“Ah, I see. Well, there wasn't a set timeline communicated to me, but it's a good point. We should think about how to manage the transition when the time comes.” Charlotte agrees, her tone professional yet understanding. “I think the two of you will need to chat about it and decide for yourselves when the best time would be for that. I can understand that you want to go on with your own life.”
“Yeah, I guess that makes the most sense.” Natalie concedes, pacing the room in front of the bed as the weight of the impending conversation settles on her shoulders.

“No, that's not why I was asking.” She confirms, emphasising that her inquiry wasn't prompted by the emergence of a romantic interest elsewhere. He runs a hand through his wet hair, his eyes searching hers for some hidden meaning.
“I thought we were doing well. I mean, I've enjoyed having you around, and I thought you felt the same.” Lando admits, a hint of vulnerability in his voice. Natalie sighs, feeling the weight of the conversation.
“It's not about not enjoying our time together, Lando. But we need to consider what happens when this arrangement comes to an end.” She says, her gaze steady.

“Fine. I’m scared. I’m scared we’re going to get too comfortable with this arrangement and we’ll end up getting hurt when management decides to pull the plug.” Natalie admits, her breath shaking as she speaks. “It’ll just be better when we have a day, a date, something so we know. It’s going to be an adjustment going back to normal.”
“Don’t you think we’re past comfortable already? I mean, I am standing in front of you with just a towel in my bedroom. We spend most nights sleeping in the same bed. This is our new normal. It has been for months. What would the old normal even look like?” Lando counters.

“Lily!” Natalie exclaims when she spots Oscar's girlfriend entering the garage. “It's so nice to see you again.”
Natalie quickly embraces Lily in a tight hug. She loved having Lily in the paddock. Lily's university schedule made it difficult for her to attend race weekends, but whenever she had the chance, she came to support Oscar.
“You didn't say Lily was coming this weekend, shame on you.” Natalie comments as the girls approach Lando and Oscar.
“She surprised me last night by knocking on my hotel room door.” Oscar explains, chuckling at Natalie's overreaction.
“We need to have dinner sometime this weekend.” Natalie insists.
“That'd be lovely, thank you.” Lily agrees.
“Yo, Lando. Time to head out!” Lando's race engineer yells, pointing to the car behind the group.
Lando tears his gaze away from Natalie, Oscar, and Lily, turning his attention to the race engineer's call. The racetrack beckons, and with a nod to the group, Lando heads towards his car, ready to focus on the upcoming practice session.
Natalie hands Lando his helmet and walks with him to the car. She watches with a mix of pride and concern as he gets in and gets strapped in. Lando looks up at Natalie with a sparkle in his eyes.
“Be safe out there.” She breathes.
“Of course.” He assures her as he puts on his gloves.
When he's almost ready to be rolled out, Natalie taps his helmet, making him look up at her.
“Make me proud, Norris.” She warns him.
“Always, baby.” He replies with a sneaky wink.

