Desserts (Part 2)
No-Stir Cherry Cobbler
1 stick Butter, melted
1 cup Flour
2/3 cup Sugar
2/3 cup Milk
2 tsp Baking powder
2 (15 oz) cans Tart pitted cherries, drain 1 can
1. Preheat oven to 350F. Spray 9x13” baking pan with cooking spray
2. Pour melted butter into prepared pan
3. In a large bowl, mix flour, sugar, milk and baking powder together, then pour the batter into the center of the butter
4. Pour cherries into the center of the batter
5. Pour the sugar into the center of the cherries
5. Bake for 60 minutes. The crust will be a nice brown, with oozing cherries
Pumpkin Bread
3 cups Sugar
2 tsp Baking soda
1/2 tsp Baking powder
1 1/2 tsp Salt
1 tsp Ground cloves
1 tsp Nutmeg
1 tsp Cinnamon
3 1/3 cups Flour
1 cup Canola oil
4 Eggs
1 (15 oz) can (2 cups) pumpkin
1 cup Water
2 cups Pecans
2 1/2 cups Raisins (or Chocolate chips)
1. Preheat oven to 350F. Spray loaf pans with cooking spray
2. In a large bowl, mix sugar, baking soda, baking powder, salt, cloves, nutmeg, cinnamon and flour together
3. In a separate bowl, mix canola oil, eggs, pumpkin and water
4. Pour the wet ingredients into the dry and mix until well combined. Stir in pecans and raisins/chocolate chips
5. Divide batter between 2 large loaf pans (5 1/2 x 9”) or 4 medium loaves (4 x 7 ½”)
6. Bake 80 minutes if using large loaf pans. Bake for 60-70 minutes if using medium pans, until a knife stuck in the center comes out clean
Pumpkin Pie Cake
4 Eggs
1 1/2 cups Sugar
1 (12 oz) can Evaporated milk
1 (15 oz) can Pumpkin
1 Tbsp Cinnamon
1 box Yellow (or Spice) cake mix
1 cup Butter, melted
1 cup Chopped pecans
1. Preheat oven to 350F. Spray 9x13” baking pan with cooking spray
2. Mix eggs, sugar, evaporated milk, pumpkin and cinnamon together, and pour into prepared pan
3. Sprinkle cake mix on top, then drizzle the butter, then cover with the pecans
4. Bake for 1 hour
Rhino Brownies
1 box Devils food cake mix
1 (11 oz) bag Caramels
1/3 cup Butter, melted
1 cup Nuts
1 cup Chocolate chips
2/3 cup Evaporated milk
1. Preheat oven to 350F. Spray 9x13” baking pan with cooking spray
2. In a large bowl, mix the melted butter and 1/3 cup evaporated milk into the dry cake mix. Spread half of this batter evenly on prepared pan
3. Bake for 14 minutes
4. Meanwhile, in a separate bowl, unwrap the caramels and add 1/3 cup evaporated milk Microwave until the caramels are soft and start to melt (about 3-4 minutes at high power). Stir in nuts
5. When the pan is removed from the oven, spread the caramel mixture onto the slightly soft brownie crust
6. Sprinkle in the chocolate chips. Spoon the remaining cake mixture on top
7. Bake for 16 minutes
Rice Krispy Treats
1 (16 oz) bag Mini marshmallows
2 (7 oz) jars Marshmallow creme
10 cups Cereal (or 1 family size box (19.5 oz)) (Rice Krispies, Fruity Pebbles, Cocoa Pebbles, etc)
(15 oz box cereal = 9 cups)
3 Tbsp Butter
2 tsp Vanilla extract
1. Spray 9x13” baking pan with cooking spray
2. In a large bowl, microwave marshmallows, marshmallow creme and butter for 2 minutes, stir, then microwave for 1 minute. Continue heating for small increments and stirring, until smooth
3. Stir in vanilla
4. Pour in cereal and quickly mix to coat completely
5. Press into prepared pan and refrigerate to harden (makes cutting easier)
Seven Layer Cookies
1 stick Butter, melted
1 1/2 cup Crushed graham cracker crumbs
1 1/3 cup Shredded coconut
1 (12 oz) bag Semi-sweet chocolate chips
1 (11 oz) bag Butterscotch chips
1 cup Chopped pecans or walnuts
1 (15 oz) can Sweetened condensed milk
1. Preheat oven to 350F. Spray 9x13” baking pan with cooking spray
2. Pour melted butter into prepared pan
3. Evenly sprinkle prepared pan with graham cracker crumbs. Layer evenly: coconut, then chocolate chips, then butterscotch chips, then nuts. Finish by drizzling the condensed milk
4. Bake for 30 minutes, until the ingredients are melted, and it's lightly brown on top
5. Cool for 15-20 minutes before cutting

Diet nr 5.

