smoky in flavour.
Lightbringer
Food: Thick noodles with a venison bone and mushroom broth, and small slices of starfruit and braised venison.
Beverage: Oraclefruit (might change the name- glowing fruit found deep within the caves in the nightwing kingdom) juice with leafy greens, chia seeds, and a hint of mint! Served chilled.
Heliconia
Food: Tropical fruits and edible flowers, on a coconut rice seasoned with a hint of cinnamon.
Beverage: Mango, passionfruit, guava, and coconut milk (and yogurt ofc) lassi- with some cinnamon and cardamom, and topped with colourful decorative flowers!
Sidewinder
Food: Crispy grilled scorpion (their are big ones in the Sandwing kingdom-)- with a sweet pepper sauce made with herbs, honey, and roasted peppers.
Beverage: Cactus juice with a hint of lemon juice, and a few mint leaves. Served chilled. A common supplement for water in the Sandwing Kingdom, due to it’s scarcity.
Arowana
Food: Sea urchin meat and beluga caviar, with a broth made from sea plants of some sort (idk). And a touch of citrus juice!
Beverage: Starfruit juice in mineral sparkling water- with some extract from some glowing deep-sea seaweed which makes it glow in the dark. Served chilled.
Ptarmigan
Food: Crispy slow roasted duck seasoned with dried herbs- and with a side of roasted carrots, parsnips, and sweet potatoes!
Beverage: Heavily caffeinated herbal tea, served warm.

we cooked for six hours yesterday!! then had my sister and M + A over for a bday dinner feast!!!! it was such a fun project and everything turned out sooooooo delicious!!! we made:

it was fun to do a BIG cooking session like that as you get so much concentrated practice repeating specific techniques! getting lots of reps in you know!! I am tuckered out this morning and am also experiencing a bit of the post-party, post-drinking, end-of-weekend blues where all the color seems to have drained out of the world and you just feel a little low :( but it’s okay I know it’s all chemical and will pass. I don’t feel soooo good physically but I think we will go for a slow run on the trail soon and then do a snoqualmie falls easy hike adventure later today and then probably just lie around reading/watching movies/eating leftovers tonight. we were going to do a canada road trip today but were too tired to make plans last night before bed and woke up a bit too late to get started. it’s okay! it’s a beautiful clear sunny day out. I feel blue but I can shake it off!

😋 overall: the centering of yak on their menu makes this nepali restaurant stand out. they don't fuck around with their spice combos!!! everything we tried had complex, interesting flavors that made me want to keep eating (except for the desserts, which were mid). I'd come back to try literally everything else on their menu

🍹 mango lassi - tasted slightly more yogurt-y than mango-y, but a strong-enough mango flavor that I didn't complain upon 1st sip. I wouldn't mind getting it again
🍸 cocktail that I forgot the name of - they didn't put much alcohol in this but I forgive them because this was a delicious drink. i'd get it again!
🍹 zero-proof cocktail that had citrus in it - in love with this flavor combo. this was tangier than it was sweet in a way that made every sip interesting. i'd definitely get it again!
🥩 grilled yak (medium rare) - what a delicious cross-section. I can tell that yak is a tough meat, but the sous vide worked to make it tender. they seasoned this meat simply but effectively; it was a tasty bite. just 1 bite. lol between 5 ppl this appetiser portion was gone way too quickly!!
I would get the entree portion next time lmao
🥟 steamed buffalo momo - honestly I don't remember much about this dish but both the momo and the accompanying sauce were delicious. I don't remember the buffalo having a distinct taste tho 🤔 I was kinda afraid that the buffalo would be tough but then again it's steamed meat.
I'd get it again! I love dumplings lol I wanna try their veg ones next
🍛 spicy pork curry - man we fucked around and found out. this dish (labeled VERY SPICY tbf) HURT to eat a few bites in 🥵🥵🥵 I forgot the texture of the pork but I know it wasn't dry. I kept going back to the sauce even though it was spicy as hell (I felt like a masochist)
I wouldn't get this again cos i couldn't take the heat 😭 like you know when a dish is so spicy that you have trouble focusing on the actual flavors? and then the spiciness lingers in your mouth for a LONG TIME even when you eat other dishes? 😭😭😭
🐐🍚 [in the 1st photo] bone-in goat biryani - they are LYING when they say that it's for 2 because it easily fed our table of 5!!!!! they brought out a whole pot and mixed it right in front of us!!! i looooved the bits of burnt rice. the goat wasn't tough, the spice level was bearable (compared to the pork curry at least lmao), and the spices themselves were wonderfully warming in my mouth. we had like 1.5 portions of this as leftovers
I want this again but also I don't because I wanna try everything else on the menu and my stomach real estate is scarce 😔 what a dilemma
🧄🫓 [in the 1st photo] garlic naan - I'm conflicted whether or not i'd consider this dish as having a reasonable portion cos the slices were a good size but each piece was pretty thin. I definitely wanted more after my piece was gone 😆 the garlic was fragrant but I feel like they could've been heavier with it (but also i'm the type who puts 4x the recommended amount of garlic in recipes).
i'm a sucker for garlic naan. I'd get it again!
🍡 gulab jamun - lots of gulab jamun end up being a chore to eat because they're so soaked with their sugar syrup that they're overwhelmingly sweet. that wasn't the case with this dish tho (maybe that was also accomplished by using honey rather than sugar). as for the yogurt- I feel like it didn't add much to the dish other than being a light element to counteract the heaviness of gulab jamun.
I wouldn't get this again tho like it's not that interesting
🍮 kheer - this is prob the most fragrant rice pudding i've ever had. it's kinda lacking in the taste department tho 😔 slightly sour, in a good way, but not much else going on. it was refreshing to eat after the spicy entrees

