Apple Carrot Beet Juice
I decided to make some fresh juice tonight, to infuse our family with a boost of fresh vitamins and minerals. Maybe this will help us fight off the nasty cold that's going around here in Cleveland this fall.
Tumblr media
Apple Carrot Beet Juice
*a juicer is necessary for this recipe
Ingredients:
Tumblr media
3 apples-quartered (I use Granny Smith- I love the tartness, but ifyou want sweeter juice you can use Honeycrisp or Fuji apples or whatever your favorite kind is)
4-5 carrots washed and stem ends cut off
1 beet-stem end cut off and cut into quarters
1 lemon or lime-most of the peel sliced off
1 inch of ginger
1 inch of turmeric-optional
Wash and prepare all the ingredients. I core the apples and quarter them to keep the seeds out. I don't peel the carrots, ginger, or turmeric but you definitely can if you wish. For the lemons, unless you enjoy some of the bitterness from the peel cut the ends off so they are flat and then cut off most of the remaining peel.
2. Turn on your juicer-make sure a pitcher or a cup is placed under the spout to catch all the juice! (I only say this because I've almost forgotten to do it myself!)
3. Start dropping your fruits and veggies in the juicer tube. I usually put in a couple pieces of apple with the ginger and turmeric first.
4. Juice the carrots
5. Juice remaining apples
6. Juice the lemon or lime
7. Stir everything together
8. Pour into your favorite cup and enjoy a glass full of delicious vitamins.

Writing Notes: Herbs, Spices & Seasoning
Herbs and spices can add flavor and variety to your food.
Use a little at first, then add more when you are sure you like the flavor.
To substitute dry herbs for fresh, use ¼ teaspoon powder or 1 teaspoon crushed for 1 tablespoon fresh chopped herbs. Some herbs and spices are expensive.
You might want to buy only a few of the less expensive herbs and spices you will use.
Herbs and spices lose flavor and can spoil or get buggy if kept in the cupboard longer than a year.
If you use herbs and spices slowly, buy small containers, or store them in the freezer.
Uses of Herbs, Spices & Seasonings
Allspice - A mixture of cinnamon, nutmeg and cloves. Use in fruit desserts, pumpkin pie, apple cider, cakes, cookies, chicken, beef and fish dishes.
Basil - Tomato and egg dishes, stews, soups and salads
Bay leaves - Tomato dishes, fish and meat dishes
Celery seed - Juices, soups, salads, vegetables, pot roasts, poultry, rolls and biscuits
Chili powder - Chili, bean and rice dishes
Chives - Potato dishes, soups, dips and sauces
Cilantro - Latin American, Indian and Chinese dishes, salsa, stir fries, (Coriander leaves) legume or rice salads, hot cooked rice, grilled chicken or fish, or a dish of ripe tomatoes. Use fresh if possible.
Cinnamon - French toast, fruit and fruit salads, sweet potatoes, pumpkin and squash, puddings and apple desserts, ham or pork chops
Cloves - Whole cloves on ham or pork roast; ground cloves to season pear or apple desserts, beets, beans, tomatoes, squash and sweet potatoes
Coriander seed - Middle Eastern dishes, spice cakes and cookies, soups, roast pork and salad dressing
Cumin - Mexican, Middle Eastern and Indian dishes; beef and lamb, dry bean dishes, marinades, chili and tomato sauces; ingredient in curry powder
Dillweed - Tuna or salmon salad, potato salad, pickles, dips and sauces
Garlic - Mexican, Italian and Oriental dishes and in salad dressings; can be used fresh or dried, minced or powder
Ginger (fresh) - Oriental dishes, marinades for chicken or fish, fruit salad, dressings
Ginger (ground) - Gingerbread, spice cake, pumpkin pie, poultry or meat, soups, stews, stuffing, squash, sweet potatoes
Ground peppers: black, Cayenne & white pepper - Meats, casseroles, vegetables and soups
Italian seasoning - A mixture of marjoram, oregano, basil and rosemary; use in Italian dishes such as spaghetti
Marjoram - Egg and cheese dishes, meats, fish, poultry and vegetables
Mint - Fruit salads and fruit soups, melon, berries, cold fruit beverages, cooked carrots or peas, chilled yogurt soup, lamb, tabbouleh
Mustard - Sauces for meat and fish, in marinades, salad dressings, chutneys, pickles and relishes
Nutmeg - Cooked fruits, pies and desserts, baked items, spinach, sweet potatoes, eggnog and French toast
Onion - Any dish where onion flavor is desired; can be used fresh or dried (minced or powder)
Oregano - Italian dishes, chili, omelets, beef stew, meat loaf, pork and vegetables such as broccoli or tomatoes
Parsley - Meat, soup or vegetable dishes; adds color
Paprika - Stew, chicken, fish, potatoes, rice and hard-cooked eggs
Rosemary - Egg dishes, meats, fish, soups and stews, and vegetables
Thyme - Fish, poultry or meats, in soups or stews, vegetable salads

