Friday, Friday, Friday ...

Seems strange to be in January 2025. A little surreal. The other side of a Christmas that was advertised, advertised, advertised from about July last year.

When little, I loved the build up to Christmas. The slow progress towards the lights going up ... going shopping with my mum for presents for other people and non perishables ... the eventual arrival of family that led to two weeks of all being together.

Not sure what to make of an all year round Christmas. Curious as to what it's like for children now, what with all the different happenings seemingly happening all together. Halloween, Bonfire Night and Christmas all jostling together on the shelves ... then half price Christmas stuff vying for shelf space with Valentines and Easter stuff. Hmmmmm ...

Think I'll go back to just peering through the cracks ... concentrate on the chink of light and let commercialism fade out behind me ...

Two in a row Boeing 737-800s landing crashes after Christmas 2024!

First, Jeju iAir flight 7C2216, from Bangkok, was landing when it skidded off the runway and struck a barrier at Muan International Airport in South Korea, killing at least 85 of the 181 people on board, on December 29, 2024.

Second, KLM flight KL1204, veered off the right side of a runway after landing at Oslo Torp Sandefjord Airport, in Norway, on December 28, 2024. No fatalities.

Before I returned home after Christmas, I made my family some of these potato & cheese croquettes from the leftover mashed potatoes while I was still visiting them.

These are made with the aforementioned leftover mashed potatoes, but also some sweet yellow onions caramelized, plus some black pepper & Italian seasoning, shredded sharp cheddar cheese, & then filled with some extra sharp cheddar, or smoked bacon Gouda, or even farmers cheese with pesto, dredged in flour, then dipped into a thin batter consisting of egg, half & half cream, & a little bit of flour, followed by some black pepper & salt, then covered in Italian bread crumbs, & fried until golden brown.

These turned out really good & my family really liked them, we had enough leftover mashed potatoes to make 20 delicious croquettes! :p

Of course my family already enjoyed some!🤣