Buckwheat golubtsi.
100 gr buckwheat , 100 gr rjazenka, 70 ml. vegetable oil, 2 onions, one small head of cabbage white, dill, petroselinum.
Cook buckwheat porridge, add chopped, fried onion in vegetable oil.Wash,  clean cabbage, add in salted hot water for ten min, put in leafs porridge, and onion, wrap, and give oblong form. Fry slightly, theirs in oil remaining. After put in not deep pan, add rjazenka  , and stew 20-30 min. Sprinkle ready golubtsi with chopping green of dill, and petroselinum.
Pike baked. Without a harmful cholesterol.

Yeasts, flour dilute in hibiscus infusion, adding in boiling milk, mixing, boil 5 min. After remove from a fire, put yolks, oil, mix.  Serve sauce to meat , fish, vegetable dishes.

Salad of carrot, with prunes and dried apricots.
500 gr carrot, 150 gr prunes, 150 gr dried apricots, 50 gr vegetable oil, 5 gr dill seeds, salt by taste.
Carrot shred, prunes and dried apricots wash, add hot water, cool, after filter, chop, add in carrot, add chopped dill seeds, salt.
Kidney beans soup of bone broth.
300 gr ready dish are bone broth 300 gr, carrot 10 gr, kidney beans 70 gr, tomato pasta 5 gr, butter oil 8 gr. Proteins 5.7 gr, fats 6.7 gr, carbohydrates 25.0 gr, energy value 191.1 kcal, use for diets nr 9, 11, 15.

For 350 gr ready dish a first category a 51 gr of beef , oats flakes 20 gr, boiled meat mass 22 gr.

Bytopian Shepherd's Bread

Carrot cake is something that many of us have grown up with one variation or another. Whether it’s a recipe passed down from your grandmother or a slice you pick up at your local coffee shop, this staple has a place in heart and home.
The Bytopian Shepherd's Bread in Heroes’ Feast certainly lives up to the legacy of this treasured treat. Amazingly spiced and not overly sugary, it is sure to be the perfect loaf to serve at breakfast or for dessert!

For the ingredients:
2 cups. all-purpose flour
2 tsp. baking powder
½ tsp. baking soda
2 tsp. ground ginger
1 tsp. ground cinnamon
½ tsp. freshly ground nutmeg
1 tsp. kosher salt
½ cup currants
3 eggs
¾ cup packed light brown sugar
¼ cup unsalted butter, melted and cooled
⅓ cup buttermilk
1 tsp. pure vanilla extract
1 lb. carrots, peeled and coarsely grated (about 3 cups)
½ cup slivered or sliced almonds
* I found that a ½ cup of sliced almonds was way too many. ⅓ cup will most likely be enough.
I use the following conversions in my cooking:
1 cup all-purpose flour = 125 g
1 tsp. baking powder = 4 g
1 tsp. baking soda = 8 g
1 tsp. ground ginger = 2 g
1 tsp. ground cinnamon = 3 g
1 tsp. ground nutmeg = 2 g
1 tsp. kosher salt = 6 g
¾ cup light brown sugar = 150 g
¼ cup butter = 57 g
⅓ cup buttermilk = 80 ml
1 tsp. pure vanilla extract = 5 ml
1 lb carrots = 500 g
½ cup sliced almonds = 46 g
TIP: If you do not have access to currants, you can substitute them for yellow raisins without altering the flavour of the loaf too much.

Above is what the dry ingredients looked like after whisking them together and then stirring in the currants.
TIP: Coating fruits/nuts in a bit of flour, or mixing them into the dry ingredients, before adding them to the wet ingredients allows for an even distribution through the loaf instead of them all sinking to the bottom!

Above is what the progression of the wet ingredients looked like as they were combined.
Picture 1: whisked the eggs and light brown sugar until well combined
Picture 2: whisked in the melted butter until well combined
Picture 3: whisked the buttermilk and vanilla extract until well combined
Picture 4: Stirred in the carrots
The batter will get progressively lighter as more of the wet ingredients are added.
TIP: I would highly recommend using an electric hand mixer to whisk the ingredients together and not just a regular whisk. Although it is possible, it will take a lot more time and energy to achieve the same result!

Above is what the batter looked like when the wet and dry ingredients folded until just combined. This will be a very liquidy batter, so don’t be too alarmed.
Do not overmix the batter! The more you mix the batter, the more the gluten in the flour will develop. If too much gluten develops, you will end up with a dense, rubbery loaf.
TIP: When folding batter, you’re essentially creating a “J” motion with your spatula around the bowl. To fold, first, scrape ~⅕ of the side of the bowl with a flexible spatula. Then, move it towards the middle of the bowl like you’re “folding” the batter. Finally, rotate the mixing bowl by the amount you scraped so that you’re always folding the batter towards you. Above is what the batter looked like topped with almonds before and after cooking.
I found the 55 minute cook time recommended was not enough time. The batter was very wet and although it was edible after 55 minutes, there were areas that were way too undercooked for comfort. On the other hand, it was the perfect amount of time to get the almonds to a nice golden brown.
So, how to keep the loaf cooking while not burning the almonds? First, bake as directed in Heroes’ Feast: 55 minutes on 350°C, turning halfway through. Next, tent a piece of aluminum foil shiny-side in over the pan. This will stop the top of the loaf from cooking while retaining the heat needed to cook the inside. Then, leave the loaf in the oven for another 15 minutes or until a toothpick comes out clean.
TIP: To allow for easy release, cut a piece of parchment paper to fit lengthwise in the pan. This will allow you to lift the loaf out of the pan. See the pics above and below for how it looks.