hello! recently ive had an obsession with drinks, and almost each night ive been making one, ranging from chai latte to orange julius, to milkshakes. but ive been running out - do you happen to have any recipes? nonalcoholic would be preferable, and names are just fine too unless it’s not a wide spread concoction. thank you!!!
How about instead of a recipe, I give you some less-used ingredients and you can DIY some combinations?
Red Bell Pepper Juice! You can sometimes buy it at specialty stores, or you can blend/crush/mash some red bell peppers and strain the juice out yourself. I really like it combined with simple syrup and lime juice for a rich mocktail.
You can also use other vegetable juices in fun little drinks. Carrot juice can be surprisingly sweet. Sugar Beets are named that for a reason. There's a lot of folks down here in the south who just drink sweetcorn juice.
You can get a deeper, smokier flavor by braising your veggies until they char a little, before juicing them.
Seedlip Spice 94, for an herbal, conifer-like flavor. I love this paired with lavender syrup, in any clear soda. It tastes like summer!
Coconut Cream (not coconut water! It's different!) Can be used as a base instead of ice cream, with frozen mango for an ultra-creamy, richly flavored frozen drink. The ratios here will be different, so use your own judgement.
Consider going to a foreign food market, and buying like... random canned fruit you've never heard of. Using lychee syrup is delicious. You can also look around for fruits and drinks you've never tried. There's a whole world out there of packaged drink powders!
Gochujang sweetened with honey and lime, cut with ginger beer is... an experience. Get the ratios right, and it's addictive.
Think about muddling herbs/fruits into your clear soda, which aren't just 'mint and cucumber' - Basil and lime. Dill and apple. Blackberry and Anise.
Had muddled basil and simple syrup in some iced coffee recently. It was intriguing. Good? Not sure, but it compelled me.
Be adventurous and you'll never run out of new flavor combinations to try~

i wrote a book called cooking is terrible, which you can buy on amazon, or at any of the retailers here, or pretty much anywhere you can buy books.
the main post was getting pretty long, and the faq was also pretty long, but people often ask what kinds of recipes are in it, so here are some example recipes!
butter bean salad
Rinse and drain a tin of butter beans. Add crumbled feta and capers. Dress with lemon juice, olive oil, and a little bit of mustard.
Variations: Add quartered marinated artichoke hearts. Add chopped red onion. Add fresh chopped parsley, or fresh or dried thyme. Add sumac to the dressing. (If you do all these things, you have a main course salad that is fancy enough to serve at a party, or to grudgingly take to the work potluck.)
Keeps in the fridge for three to five days.
shitty soup
This soup isn’t actually shitty—it’s actually nice, and I eat it a lot—but we started calling it shitty soup, and the name’s stuck.
Bring enough stock for one person to a boil.
Add about 2 Tbsp of pastina. When the pasta is nearly done (which is only like, two minutes), crack in an egg and turn the pot to a simmer. After about two minutes of simmering, add some sort of veggie—shredded carrots, fresh or frozen spinach, frozen peas—and let it cook for another minute or two. Tada! You’ve made soup.
You can change this up, and don’t have to include all three bits—pasta and a few veggies, or just an egg boiled in stock, is great, and totally a meal. I give all three components mainly so there’s a note about timing. There are a million variations on this—add tomato paste or sesame oil, add other veggies, cook the egg to different degrees of doneness, etc. You can add a little cheese at the end, or a handful of (rinsed) tinned beans, or shreds of previously cooked meat. But at its most basic, broth + something else = soup, which is a meal that you can totally manage to make for yourself in under ten minutes, and then you can smugly tell the internet that you’re sure that what they’re having is nice and all, but you’re having homemade soup. And let’s be honest—most nights, this soup is not good enough to justify that, but who cares. Sometimes you gotta take what you can get.
things you can put on top of cottage cheese or yogurt to make them feel more like an interesting meal
this is just a list of ideas. the things in parentheses are optional extras, though you can use—or not use—whatever you'd like.
Peach or pineapple chunks
Jam
Pumpkin or apple butter
Berries
Cantaloupe/rockmelon
Granola or muesli
Apples, cinnamon, and honey
Literally just honey
Cinnamon sugar
Sunflower seeds + raisins + shredded cheese
Chili powder + black beans + avocado
Chopped tomatoes + garlic (+ spinach) (+ steak seasoning)
Cut-up spinach and chopped green onions (+ tomatoes)
Sundried tomatoes and olives
Chopped cucumber and olives (+ za’atar)
Salsa or hot sauce
Chopped radish, ready cooked beets, or cucumber + dill (+ garlic)
Mix in a bunch of Milo, Nesquick, or other sweetened chocolate powder. (You might want to add a splash of milk.)
Mangos + cardamom (+ honey or other sweetener) (+ pistachios)
Balsamic vinegar (+ strawberries if you wanna get fancy)
Basically any fresh herbs you have + salt
A spoonful of nut butter (+ chocolate)
Dried meat (like pork or mushroom floss, or that weird shredded jerky) + green onion
if you think all this sounds terrible, that's cool—this is not the cookbook for you.
if you're like, 'oh shit, i could make that soup in less than fifteen minutes,' maybe pick up a copy.

