Parmesan Dusted Potatoes with butter toasted bread, A.K.A. Fancy Girl Dinner A.K.A. a special occasion Hobbit potato

Potatoes halve em, boil em. Bread (baguette) butter it. Food eat it.
I took a page from Adam Ragusea and seasoned my plate instead of the potatoes.
Salt, pepper, butter, garlic powder (or jarlic). Fresh garlic would be better, but it's girl dinner, not real dinner.
Drain the potatoes. Let em cool for ONE minute. You don't want to melt or shatter your flat bowl (ladies, you know what I'm talking about) . Dump 'em on the plate on top of the seasonings. Mix it around until potatoes are well coated.
Dust with parmesan.
Bam a delicious hobbit meal in under 20 minutes.
I wish I had added some parsley.

#full time studying / volunteering at the refugee center / volunteering at two clinics#literally ab to have a meeting ab shadowing a doctor who’s researching ftd dementia in like 50 minutes#organic chemistry research 5 days a week bc ur bitch is trying to get published#hitting the gym 6 days a week. I’ll probably have to move it to mornings soon#meal prep#trying to snag a lowkey part time job#trying to read 30 minutes before bed#somehow have 2 fit a social life into this#I’m excited bc I finally feel like my time budgeting abilities are being put to the test BUT holy fuck .#studying will be my no 1 priority always. literally catch me doing anki cards in any pocket of free time I have#but I better live up to the challenge of juggling everything else too#ik I got this. and these are all things im choosing to do. not things I have to do#and I love being busy so it’ll be so fun#just had to be in awe for a second bc I used to admire girls who’re like this. and I am officially about to be one of them#p

#sometimes it feels like too much that so many people depend on me#the fact that I got off work then went to pick up a prescription#only to waste 30 mins there because they don’t have enough for the refill#for them to send me to another pharmacy#which I don’t have time to go to I had to go get Beba from daycare#then drop him off at my parents house#then pick up my brother from work#thennnnn go to the other pharmacy#wait 20 minutes for them to get the prescription filled#then go drop off the prescription at home for my husband because it’s for him#then head out to drop off my brother at home#but oh wait he’s hungry and asks me to stop so he can get something real quick to eat#gets himself food doesn’t even ask if I want anything#even tho all I do is make him meals when he comes to my house#but that’s fine#totally fine#even tho I am hungry too

Quick & Easy ❤️
One-Pot Tortellini Lasagna
(30 minute dinner)✨
All you need is one pot, 30 minutes, and you’ll have a delicious lasagna inspired dinner on the table for your family!
Ingredients:
• 20 oz fresh refrigerated tortellini
• 1 lb ground beef
• ½ medium onion, diced
• 4 garlic cloves, minced
• 1 tbsp tomato paste
• 2 tsp avocado oil
• 1 tsp salt (for meat)
• ¼ tsp black pepper (for meat)
For the Sauce:
• 1 (28 oz) can crushed tomatoes
• 1 cup water
• 1 tbsp garlic powder
• 1 tbsp onion powder
• 1 tsp dried oregano
• 1 tsp dried basil
• 1 tsp salt, (or to taste)
• ¼ tsp black pepper
• ¼ tsp red pepper flakes (or to taste)
• ¼ tsp baking soda (to neutralize the acidity of the tomatoes), add a little more if needed
For the Ricotta Topping:
• 1 cup ricotta cheese
• ½ cup shredded mozzarella cheese
• ½ cup grated Parmesan cheese
• 1 tbsp freshly chopped parsley
• ½ tsp garlic salt (or to taste)
• ¼ tsp black pepper
For the Final Dish:
• 1 cup shredded mozzarella cheese
• 1/4 grated Parmesan cheese
Extra:
• Fresh parsley, chopped
Instructions:
1. Heat 2 tsp avocado oil in a large oven-safe deep skillet over medium heat. Add diced onion and sauté for 3 minutes. Stir in minced garlic and cook for 1 minute.
2. Add ground beef, season with 1 tsp salt and ¼ tsp black pepper, and cook 5 minutes. Stir in tomato paste and cook for 2 minutes.
3. Add crushed tomatoes, garlic powder, onion powder, oregano, basil, salt, black pepper, and red pepper flakes. Sprinkle in ¼ tsp baking soda to neutralize the acidity of the tomatoes. Simmer for 6-8 minutes.
4. Pour in 1 cup water, bring to a simmer, then add tortellini. Stir, cover, and cook for 4-5 minutes, or until tender.
5. Sprinkle on 1 cup shredded mozzarella and ¼ cup Parmesan. Drop dollops of ricotta mixture (ricotta, mozzarella, Parmesan, parsley, garlic salt, and black pepper) on top.
6. Broil, uncovered, for 3-4 minutes, until bubbly and golden. Garnish with parsley, serve hot and enjoy!
