Ingredients: 10 spring roll wrappers. 1 cup cooked shrimp, peeled and deveined. 1 cup cooked chicken breast, thinly sliced. 1 cup cooked vermicelli rice noodles. 1 cup fresh bean sprouts. 1 cup cucumber, julienned. 1/2 cup fresh mint leaves. 1/2 cup fresh cilantro leaves. 1/4 cup hoisin sauce. 1/4 cup peanut butter. 2 tablespoons soy sauce. 2 tablespoons lime juice. 2 cloves garlic, minced. 1 teaspoon sesame oil. Warm water for soaking the wrappers.
Instructions: Prepare all the ingredients and set them aside. In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, lime juice, minced garlic, and sesame oil to make the dipping sauce. Adjust the taste as needed and set it aside. Fill a shallow dish with warm water. Take one spring roll wrapper and dip it into the warm water for about 15 seconds or until it becomes soft and pliable. Be careful not to oversoak it.
