Magic Baked Shrimp in Lemon Butter Sauce Ingredients: 1 pound peeled and deveined shrimp 5 tablespoons unsalted butter, melted 3/4 cup chicken broth 2 tablespoons lemon juice 3 cloves garlic, minced Salt and pepper to taste For the Topping: 3/4 cup panko breadcrumbs 1.5 tablespoons olive oil 1/4 cup shredded Parmesan cheese 1/4 teaspoon salt Directions: Preheat your oven to 430°F (220°C). In a casserole dish, combine the chicken broth and half of the melted butter. Bake for 10 minutes to reduce the liquid. Meanwhile, toss the shrimp with the remaining melted butter, minced garlic, lemon juice, salt, and pepper. Remove the casserole dish from the oven and spread the shrimp mixture evenly across the dish. In a separate bowl, combine the panko breadcrumbs, Parmesan cheese, olive oil, and salt. Sprinkle the breadcrumb mixture evenly over the shrimp and sauce. Bake the shrimp for 12 minutes, or until fully cooked. For extra browning, broil on high for an additional 1-2 minutes. Ingredients: 1/4 cup lime juice. 1/4 cup olive oil. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon chili powder. 1 teaspoon paprika. 1/2 teaspoon onion powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 pound boneless, skinless chicken breasts, sliced into strips. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 onion, sliced.
Instructions: Blend lime juice, olive oil, garlic powder, cumin, chili powder, paprika, onion powder, salt, and black pepper in a small bowl. This makes the marinade. Put the onion, red bell pepper, green bell pepper, and chicken breasts that have been sliced in a large plastic bag that can be closed again and again. Put the vegetables and chicken in a bag. Add the marinade. Seal the bag and toss the food to coat it all. Put the bag in the fridge for at least 30 minutes and up to 4 hours, making sure to turn it every so often so that the flavors mix evenly. Set a big frying pan or skillet over medium-high heat. Take the vegetables and chicken out of the marinade and shake off any extra. Add the vegetables and chicken to the hot skillet or grill pan. Cook for about 5 to 7 minutes, stirring every now and then, until the chicken is fully cooked and the vegetables are crisp and tender. This chicken and vegetable dish is best served hot, either in warm tortillas or over rice. Shredded cheese, sour cream, salsa, avocado slices, and chopped cilantro are all toppings that you can choose to add.