“It was a good day, no?” Natalie asks as they arrive back at their hotel room. “The pace looked really good and this isn’t even a track we usually perform too well at.”
“Yeah, I’m actually quite surprised it went as well as it did.” Lando agrees as he collapses on the bed, sprawling out his limbs.
Natalie heads to the bathroom to change out of her uniform and into something more comfortable. She opts for a pair of shorts and an oversized shirt, seeking the ease and relaxation of casual attire after a long day at the track.
“I was thinking of going to dinner with Lily tomorrow after qualifying, that gives her and Oscar time to catch up.” Natalie speaks from the bathroom. Lando is quiet.
As Natalie peers around the corner, she finds Lando fast asleep in the same position he laid down in. A smile crosses her face, and she decides to put on a pair of jeans instead, opting to go for a walk to avoid disturbing his rest. An hour later, Natalie's phone starts vibrating in her jeans pocket. She pulls it out and answers immediately when she sees it's Lando.
“Hey.” She greets, a soft smile forming on her face.
“Hey.” Lando's voice comes through, filled with a hint of sleepiness. “Where are you?”
"Just went for a walk, needed some fresh air. I’m just down the street, actually.” Natalie replies as the city sounds faintly audible in the background.
“You should've woken me up. I would've joined you.” Lando suggests.
“I didn't want to disturb your sleep.” She chuckles. “How are you feeling?”
“Good, a bit groggy, but good.” He admits. “Want to go for dinner? I just have to change.”
“That sounds lovely. I’ll be up in a few minutes.” She affirms.
“See you soon, love.” He greets her before ending the call.
Natalie can't help but smile at the endearing term. The word 'love' slips from Lando's lips effortlessly, and it warms her heart. She heads back to his apartment, eager for a quiet dinner together after a day filled with the intensity of racing. Upon her return to the apartment, she hears him busy in the bathroom.
“I’m back.” She informs him as she heads to her suitcase to find something else to wear for dinner.
“You don’t perhaps have a little black dress packed in there?” He asks as he leans against the bathroom’s door frame. Natalie turns her head to find him dressed in all black and freshly shaved.
“Not a black one, but a green one?” She answers as she pulls out the silk emerald green dress.
“That’ll work as well. Green looks good on you.” He comments before returning to the bathroom to finish up.
Natalie changes into the emerald green dress, perfecting her look with makeup. She then searches for her black block heels to accompany the outfit. As she finds them and sits at the edge of the bed to put them on, Lando watches her intently from the bathroom's door frame, captivated by every movement.
He loves every second of seeing her cross her smooth, tanned legs over each other to put on her shoes. The quiet and intimate moments shared while getting ready for dinner underscore the depth of their connection.
“You know, when you asked me to go to dinner, I didn’t think it would be this smart.” She comments.
“Felt like treating you.” He responds, his voice carrying a note of sincerity.
As she stands up and straightens her dress that reaches her mid-thigh, the atmosphere takes on a subtly romantic undertone.
“Oh, like a date you mean?” Natalie teases, a playful glint in her eyes.
“Exactly like a date.” Lando agrees, his tone laced with warmth and affection as he takes a step closer to her. The proximity adds an intimate touch to their interaction. “You’re the most beautiful girl in the world.”
“Stop it.” Natalie says shyly, a blush colouring her cheeks.

“Gorgeous.” He whispers in her ear sending shivers down her spine.
“Lando.” She whispers back as she presses her forehead onto his shoulder. His hands keep travelling up and down her back over the silky material covering her body.
“Breathtaking.” He continues before planting a soft kiss on her neck. “Now let’s go to dinner.”
He pulls away from her, grabs her hand and leads her out the door.
Dinner was pleasant. The absence of fans crowding them in the restaurant provided a welcome change. What took Natalie by surprise was the newfound sexual tension between them. Lando had awakened a repressed part of her femininity that she had kept hidden after her last relationship. The intimate atmosphere of the evening seemed to have unlocked a deeper connection between them.

Natalie giggles as Lando unlocks the door, allowing her to enter first and closely following her inside. The apartment, a familiar space, offers a sense of comfort and privacy. Natalie immediately takes off her heels, relishing the feeling of being flat on solid ground once again. Lando watches her with an appreciative gaze as she bends over to pick up her black heels. There's a natural grace to her movements, a fluidity that reveals the ease and comfort she feels in his presence.

