You can eat this Buffalo Chickpea Salad with Homemade Ranch for lunch or a light dinner. It's spicy and filling. It tastes great with the buffalo sauce-tossed crispy chickpeas and the homemade ranch dressing cools it down. The different tastes and textures work so well together!

Ingredients: 2 cups chickpeas, drained and rinsed. 1/4 cup buffalo sauce. 4 cups mixed greens e.g., lettuce, spinach. 1/2 cup cherry tomatoes, halved. 1/2 cup cucumber, diced. 1/4 cup red onion, thinly sliced. 1/4 cup blue cheese crumbles. 1/4 cup ranch dressing homemade or store-bought. Salt and pepper, to taste.

Instructions: In a mixing bowl, toss the chickpeas with the buffalo sauce until well coated. Set aside. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Add the buffalo chickpeas on top of the salad mixture. Drizzle the ranch dressing over the salad and chickpeas. Sprinkle blue cheese crumbles over the top. Season with salt and pepper to taste. Toss everything together gently to combine all the ingredients. Serve immediately and enjoy!

Lark – the first patio BCW of the season

"Buffalo Chicken Wrap: Crisp chicken breast, tomato, red onion, with house made ranch wrapped in a flour tortilla”

The most notable part of this dish was the fries & the homemade ranch! While the sauce was also tasty, the chicken wasn’t crisp and cooked kinda wonky. The Lark patio was cute, with string lights in birdcages.

Overall: 6/10

Chicken: over done  

Sauce: more spice than buffalo specific flavor but delish

Chicken to vegetable ratio: ratio was positive, learned to ask for no onions next time as they came on too strong
