Brunch is a packed meal of Roasted Chicken Rice (烧鸡饭) or more precisely, fried chicken drumstick though everyone in Singapore and Malaysia referred to it as roasted. The other two items are Taiwan sausage and a braised egg together with flavoured (chicken) rice.

Hello all, The_Archmagos here, with a second installment of WAA, where I bring to you some of the finest dishes in Singaporean cuisine!

Today, we've got Hainanese Chicken Rice!

Here's a set of some of the stuff I just had this afternoon! As penance for the pretty poor lighting at the food court I had this at, here's a far more photogenic image:

Hainanese Chicken Rice is, well, just that, but at the same time also so much more. Although the dish was likely brought down by Chinese immigrants from Hainan down to Singapore and Malaysia, these days it is a thoroughly Southeast Asian dish, and probably my personal favourite! The magic lives in the rice, cooked using broth made when the chicken itself was being steamed, making it very savoury. Alongside the chicken, it's commonly served with those three condiments there - garlic chilli sauce, soy sauce, and ginger - as well as cucumbers.

Japanese chicken on rice with egg. A mini meal from the street festival. The chicken is freshly made. Texture is soft and little juicy. Flavour is delicious. Spice is just right. Egg is half-boiled. Yesterday's yummy Thai lunch : kao man gai chicken rice.

This is mum’s pack of Roasted Chicken & Pork Rice (烧鸡烧肉饭). The seller carefully deboned the chicken drumstick and placed it over savoury chicken rice which is white rice cooked with chicken fat, ginger, garlic and chicken broth (the poaching liquid of the chicken).

My Economy Rice (菜饭) has half a piece of fried boneless chicken, stewed egg tofu with cabbage and stir-fry greens over a bed of fluffy steamed white rice.

Note: Though we called it “roasted”, the chicken is actually deep-fried instead but then that is how the people of Malaysia and Singapore called it.
