It's well worth trying, I make it often since discovering quinoa at my health food store. 1/4 teaspoon salt, 3/4 cup chopped pecans, 3/4 cup chopped celery, 1 tablespoon vegetable oil, 1.5 cups quinoa, 2 tablespoons lemon juice, 1 tablespoon distilled white vinegar, 1 bunch green onions chopped, 2 tablespoons sesame oil, 1/3 cup chopped fresh cilantro, 3.5 cups water, 1 pinch cayenne pepper, 1/2 cup raisins

I use to love this salad from the a food court take away shop before I was diagnosed with Coeliac disease. Whilst it’s a gluten free salad, it’s incredibly high cross contamination risk from other salads beside it in the store & from the staff grabbing salads with the big spoons. So instead, I’ve given it a go at home & it’s worked out really well. I need to find just the right aoli I think, but otherwise yum!
Ingredients if anyone cares.
Brown rice
Quinoa
Baby spinach/rocket mix
Tomatos
Cucumber
Chickpeas
Aoli
Saltanas (I think these are raisins for you non Australian people)
Felafels - yumi brand sesame yellow packet are my favourite
I just guessed how much I’d need, I made like 1.5 cups rice, 1 cup quinoa, 3 tomatoes & 2 cucumber. This made 3+ big servings

I thought I'd use Solarpunk Action Week as an excuse to start reducing our diet's reliance on the top four of the ten staple crops--maize, rice, wheat, potatoes, cassava, soybeans, sweet potatoes, yams, sorghum, and plantain--that humanity is overly reliant upon.
I cooked up some amaranth to go with a lentil-tomato-feta salad and braised collard greens. The little pile of nutty amaranth was viewed initially with skepticism, but the ultimate verdict was two thumbs up.
In the future, I'll try to set aside one or two days a week where we eat amaranth or quinoa instead of rice, wheat, potatoes, or even sweet potatoes as our carb.
