something people just don’t think about is how often chronically ill and disabled people just don’t have access to good food. not healthy food, good food; well made, tasty meals that don’t come from a jar or a freezer. how many of us are housebound or can’t drive? delivery services only offer within certain distances, if you live outside a city they aren’t an option. many people don’t have the energy or ability to cook for themselves if they have the skill to begin with. many certainly don’t have the ability to learn how. it’s something that goes completely unnoticed, just the opportunity to have a good meal and how much that wears you down

i just finished making a pot of chili and my dear ex-wife @fallout-lou-begas made a pot of chili last week and all this chili reminds me of a conversation we had when we were still living together. i like to eat my chili with a peanut butter sandwich; lou usually makes corn bread to go with hers and thought my pairing was unusual. so now i wanna know:
when i say chili i mean a bog-standard beef and/or bean chili with peppers and onions and tomatoes, seasoned with chili powder and cumin and whatnot

I'm not bad at cooking but I also hate it because I hate stove and onions hurt my eyes as though I squirted shampoo in them and I'm easily overstimulated and have terrible sense of time and I get scared. But otherwise I love cooking

Ingredients: - 3 eggs - 4 cups chicken stock or broth - 1 tablespoon reduced sodium soy sauce - 1 teaspoon ground ginger - 1/4 tsp EACH garlic powder, onion powder - 1/8 teaspoon pepper - pinch red pepper flakes (optional) - 2 tablespoons cornstarch - 1/2 teaspoon toasted sesame oil - 1/4 cup chopped green onions plus more for garnish - Additional Salt and pepper to taste Directions: 1. Whisk eggs together in a liquid measuring cup. Set aside. 2. Whisk together all the ingredients except eggs and green onions in a medium saucepan until smooth (OFF HEAT). 3. Bring to a boil, stirring occasionally. Reduce to a simmer and stir the stock in one direction with a fork to create a "whirlpool" effect. 4. Slowly drizzle the whisked eggs into the stock while continuing to stir the soup in the same direction. The eggs will spread and feather into ribbons. 5. Remove from heat and stir in green onions. Taste (careful it will be hot!) and season with additional salt and pepper to taste. Garnish individual servings with additional sesame oil if desired (careful, a little goes a long way!). Sorry but I’m not making no soup in 30 minutes, why are you giving me 5 minutes of caramelising the onions then another 5 with the veg and then 15 minutes of cooking it. That shit’s still raw!!!
Good soup needs to be on the stove an hour minimum!

I fucking hate comment section under any "when I don't feel like cooking/ easy recipe" videos on YouTube cause fucking uuuughhhhhhh
We get that you hate cooking, eat your doshirak and leave us in peace I love instant noodles for me too from time to time
How people don't understand that there are A LOT of people who like to cook and eat homemade food. They look at the recipe that takes 15 minutes and start crying in the comments "It's tooooo loooooong you're still cooking...." I'm like damn.... She literally boiled a f pasta, cut some veggies and put them in the oven. What exactly is hard in that recipe???

Since it is one of those days where I am unable to cook. I thought I would share one of my favorite recipes, not vintage exactly, but a family recipe, one of my moms. Unless is the 90s vintage now?
Anyway this one freezes well and makes idk 4 or 5 servings.
I like to prep a few things ahead on the days I feel well to have on days like today.
Enchilada Soup
1 can cream of chicken
2 cans of chicken broth, I used one bigger container of low sodium
1 can cream corn
1 big can of green enchilada sauce
1 can green chiles
1 can of diced chicken, or a small amount of rotisserie etc.
Half an onion sliced or diced, idc
Bring to a boil then add:
4 or 5 flour tortillas cut with scissors into tiny strips and boil 5 minutes.
Add lots of cheddar cheese
Sour cream if you like, but I didn't use any last time.
It's like a spicier chicken noodle, comfort food, not healthy.

BIG recommend to the king arthur baking scone mixes!!!!! i've now tried the lemon ginger and the apple cinnamon ones and they have both been so good so delicious such a delight i'm just going to wholeheartedly recommend all the mixes. all of them. please pick one and bake them!!!!!!
