Mourola Maacher Bati chorchori Aloo ar Peyajkoli diye : This is a typical traditional Bengali cuisine and Mourala fish is a small variety of fish. Its a preparation, wherein the fish is mixed in freshly grinded mustard paste and steamed. This dish goes really well with plain rice. Firstly, the fish has to be cleaned and washed properly. Drained water and marinated it with salt and turmeric powder and kept aside for few minutes. In a bowl, took the marinated fish, finely chopped onions, green chilies mustard paste, garlic paste, kallonji, chopped tomatoes, whole dry red chili, red chilly powder, turmeric powder, coriander powder, salt & sugar to taste and a little lukewarm water. Mixed all the ingredients well. I've used thinly sliced potatoes and chopped Onion Flower Stalks also. Heated a wok. Put 4 tablespoon of mustard oil. Oil is always on the higher side in a chorchori. Pungency of both the mustard oil and mustard seeds paste makes any Bengali style chorchori tastes unique. Added all of the contents of the bowl into the oil. Covered and cooked it till the water dried up. Removed from the fire. Put the contents of the wok into a small Tiffin box and closed the lid tight. Placed the Tiffin box on a large bowl of boiling water, covered and steamed for 15 minutes.