He compared his own establishment, Morgans Hotel, to a small boutique, obviously wishing to highlight its exclusivity and set it apart from other hotels that were cropping up everywhere, much like the monolithic department stores.
This is not to say that boutique hotels are a modern invention. There are plenty of documented instances of similar lodging experiences dating back to the 13th century when staging posts were set up for travellers in Mongolia and China.
Here are a few more examples of one-of-a-kind boutique hotels that were popular back in the days:
In 1705, César Ritz opened a boutique hotel at Place Vendôme, which earned him high praise from King Edward VII who called him "king of hoteliers and hotelier to kings". In 1822, Venitian artist Giuseppe Rubino transformed an old palace into a gorgeous hotel and called it "il Rubino". In 1880, the Sagamore Hotel on Lake George (in the state of New York) became the first to provide electricity in each of its guest rooms, creating no small stir among visitors in those times. In 1900, Edouard Niiermans, known as the 'architect of palaces' transformed Emperor Napoléon III's summer residence - Villa "Eugenie - into a beautiful and niche hotel. In 1919, Barcelona inaugurated a stylish hotel that was equipped with hot and cold water in its bathrooms. As you can see, there have been numerous occasions throughout the history of the lodging industry when hoteliers applied creativity and offered top-notch services to stay ahead of the competition and offer something extraordinary to their visitors. Today, the term 'boutique hotel' is used to describe small establishments with around 150 rooms. 5th Edition of KIDS NITE – Around the World
The annual charity Gala KIDS NITE this year under the theme Around the World, is organized by the association Les Enfants de Frankie, presided by Francien Giraudi, at the magnificent Salle des Etoiles of the Sporting Monte-Carlo, on Friday, December 14 at 18:30, under the High Patronage of H.R.H. The Monegasque Day of Red Noses turned into Yellow Smileys takes place every year on December 6, to coincide with Saint Nicolas, patron of children. This year marks the 14th anniversaryof this initiative by the association The Children of Frankie, placed under the High Patronage of H.S.H. Prince Albert II, and the continuous support of EFG Bank Monaco and the Smiley World Limited. This innovative charity fundraiser has not changed its name even if the little red noses have metamorphosed into Smileys!
Monegasques, residents and people working in the region are invited to buy the little ball of yellow mousse to place on their vehicles, antenna, hood or interior windshield, to show the support to children in need, a simple way to practice solidarity. Created and presided by Francien Giraudi, alias Frankie the clown, in 1997, Les Enfants de Frankie has an objective to organize projects and pedagogic activities for ailing and underprivileged youngsters in Monaco and throughout the Provence and French Riviera region, better known as PACA. The association counts with a small but very dedicated staff, the board members, and with the help of more than 150 caring volunteers, plus 350 members, 200 donors and many loyal partners. It has been recognized by the United Nations as an NGO (non-governmental organization) since 2008. They collaborates with hospitals, social services, and more than two hundred institutions that help underprivileged children.
Since its inception the association has assisted more than hundreds of thousands children in need. Even their office building rhymes with their objectives as it is housed in the “Golden Sun” (Le Soleil d’Or), with a team that works long hours so that ideas may turn into projects and ultimately become a reality, bringing smiles to the faces of thousands of suffering children.
Their projects go from organizing the participation of ailing and underprivileged children in sports events like the Monte-Carlo Rolex Masters, AS Monaco football matches, the International Monaco Jumping Competition, the Herculis Athletic competition; or cultural events in the Principality like visits to the Oceanographic Museum, the Exotic Garden, the International TV Festival, as well as playful outings like Easter Egg Hunting and much more. «Game of Thrones», saison 7, épisode 7 : la fable du loup, du dragon et de la lionne
L’été se termine, l’hiver s’abattra bientôt sur la France et paradoxalement, c’est à ce moment-là que Game of Thrones et l’amour à la plage s’arrêtent, pour nous laisser seul pendant quelques mois où on ne pourra plus rouspéter contre la prévisibilité du scénario et refaire l’arbre généalogique des différents personnages. C’est un soulagement et aussi une tristesse : ils nous énervent et ils nous manqueront, un peu comme les plats épicés en vacances qui donnent la turista dans les régions exotiques au sud de la Seine.
Pas de bataille sanglante dans ce dernier épisode. Si vous vouliez voir une belle boucherie dimanche soir, il fallait plutôt regarder Monaco-OM (6-1, ah ouh tcha tcha tcha) où les joueurs phocéens «se sont fait défoncer, même pas avec la vaseline, mais avec le sable de rivière», comme dit le supporteur haut en rougeurs René Malleville. Des éructations qui manquent désormais à GOT devenu souvent trop raisonnable dans son vocabulaire utilisé.
Cet opus final a en effet presque des airs de film français, une réunion de famille entre grands bourgeois où les acteurs ne jouent pas toujours très bien et où tout le monde a couché ensemble. Avec en plus cette obligation décriée de «fan service» des blockbusters américains. Les scénaristes ont achevé la recomposition des équipes pour que les gentils soient tous d’un côté et les méchants de l’autre. Ils ont mis en place des retournements qui, s’ils sont surprenants, sont au final décevants dans notre rapport à ce monde qu’est Westeros.
Prenons Winterfell avant d’aller dans le dur à Port-Réal. Dans cet horrible château humide cerné par la neige, Sansa et Littlefinger complotent dans une sombre pièce, aucun n’étant apparemment au courant des bienfaits de la luminothérapie sur le moral. Le proxénète semble continuer de distiller son poison dans l’esprit de la jeune femme. Il est Machiavel, parfait Tullius Detritus, le semeur de zizanie dans Astérix et Obélix. En poussant la fille de Catelyn à imaginer le pire sur les intentions de sa sœur Arya, sa propre mort, la série nous fait croire qu’il va arriver à son but : diviser les deux sœurs pour mieux régner, voire en supprimer carrément une. Panique et en même temps cela ne nous dérangerait pas complètement : une saison sans Stark qui meurt est toujours un peu décevante.