Hi idk if you remember me, but I'm the Trader Joe's anon that asked you about ideas for a Rosh Hashanah display in the store (I ended up pushing for honey and apples). I'm going to try and advocate for a Passover display or endcap next month, but I'm not sure what we would put on it. You were super helpful last time, so I thought I could ask you again if that's okay?
Hi nonnie!
typically you'd want matzah to start - unleaved bread is the numbah one passover food. certain companies make chocolate covered ones which is super yummy! (a friend of mine used to make chocolate covered matzah with sprinkles <3) you'll also want wine or kosher grape juice. traditionally the things included on the seder plate are a roasted or boiled egg, roasted lamb shankbone, a bitter herb like horseradish, charoset which is a sweet salad made of apples, nuts, wine & cinnamon, or it can be a chutney of dates, raisins, almonds and oranges, a green vegetable like parsley and another bitter herb most often romaine lettuce, leafy greens from horseradish or a carrot plant, then there's salt water and ofc matzah.
in terms of the meal itself, gefilte fish, beets, regular horseradish, matazah ball soup, chopped liver, ive also had just chicken and fish
hope this helps!

I know many zoos use fruit juice as enrichment/ a reward treat. What kind of juice do apes prefer?
The mental image of a giant orangutan sipping a tiny box of apple juice like a little kid is hilarious-- but what does this enrichment look like in real life?
Every primate has its own favourite fruit juice! Some have real sweet teeth and like classics like apple, some prefer less common ones like carrot or beet, and sometimes gatorade is an acceptable treat. Just like humans, it comes down to personal preference.
Sometimes it does look like giving an orangutan a juice box:
Tumblr media
Iban, a 25-year-old male Sumatran orangutan, using a straw to drink milk from a box at the Ichikawa zoo. A lot of zoos put the juice or other drinks in different containers though so that juice can be obtained in bulk rather than individual servings, and there are no little pieces that can get lost or swallowed. Juice is also frequently watered down so it isn't too sugary. Frozen blocks of watered down juice are popular summer enrichment treats.
There are also bottles for positive enforcement training that allow the primates to open their mouths for the caretakers to squirt juice reward directly into their mouth. This makes it so allowing blood pressure to be taken = a sip of delicious beverage. Apes and monkeys do have a sense of economy however, so you have to make sure the reward is worth it. Some are very cooperative, but some are more shrewd and will basically bargain by refusing to cooperate without a reward they deem acceptable.
So enrichment can look like a lot of things, including juice boxes.

Bragging to myself because I am consistently following through on a food plan that is better for my autoimmune issues and more nutritious in general. Today I had a smoothie with raspberry, banana, apple, orange juice, dates, and beet juice; breakfast hash with mixed greens, sweet potato, roasted red pepper, eggs, and sunflower seeds; mint tea, seltzer w/ cranberry concentrate, ginger kombucha; and now I'm roasting vegetables (butternut squash, green + yellow zucchini, rainbow carrots) to have with mushrooms and tofu. I feel less sluggish :)