Cool the loaf as directed in Heroes’ Feast: cool the loaf pan on a wire rack for 15 minutes then remove it from the pan and allow it to cool to room temperature.

Although the cooking time in the book may have been a little bit off, only a small tweak was needed to fix it. Overall, I would give this recipe a 5/5! Everyone in my house loved this loaf and one of my housemates even said it was the best carrot cake they’d ever eaten - which I can’t say I disagree with.
This was the longest recipe so far, but like the potato leek soup, don’t be discouraged! Most of the time is hands-off baking and the taste of this cake alone is worth the time.
For best freshness results, wrap in clingfilm and store on the counter or in the fridge. Lasts up to 7 days when stored in the fridge.

Two of my housemates said the cake on its own was a 4.5/5 and that a cream cheese frosting would make a 5/5. So, below is a delicious yet easy-to-make cream cheese frosting to go with it!

8 ounces full-fat block cream cheese, softened to room temperature
½ cup unsalted butter, softened to room temperature
3 cups confectioners’ sugar, plus an extra ¼ cup if needed
1 teaspoon pure vanilla extract
⅛ tsp. salt
The following conversions are provided for the ingredients:
8 ounces full-fat block cream cheese = 224 g
½ unsalted butter = 115 g
3 cups confectioners’ sugar = 360 g
1 tsp. pure vanilla extract = 5 ml
⅛ tsp. kosher salt = 1 g
NOTE: Be sure you are using a full-fat block of cream cheese! Not low-fat or from a tub. As the recipe points out:
The #1 reason bakers end up with runny frosting is because they’re accidentally using cream cheese spread instead of a block.
If using from a tub, there’s a good chance your frosting will be thin and runny!

If you want your frosting a little thicker, beat in the extra ¼ cup of confectioners’ sugar.

The Arcana- Inspired baking session
I’m reading Asra’s route and there’s this moment when he and MC are at the market and the baker gives them freshly baked bread with cardamom and spices... Then, some time later at his sanctuary he and MC are preparing lunch and he says he has some good cardamom pods and they cold cook rice...
I’ve always liked cardamom, it’s one of my favorite spices. It’s sweet and balsamic, very versatile, good for both sweet and savoury dishes, quite unique. That scent is one a kind. Reminds me of someone... 
So I let myself be inspired by the character and the situation and I came up with these colorful, tasty, dairy-free muffins.
Asra’s Cardamom Muffins
2 eggs
2 large carrots
150gr all purpose flour
70/80 gr sugar or brown sugar
2 tbsp raisins
1 tbsp almonds
7/8 cardamom pods
10 gr baking powder
70 ml seed oil (sunflower or corn)
1/2 tsp ground cinnamon
1/2 tsp nutmeg
Soak the raisins in lukewarm water for at least 20 minutes. Grate the carrots and drain them. Coarsely chop the almonds. Peel the cardamom pods and crush or chop the seeds. They don’t have to be powdered.
In a bowl, whisk the eggs with the sugar until light and fluffy then add flour with a sieve and mix well. Beat in oil little by little. Batter should be creamy and thick, not too runny. Add the carrots, the almonds and the drained raisins. Then add the cardamom, cinnamon and nutmeg. Mix well and the add baking powder. Divide the batter into baking cups. Bake at 180°C for 20 minutes or until a toothpick comes out clean.

Diet nr 5.

25% Whole Grain with Pecans & Raisins

Freshly milled whole grains has taken my bread-making to a whole new, and interesting place. My mom gifted me a Mockmill 100 a while back, and things haven’t been the same since. I started with small bags of whole grains from that aisle in the grocery store, but eventually started buying berries in bulk from small farms. At this point at least 20% of the flour in every loaf is milled right before it goes into the autolyse. I’ve gone as high as 50% whole grain, and I plan to try 100% before long.

In the mean time I really enjoy trying new grains and learning how they influence the texture and flavor of bread. This week I continued experimenting with einkorn, a grain that is apparently popular, but one that I hadn’t tried more than once or twice in the early days of my drift into this hobby. I mixed 3 whole grains into a pecan and raisin loaf and the results were spectacularly delicious!

75% hydration
Inclusions:
15% soaked raisins
20% toasted and chopped pecans
I lowered the hydration a bit compared to my usual 80% which tightened the dough up a bit and have it a strong oven spring. I also picked up a few cool folding tips (thanks @pepperwaldo !) that helped me with my technique. I’m still not quite where I want to be, but I feel like this week got me closer.