Un peu plus tard, tout semble aller sur des roulettes pour lui : Littlefinger est François Fillon persuadé de devenir président. Arya est convoqué par Sansa dans la salle du trône, de nombreux hommes en armes sont présents et cela s’annonce tout à fait compliqué pour la Sans-Visage. Lord Baelish sourit dans son coin. Problème : il avait oublié le Canard enchaîné local, celui qui sait tout et qui rapporte, Bran la défonce. Ce n’est ainsi pas Arya qui est accusée mais le seigneur des Eyrié. Surprise, surprise, encore un méchant dont les complots sont dévoilés… Il est accusé d’avoir toujours trahi et tué, notamment sa femme. Il se met à supplier, crie à l’absence de preuves, comme le leader des Républicains et ça ne suffit pas. Trahi par ses hommes rejoignant Sansa comme d’autres ont adhéré à En marche, il est finalement exécuté par l’assassine, avec son propre couteau.
En toute honnêteté, ça me met un petit coup au moral la mort de Peter. Il était l’un des rares sans culotte de la série, un Rastignac prêt à tout pour s’imposer chez les sangs bleus et cela le rendait sympathique, comme, dans un genre un peu plus illuminé, le Haut-Moineau, et le guerrier humoriste Brönn. Il était le moucheron dans la fable de la Fontaine, capable de rendre fou les lions et exactement comme le petit insecte, il est mort dans les toiles d’une araignée au moment où il criait victoire. «Quelle chose par là nous peut être enseignée ? se demanderait le poète. J’en vois deux, dont l’une est qu’entre nos ennemis. Les plus à craindre sont souvent les plus petits. L’autre, qu’aux grands périls tel a pu se soustraire, Qui périt pour la moindre affaire.»
Désormais, en l’absence de monsieur Foote au casting et avec la disparition du l’ancien proxo, il n’y a plus de salaud dans le camp Targaryen si on considère que Theon, Béric et Clegane se sont repentis.
Dans la team Lannister, il reste encore deux mecs sympas : Brönn et Jaime. Pas pour très longtemps. Chacun est venu bien équipé à ce Congrès de Port-Réal où des puissances ennemies doivent s’allier pour affronter le grand ennemi dans la grande guerre pendant le grand hiver (tout est grand dans GOT sauf les distances). Les Immaculés par exemple sont menaçants sous les remparts, ce qui pousse Brönn à se demander pourquoi ils se battent, puisque sans pénis, la vie ne vaut pas le coup d’être vécue et les batailles sont inutiles, les soldats, c’est bien connu ; voulant de l’or pour aller le dépenser au bordel. Brönn est sympathique mais affreusement normatif dans son appréhension des relations sexuelles. Ça, c’est parce qu’il ne connaît pas la langue de Ver Gris.