💲 price: we were definitely very full! I was surprised by how affordable the food was- each entree was less than $20 and each dessert was $4-5. considering that it's is like 1 of the only restaurants in the DMV that spotlights yak, they offered it at a much cheaper price point than I expected.

June 20 - Osaka Day Trip
A couple of my peers in our group had already been to Osaka, and each one of them only came back with glowing reviews. I was pretty excited in the morning as we departed, and upon arriving the city reminded me a bit of Tokyo. Significantly fewer people, but tall buildings and more energy compared to a city like Kyoto. The first thing we did was break for lunch since the train ride was about 2 hours long. I went to probably one of the best curry spots I've been to in Japan, a fusion of Japanese and Indian curry. At this location (which was entirely staffed by one man) the chef offered a Whimiscal Curry of the Day, which I found out was fish so that's what I ordered. It was delicious, and I only wish there was more on the plate. I also ordered a mango lassi which he hand-made in front of us. After that, we regrouped and traveled to Osaka Castle. While we didn't go inside as it has been refurbished with a modern aesthetic the outside was quite beautiful. After we traveled to Ameri Village, which was a burgeoning little district mainly filled with second-hand clothes retailers and well-dressed youth. We didn't stay long as our tour guide Leina was nervous about the location (but I eventually came back later and did some shopping). We then went to this area which looked like a smaller-scale version of Time Square. As we walked down the rode, many many shopping carts and restaurants lined the street. I wasn't very hungry even though Osaka is the food capital of Japan. After doing a good bit of shopping I went to the Botanical Garden exhibit held by TeamLABS. Honestly, it was kind of meh just some pretty lights in a wooded area. Afraid to miss the final train Eliza, Nico and I left the group early to return to the hotel. To finish the night off I went to the onsen down the street alone and had a nice soak.
Academic Reflection
Our reading for Osaka dealt with urban planning. It reinforced the knowledge we had gained from the previous reading on Tokyo’s urban planning such as the effect loose building codes and overall layout had on the cities effect. As I stated above both cities mirrored each other which was a welcomed pace of change compared to the general slowness of Osaka.
What I’ve come to appreciate about Japan’s construction is how each area is evidently suited to the people that live there. This was more so the case in Tokyo where districts were more clearly delineated. However, beyond just making the city walkable and accessible different areas serve particular functions.

