•1 1/4 cups of sugar

•2 eggs

•1 teaspoon salt

•1 teaspoon instant espresso (optional but recommend)

(Optional topping:

•8 oz of room temp cream cheese

• 1/4 cup of sugar

•1 room temp egg

Mix until fully combined and top. I don't do anything fancy but if it so suites you, save about 1/4-1/3 cup of batter and spoon small amounts on top, using a tooth pick to make swirls. Cook temp and time is not affected.)

°Heat oven to 350f

°Line a 8 in x 8 in (20 cm x 20 cm) baking dish with parchment paper. 9 x 9 (22 x 22) works as well.

°Chop the chocolate into chunks if using a bar. Put it into the microwave and melt in 15-20 second intervals

°In a large bowl, mix the butter and sugar, then beat in the eggs and vanilla until light and fluffier.

°Wisk in the melted chocolate. Make sure it's not too hot or the eggs will cook, then carefully mix in the flour, coco, salt, and espresso powder, making sure to not overmix. Spoon into baking dish.

°Add the cream cheese topping here if so desired, optionally, you can also top with a bit more salt.

°Bake on the middle rack. 20-25 minutes depending on how fudgey you like your brownies, then cool completely.

°If you want clean cuts, put it in the fridge/freezer for about an hour, then cut.

°Serve however the fuck you want.

(it can keep for about two months in the freezer, just wrap it in parchment and put it in a zipper bag. Yes, you can add more chocolate or nuts or whatever to the batter before it bakes, I just don't. It does reheat decently well in a microwave.)