La série n’étant jamais à court d’une visite guidée pour ses expériences Airbnb, elle nous fait découvrir un nouveau lieu de la capitale, Fossedragon. Ce n’est pas aussi chic qu’un wagon dans la clairière de Rethondes pour discuter d’une trêve mais cette arène en ruine, où étaient enfermés les dragons au point de dépérir, a un certain charme. Clairement, si on compte en plus le chemin bucolique pour y accéder, ça vaut trois Routards.
Ambiance All-Star de NBA, presque tout le monde est là : Cersei, son mestre Qyburn, Euron, Jaime, Theon, Jon Snow, les frères Clegane, Brienne, Podrick, Jorah, Davos. Et évidemment Dany, arrivée un chouïa en retard avec son chauffeur Uber préféré, Drogon. Ça permet des petites retrouvailles et aux chevaliers d’échanger des eye-contact avec Brienne (ils sont tous amoureux d’elle).
Au début, Cerseï est inflexible et ne veut absolument pas négocier. Heureusement, Gregor est venu avec son nouveau meilleur copain : le mort-vivant ramené de l’au-delà du Mur. Le décharné surgit de sa boîte et manque de dévorer la femme incestueuse. Il provoque chez les personnes présentes l’effroi et la stupeur, et alors que Tobe Hooper, maître de l’horreur politique vient de mourir, il nous rappelle qu’il n’y a qu’un combat fondamental : les vivants contre les morts, le bien contre le mal, la gauche contre la droite, chocolatine contre pain au chocolat. Tous se rendent compte à cet instant que leurs querelles sont vaines. En bon présentateur de téléshopping, Jon Snow parfait la séance de cirque face aux reines ménagères en expliquant qu’on peut les tuer avec le feu et le verredragon.

Malheureusement, Jean Neige avait une nouvelle fois laissé son cerveau à Winterfell. La Lannister est prête à accepter une trêve et à se battre aux côtés de la Targaryen à une condition : qu’une fois les «marcheurs» éliminés, le bâtard de Ned Stark ne prenne pas les armes contre elle et reste neutre. Il refuse, arguant qu’il a prêté allégeance à Dany la brillante, car, quand il voit ses yeux, il est amoureux.
Coup de théâtre : Cersei quitte la table des négociations. Les autres en veulent un peu à Snow, lui suggérant qu’il aurait pu dissimuler la vérité, mais, dit-il, «moi, je ne mens jamais gnagnagna, il faut rétablir la confiance en politique gneugneugneu». S’il a réussi à survivre jusque-là à Westeros, on ne le laisserait pas une heure sur un plateau de BFM TV, il se ferait dévorer. Jaime la suit, au grand désespoir de Brienne (elle ne l’a pas matché sur Tinder quand elle pouvait et regrette depuis). La chevalière le supplie de désobéir, de ne plus être fidèle à une Reine mais à l’humanité.
Heureusement, Tyrion n’est pas grand mais il est vaillant. Risquant sa peau, le petit Metternich va discuter seul avec sa sœur, découvre qu’elle est enceinte et que c’est pour ça qu’elle a tout le temps envie de fraises et de tuer les gens. Il réussit à l’apitoyer, semble-t-il, et elle revient, affirmant finalement être prête à envoyer ses troupes au Nord contre les «marcheurs». En voilà une bonne nouvelle. Les convives ne font pas péter le champagne, mais presque.