1. Mango lassi/mango juice. Look i love mangoes SO much i will demolish anything with mango in it but my heart goes out to mango lassis specifically because a stall in the local farmer's market has them and theyre amazing
2. Hot chocolate. Like the really decadent ones with whipped cream and chocolate sprinkles oughh so tasty.
3. Cranberry ginger ale (OR! The "festive ginger cran" as coined by my sister). The canada dry cranberry ginger ale is rlly good but also if you get some really spicy ginger ale and mix it with cranberry juice and limes with ice cubes it's like the best thing ever i make it all the time
4. HOMEMADE EGGNOG OHHH MY GOD. You've got to shake it and it gets all frothy its to DIE for plus you can make it all year round heck yeah
5. Chocolate milkshakes or any good milkshake really but chocolate is a classic. There was a crappy diner that made the BEST milkshakes near where i live but they closed :(

Monday's lunch was a Reuben and jalapeño poppers
Tuesday's breakfast was an apple w/ Greek yogurt and 2 boiled eggs. For lunch I had jalapeño cream cheese rollers from 7/11. For dinner I had a Maxwell Street Polish from Portillo's.
Wednesday's breakfast was an apple and Greek yogurt. For lunch I had a Reuben at this fancy place. They did it on a pretzel bun and it had garlic butter and shit. It was good but my usual place is better. For dinner I had paneer jalfrezi. I think it was my first time trying it. I enjoyed it a lot, and I think adding sour cream to it made it perfect. I also had mango lassi w/ it.
For breakfast on Thursday I went back to the fancy place and I tried eggs Benedict for the first time. I don't really like runny eggs, but it was a decent meal. I could eat it again, but I would never crave it. 6.5/10 and I'm glad I tried it. For lunch I had potato pelmeni (thank you to Corbin for letting me take a photo of his because I forgot to get a photo of mine). For dinner I tried Baingan Bharta for the first time, and it was really good. Again I think sour cream enhances it, and it goes well w tortilla chips.
For lunch on Friday I got a Chicago polish w/ cheese fries and later at night I had ketchup chips w sour cream as a small snack. The ketchup chips are too realistic to eat a lot of, but they are good.

Nadiya's Blender Beets (making extra sauce for freezing an instant meal some other day is built into the recipe. I usually make six meals worth of the sauce using a mix of canned and real beets.)

Honeycrisp Apple Salad (yes, it is weird. America is weird about salads.)

1 can kidney beans + 1/2 cup diced red onion + half of a bunch of cilantro + 2tbsp olive oil + 1/4 cup red wine vinegar (let chill for two hours to marinate)
Crockpot blueberry cake (yes, this will produce heat, but keeps the oven off and gives your sweet tooth something.)
Gulab Phrini (Rose-flavored rice pudding)
Mango Lassi (a cold, creamy drink)
5 minute grape sorbet
No-bake lemon pie
I also eat a lot of instant mashed potatoes and fried egg sandwiches (toast, fried egg, ketchup) when I feel bad from the heat. Not everything has to be a "meal." Bits and bobs mean you're eating nonetheless.

Koolfi Creamery, 599 MacArthur, San Leandro, CA 94577
Koolfi Creamery was inspired by Indian flavors, but the chief ice cream engineer is also inspired by other global flavors as well. The ice creams are made in house with organic milk or coconut milk (for non-dairy flavors). Choose from scoops, sundaes, floats, and affogatos. There’s also a savory menu of Indian style toasts and samosas and pies on the weekends. And they have hot beverages.
The ice cream flavors are interesting and complex (e.g., jackfruit & coconut, guava with chili, garam masala peach, mango lassi. However, you’re limited to two samples, so I didn’t get to try too many flavors. Also, I was trying to decide on what flavors to sample and she suggested one and gave me a sample before I asked for it – mmm, it was a flavor that I would not have selected – the spicy guava. I don’t really like guava. It was fine but rather sweet.
Gulab jamun sundae ($11.95): two warm gulab jamuns, one scoop of ice cream, pistachios, rose petals. I knew I had to get this because I do love gulab jamuns. It was really good, quite sweet but very Indian dessert-like. I chose the koolfi ice cream which had a strong cardamom/saffron flavor and crushed pistachios adding texture. The gulab jamun were soft and warm. My only gripe is that the scoop of ice cream was small (smaller than usual) and melted quickly. Are all the scoops smaller than average?
Samosas (2 for $6): on the smaller side, crispy shell that wasn’t oily, stuffed with mashed potatoes, peas, and spices. Very tasty, maybe a touch on the saltier side.
The shop is bright and cute with an outdoor patio. The credit card minimum is $10. They also sell prepacked pints.
