Playing in the powdery snow plus reading a book set in the South and watching Top Chef New Orleans last night reminded me of the sugar-covered, pillowy goodness of beignets. So, of course, I had to make some. I truly love them with a hot cup of tea - coffee for my hubby. Here’s a recipe so you can make your own: Dough - made two hours before frying: - Add 7 g fast action yeast, 1 teaspoon sugar and 3/4 cup lukewarm water to a bowl and stir to dissolve the sugar. Leave for 10 minutes. (I know that you can add this yeast directly to the flour but believe me that mixing it this way first is much better for these beignets. I’ve tried it both ways). - In another bowl, mix 1 egg, 1/2 cup evaporated milk, 1/2 teaspoon salt and 3 tablespoons of softened butter. - Sift 3.5 cups bread flour into a large bowl. - Add the egg mixture to the yeast mixture and then add this to the flour. Bring it together in the bowl with your hands until it forms a dough. - Turn the dough out onto an un-floured surface and knead until smooth and elastic - approximately 5 to 10 minutes. - Place the dough in a lightly oiled bowl that’s large enough to hold double the dough’s size. Cover with lightly oiled cling film. Leave to rise to double it’s size - for about 2 hours. - Once it’s risen sufficiently, take it out of the bowl and roll it to about a 1.5 cm thickness. Cut into equal sized blocks - about 5 cm. - Fry in a deep fryer or pot in hot oil (about 160 degrees Celsius). First on one side then the other. The dough will puff up into little pillows when frying. - Drain on kitchen towel then, while still warm, transfer to a plate and dust liberally with icing sugar. Serve with Café au lait (milky coffee), hot chocolate or tea. Now that Burns Night is over, I’m back to my @leithscooking online lessons. Coincidentally, both my catch up lessons were light, veg meals, which was needed after all that delicious haggis! 😁 For the Chefs Skills class, I made a lemon millet, basil oil and roasted broccoli salad. For the plant-based course, the street food lesson was on an incredible Korean tempeh bulgogi with Ssamjang sauce and a refreshing edamame salsa! I’m not a massive tofu or tempeh fan but in this dish... incredible! We enjoyed our first Burns Night in Scotland 🏴 even though it was just the four of us at home. Thx to the fab food from @tigerlilyedinburgh and @cafesthonore We decided that we’d try our three different menus from two restaurants. I plated it all up and put the plates down the middle of the table and we all dished up smaller helpings of what we felt like trying. It’s something we did when we went out with local friends in Kuwait (no matter the type of how posh the restaurant) and it’s a fun, communal way of eating. I think I will definitely be ordering different At Home kits and eating like this again. I admit that I don’t have much of a clue ito of Burns Night proceedings but @tigerlilyedinburgh provided a guide and links to the address, bagpipe music, etc. Both restaurants were great ito service, catering for our no alcohol request, providing mocktails instead and also super delicious Scottish food. The @cafesthonore menu - sourdough with mackerel pâté, haggis balls with mustard mayo pickles and cress, beef stew with root veg and herb dumplings, almond and orange cake, cheese with oat cakes and chutney, coffee and shortbread 😋 @tigerlilyedinburgh treated us to a veg and meat menu - rosemary foccacia with truffle butter, Cullen skink / pea soufflé, veg / meat haggis wellingtons, Cranachan cheesecake, cheese with oatcakes and chutney and petit fours. Then to top it all off, they gave us the goods to make an awesome brekkie of avo or their own cured salmon and eggs on a baguette. 😋 Reading the Burns poems was fun. I discovered that he write many poems that are recognised the world over. I also did not know that he wrote Auld Land Syne - it’s played on New Years Eve in South Africa too! The best part of the night, though, was sharing laughs with my man and our girls while the dog waited patiently at our feet under the table and the cat snoozed by the fireplace. Burns Night Cooking and Recipe Share Countdown Day 7 ((Recipe links at the end of the post.)) Shortbread, tablet, Scottish tea from @eteaket and Scottish hot chocolate from @choctreescotland bring my 7 Day Burns cooking and recipe shares to an end. I had loads of fun exploring Scottish produce (referred to as the Scottish Larder) and recipes. I challenged myself too and it felt good to learn and accomplish things I didn’t think I could. So, I’m going to do this again next month. I lived in the Middle East for 7 years and will try my hand at some of my favourite dishes from my time there. I’ll share the recipes too! Back to Burns... Scotland gave the world shortbread (thank you Scotland!) and I found two simple and incredible recipes. @ent_cookeryschool has a great shortbread recipe on their blog that uses rice flour. Chef Neil of @cafesthonore uses cornflour in his (just like my mama). Both are buttery morsels of deliciousness. Then, of course, there is the crunchier cousin to fudge - tablet. Incidentally, I discovered that my mom’s “fudge” recipe is actually a tablet recipe. Tablet is crunchier and grainier than its softer, English cousin - fudge. Perhaps because it’s so much like my mom’s recipe, I prefer tablet. In my search for best reviewed recipes, I found a great and easy one on the @sainsburys blog. Confession- I made double batches of both shortbread and tablet so that I have some to give my elderly neighbours and their jars are empty. They’re that good. I’m making more today. Burns Night cooking and recipe countdown day 2. My teen kid: “What’s for dinner?” Me, deadpanned: “Cock-a-Leekie.” My kid: “What is leaking?!!!” Lol 😂 With a name like that I HAD to try out this Scottish, chicken (the cock) and leek (yeah, you got it - the leekie) soup. First, I made the traditional version (swipe for pic) which was wholesome and delicious. I used @felicitycloake ‘s article in @guardian as a guide and added thyme to mine. I made a consommé with my homemade chicken stock, poached the veg in non-alcoholic Chardonnay and poached the chicken in strongly reduced stock and non-alcoholic white wine and crisped up the chicken skin to make crackling. I am so happy to have completed my second @leithscooking course - Nutrition in Practice course with its 20 weeks of nutrition theory theory and healthy cooking. It was such a blast learning to make my own nut milk, vegan cheese and Mayo, kale chips, healthy protein dishes like chicken pho, gluten-free treats, gorgeous rainbow salads, and so much more. I can’t believe that I managed to complete this course and the other 26 week one while my family and I relocated from Kuwait to Edinburgh! I think I was totally nuts but I did it. I’m so so happy.