Ça en redonne du courage à certains. De retour à Peyredragon, Jon Snow arrive à convaincre Theon d’aller sauver Yara. Pour cela, il doit récupérer ses hommes. Comme les Fer-Nés ont une sole à la place de la cervelle, il est obligé de se battre contre le nouveau chef, un officier de sa sœur. Courageusement, il arrive à le vaincre, l’autre ayant oublié que c’était inutile de le frapper dans les parties sensibles depuis les expériences menées par le regretté Ramsay Bolton. Spoiler : dans la saison 8, Theon libère Yara puis meurt, lavé de ses péchés par la pluie de l’île de Pyk.
Jaime n’est pas sur l’eau mais lui aussi a la pêche. Il commence à organiser la montée de son armée vers le Nord avec ses généraux et paraît tout content, un peu comme un général allemand de la Wehrmacht qui serait enfin envoyé dans une opération humanitaire. Ça le change des exécutions sommaires de Tyrell. «Pas si vite, mon joli», lui signifie Cerseï. Elle le traite d’idiot et lui explique qu’il n’a rien compris et qu’ils ne vont bien sur pas aller se battre contre les «marcheurs». Au contraire, elle s’est entendue dans son dos avec Euron pour faire croire qu’il retournait dans les îles alors qu’il est parti chercher des mercenaires payés avec l’argent de la Banque de fer.
On croyait qu’elle avait enfin un cœur mais elle est le Cambadélis de Benoît Hamon, faisant croire qu’il a le soutien du parti alors qu’il n’en est rien. Son frère tombe des nues et refuse de rentrer dans ce complot. Pensant probablement aux paroles de Cersei, il assure qu’il ira au Mur affronter le seul vrai danger, ceux qui sont En marche. Elle le menace, hésite un instant à le faire exécuter par la Montagne et comme avec Tyrion, elle renonce. On le voit s’enfuir à cheval, jetant du haut de la colline un dernier regard sur la ville et celle qu’il a aimée. Puisqu’on imagine mal Brönn se battre longtemps contre son ami, il n’y a plus personne d’un minimum sympathique du côté de Cerseï, on se retrouve désormais dans un bête film de super-héros. Pour Daenerys, le recrutement de Jaime ressemble à celui de Mbappé par le PSG. Pas sûr que ça soit utile sur le terrain mais on prend un bon joueur à la concurrence et ça fait chic.
En attendant, c’est bien beau l’avenir de l’humanité : ce qu’on attend le plus n’est toujours pas arrivé. On a cru à un moment que Daenerys et Jon Snow allaient s’embrasser dans un coin de l’arène de Fossedragon, sans succès. On a eu peur aussi que cela n’arrive pas du tout… A Winterfell, Bran révèle à Sam que Jon n’est pas le fils de Ned mais celui de Lyanna et Rhaegar. Et le Tarly, se souvenant des paroles de sa femme, lui apprend que les deux tourtereaux se sont mariés par amour. La rébellion aurait donc eu lieu pour des fausses raisons et tous les problèmes qu’ils ont aujourd’hui seraient arrivés pour rien… C’est finalement l’histoire de l’Iliade, ce qui n’a pas empêché les Grecs de faire la guerre pendant vingt ans et Ulysse de mettre ensuite autant de temps à rentrer, testant tous les restauroutes des Cyclades. Bran estime qu’il faut absolument le dire à Jean Neige. Connaissant son honneur, il ne voudra plus coucher avec sa tante et on s’inquiète un peu.

Tout le monde est content ? Pas vraiment. Tyrion dans la pénombre observe le bâtard qui ne l’est plus aller dans la chambre désirée et il s’écarte. Triste ? Jaloux ? Au point de faire une bêtise ? Impossible de savoir ce qu’ils se sont dit avec sa sœur. Sait-il que Cersei a décidé de trahir ?
Tant de temps et de signes dans ce papier pour planter le décor comme dirait Julien Gracq à la fin du Rivage des Syrtes au moment où les barbares vont enfin attaquer. Cerseï l’avait bien noté, Daenerys n’a plus que deux dragons. Le troisième, Viserion, du nom du frère mal-aimé, comme par hasard, a fait défection au Nord. Tormund ne le sait pas encore mais il va vivre quelques heures compliquées. En charge de la garde de Fort-Levant, il papote avec Béric quand les Marcheurs surgissent de la forêt pour réclamer dans une même voix monotone une réforme du code du travail de Westeros.
Affronter une armée de morts-vivants avec quelques sauvageons non encartés, ce n’est pas une très bonne nouvelle, mais il n’y aura même pas de combats. Le Roi de la nuit surgit sur son destrier volant et met tout le monde d’accord. Un dragon bleu, c’est la carte lotus noir de Magic ou la meilleure tronçonneuse pour un massacre de Kiloutou, ce n’est pas du jeu. Avec son feu de glace, Visérion découpe littéralement le Mur en deux, qui s’effondrent encore plus vite que celui de Berlin. Tormund est obligé de s’enfuir et on ne sait pas s’il est encore vivant (probablement).

La saison 7 se termine sur l’armée des Morts franchissant sans encombre le Mur et entrant pour la première fois dans le territoire des Sept Couronnes. On lui reprochait de faire du surplace, elle agit enfin : c’est bien. Les scénaristes n’éliminant plus les gentils, on a du mal à y croire mais peut-être peut-on encore espérer une victoire finale des Autres. Ils sont, dans la mythologie, le déluge qui vient submerger les hommes pour les noyer dans leurs fautes et leurs vices, le plus grand de tous étant l’inceste, le premier des interdits dans nos sociétés comme le rappelait l’anthropologue Lévi-Strauss.
C’est parce que Daenerys et Jon Snow ont couché ensemble que l’on va tous mourir : j’ai hâte.

Christophe Cussac, fils de restaurateurs bourguignon, est un chef étoilé au parcours exemplaire d’une gastronomie française sans faille et identitaire. Il a très tôt rencontré son mentor et « père spirituel », le grand Joël Robuchon qu’il côtoiera tout au long de sa carrière pendant plus de 40 ans. Il est le chef exécutif du Métropole depuis 2004, il dirige les cuisines du Yoshi (unique restaurant japonais étoilé de La Côte d’azur depuis 2010), de l’Odyssey by Karl Lagerfeld (cuisine estivale et ensoleillée en bord de piscine) et du Bar & Lobby avec sa carte gourmande salée-sucrée, entre déjeuner mondain et tea-time chic. Le nom « Les Ambassadeurs by Christophe Cussac » est un véritable hommage et une référence à l’histoire du très “Belle-Epoque” Métropole (inauguré en 1886) qui a ouvert son restaurant « Les Ambassadeurs » dans les années 20 et qui deviendra très vite une référence et une adresse emblématique de la « belle société » internationale et locale. De l’excellent en toutes saisons
Le chef Nicolas Mouton est un homme discret. On ne le voit pas dans les cocktails mondains, ni dans les concours gastronomiques en tous genres, ni dans les réunions d’anciens combattants pour défendre des causes aussi improbables que souvent obscures. Il a son étoile Michelin accrochée au restaurant depuis 2011 et il ne court pas comme un dératé après la deuxième. Advienne que pourra et les voies du gros livre rouge demeurent impénétrables. Et c’est tant mieux puisque le mystère est essentiel à la survie de chacun.
La Fourchette du Printemps est un petit restaurant tapi dans une rue plus que calme au bord du boulevard Pereire dans le fond du XVIIème arrondissement. Calme, une voiture de temps en temps, même chose pour le passage, et découvrir la cuisine de Nicolas Mouton se doit d’être un acte volontaire et non improvisé. La récompense est dans l’assiette.
Car l’homme est un chef remarquable et surtout passionnant dans le fond comme dans la forme de ses plats. Originaire du Nord de la France, Dunkerque, il entre en cuisine par hasard et par nécessité de travailler à 15 ans. Il démarre cool mais sérieux avec un petit restaurant de sa région, familial mais exigeant, mais il a Paris en ligne de mire. Ce sera le Crillon puis le Bristol, grosses brigades, des MOF partout, tensions, tête de turc, bye bye… Monaco comme chef privé d’un milliardaire quelconque, puis retour à Paris et enfin l’ouverture avec un complice de son restaurant. Puis, une aventure malheureuse après avoir relancé l’Escargot 1903 à Puteaux où le patron se rapproche plus d’un arnaqueur d’opérette que d’un homme de restauration. Aujourd’hui, ils ouvrent une brasserie chic et gourmande, La Place à Chantilly.
Deux en cuisine, deux en salle et ça roule dans la bonne humeur et le travail bien fait. Accueil parfait, service présent et pro, décor chaud et original, livres, tableaux, tons doux et reposant, confort et ambiance posée.
Une carte courte, avec quatre entrées, cinq plats, et quatre desserts, qui change chaque mois, et divers déjeuners dit « d’affaires » qui sont chacun une affaire. Un amuse-bouche qui donne le ton d’une cuisine soignée, pensée, et superbement réalisée : Cappuccino de châtaignes, foie gras, cacahuètes et marrons grillés, mousse de noix de coco. Chaque étage est délicieux et l’ensemble est original et délicieux.
Très personnelle Soupe à l’oignon, riche et conséquente mais diablement bonne car contenant un foie gras poêlé, une compotée d’oignons, et un croque-monsieur au beaufort, qui remplace agréablement le gruyère râpé habituel.
Un des classiques de la maison est la Raviole « de pomme de terre » farcie de homard, tourteau et hareng, et coulis d’herbes. Ça respire la mer du Nord, tout en fraicheur et en finesse, en un festival de saveurs s’aimant les unes les autres. Un très beau plat.
Le Merlan est présenté en « pomme Darphin » (*) en une sorte d’exploit technique, avec des pommes de terre safranées, une purée d’artichauts et une sauce mousseline. Etonnant, beau, copieux, compliqué mais on s’en sort avec les honneurs.
Le chef est du Nord et il propose le plat régional : le Potchevlech, une terrine à base de lapin, poulet, poitrine fumée et foie gras en gelée, et en contrepoint un cœur de salade romaine à la vinaigrette César (trop marquée par l’anchois),
et superbes pommes Pont Neuf taillées grosses comme il se doit et cuites à la perfection. Puissant, étonnant, déroutant mais une découverte pour ne pas mourir idiot.
Le chef-d’œuvre du chef est sans nul doute, sur cette carte en tout cas, le Suprême de volaille, gratinée à la moelle, et cuit à la perfection, moelleux et pas sec, reposant sur un gratin de macaronis farcis de foie gras et de cèpes, et une démentielle sauce poulette (*). Quel beau plat !
Les desserts sont dans le même esprit. Le Mont-Blanc est presque majestueux mais surtout dans les règles de l’art avec sa meringue fine et légère, crème de marrons et glace vanille.
Le Pamplemousse offre une agréable acidité, pelé à cru, également en sorbet, avec une crème au thé jasmin et un financier à la pistache. Les amateurs de café trouveront le Moka enchanteur avec un entremet et un sorbet tout café. Texture, finesse, et le café dans tous ses états.
Une cuisine au cordeau, précise, mais plein d’imagination bien contrôlée, nette mais réservant toujours des surprises, limpide mais parfois proche du brouillon, du goût, des saveurs à tous les étages de la construction, parfois compliquées et sur le fil du rasoir mais toujours passionnantes. Une cuisine et un chef à connaitre, à découvrir ou à retrouver. Le plaisir est au bout du chemin.

@nespo_restaurant, situé sur l’élégante et ombragée avenue Victor Hugo à Nice est devenue en très peu de temps une véritable succès story d’une adresse incontournable, des plus prisée de la région. Les gourmets , les notables de Nice, de Monaco et de la Riviera se pressent dans une ambiance chic, sereine et décontractée à la fois, au déjeuner pour venir découvrir la cuisine raffinée et ultra gourmande du jeune chef Victorien Duchesne. Le soir, c’est une toute autre atmosphère qui prends place : tamisée, festive, tendance et « new-glam » qui fait vibrer et pétiller les peoples et stars du monde du sport, de la musique ou encore des célébrités internationales, comme Sharon Stone…. L’entrée de Nespo devient alors un crépitant photo call. Sébastien Nespolo, le jeune maître de maison (sa grand-mère et son père ont créé l’institution niçoise Lou Pantail) apporte son savoir-faire et sa dynamique, qu’il a acquis à l’international, notamment chez Nobu Berkeley durant deux années : une expérience haut de gamme, de l’excellence et de l’efficacité, qu’il insuffle désormais dans son propre établissement. Le passionné et sincère chef, Victorien Duchesne, au parcours étoilé (Moulin des Mougin, Bastide de St-Tropez, Chantecler - Jean-Denis Rieubland - L’Aromate… ) propose des assiettes précises franco- méditerranéennes, parfois inspirées d’exotisme. Les produits aux très beaux pedigree de saison et de la région éclatent en bouche de saveurs et se révèlent en allégresse par des twists agrumes ou pointes épicées- piment parfaitement ajustées. C’est terriblement efficace et provoque de belles sensations. Les plats à la lecture ont une fausse impression de déjà vu et de simplicité, ils se révèlent à la dégustation d’un délice gourmand, affûté et vrai.
