My (Gluten-Free, Vegan) Christmas Pudding
Lovingly adjusted and adapted from a Freee by Doves Farm recipe to be found here: https://www.dovesfarm.co.uk/recipes/christmas-pudding Have I mentioned that I despise scrolling down half a mile to find recipes on food blogs? Find my post-amble below.
Equipment
2 mixing bowls
1 litre / 2 pint pyrex or heat-resistant plastic pudding basin
Tin foil
Greaseproof paper
Large saucepan/steamer
Tea towel
Saucer
Ingredients
100g gluten free white bread flour
100g soft brown sugar (50g light muscovado, 50g dark muscovado)
50g toasted flaked almonds
Pinch of salt (pink himalayan if you’ve got it)
Spice mix: 
1 tsp mixed spice
1/4 tsp ground nutmeg
1/2 tsp ground cinnamon
1/4 tsp ground cloves
525g dried fruit, my choices are:
50g chopped dates
175g raisins
125g sultanas
50g dried cherries
50g dried blueberries
75g dried cranberries
50g mixed peel (contains sulphites unfortunately)
1 orange, rind and juice
1 lemon, rind and juice
50g vegan baking fat (I’ve used Trex and Stork successfully, you could use coconut oil, soft spread like Vitalite/Pure is not suitable)
2 1/2 tbsp brandy or rum + 3 tbsp to serve (I use Remy Martin brandy)
Method
Put the flour, sugar, spices and salt into a bowl and rub together with fingers to break up any lumps of sugar. Add the toasted flaked almonds and stir to combine.
Into a large mixing bowl, add the dates, raisins, sultanas, cherries, blueberries, cranberries and mixed peel. Grate the orange and lemon zest into the bowl then add the juice of both. Add the brandy. Put into an airtight tub and leave to soak, shaking occasionally to stir, for at least 2 hours or overnight.
Grate the baking fat if solid, and rub in to the mix with fingers. 
Add the prepared flour mix into the soaked fruit and mix well. 
Cut two circles of greaseproof or parchment paper the size of the top of the pudding basin. Grease the bowl with oil/baking fat.
Tip the pudding mix into the pudding basin, it should be 2/3rds full, pushing it down and smoothing the top. Cover the top with the circles of greaseproof paper, then with 2 layers of foil, tucking in well around the edges, and secure with an elastic band or string.
If you’re not using a steamer: place a clean tea towel, then an upturned saucer into the base of a deep saucepan. Sit the pudding on top of the saucer, and carefully pour in boiling water to come halfway up the bowl. Put the lid on and steam for 8 hours, topping up with water as needed – always keep it halfway up the basin.
Carefully remove the pudding and cool without removing the foil or greaseproof paper. Store the pudding until required, up to two months.
Serving
To steam:
Remove and refresh the foil and paper layers. Place the pudding basin in a steamer (or deep saucepan on top of a saucer), fill with water until it is half way up basin and steam for 2 hours. 
To microwave:
Remove the foil and paper, cover the pudding basin with cling film, and pierce a few holes in the top. Microwave on full power for 4 minutes, leave to stand for 1 minute then microwave on full power for further 3 minutes, check that it is heated through.
To serve:
Remove all coverings, place a plate on top of the pudding basin and carefully invert the pudding onto a heatproof plate. Measure the brandy or rum into a small saucepan and warm it over gentle heat without boiling. Remove the pan from the heat, tilt it sideways and carefully ignite the fumes with a match or lighter. Immediately pour the flaming booze over the pudding. While it’s still on fire, tilt the plate and spoon any alcohol back over the pudding.

You can switch around the dried fruits that you use. I chose this combination of fruits as a “modern twist” on the classic. I recommend keeping the chopped dates in though, because they make it sweet and sticky. You could play around with the types of sugar too, go for all light or all dark muscovado if you like. If you’re really energetic you could make your own candied peel, which I’m sure is nicer than shop-bought.
The one real woe of this recipe is that it’s expensive to purchase all this dried fruit. Double if you buy organic. The remaining dried fruit will come in handy for mincemeat or chutney. Shop-bought puddings and mincemeat may have the economy of scale, but homemade really knocks them all off the shelf!

Take it slowly

Eat something green at every meal (think kale, spinach, watercress) as the green veggie family can really help to keep your liver ticking over. Plus, greens can help regulate your body’s natural pH and may even help ward off disease.

THE 3-DAY SUPER CLEANSE

Super greens juice
Juice the following ingredients:
Chunk of cucumber
1 pear
Handful of spinach

Juice of ½ a lemon
½tsp grated ginger
MID-MORNING
Coconut delight smoothie
Blitz together:
1tbsp chia seeds
250ml coconut milk
Handful raspberries
1 banana
LUNCH
Pea and mint soup
Blitz together:
Sweat 1 onion, 1 celery stick and 1 carrot. Pour in 300ml vegetable stock, 200g garden peas and a handful of fresh mint. Add 1tbsp low-fat crème fraîche and blitz until smooth.
DINNER
Baked cod and steamed vegetables
Scatter ½tsp ground cinnamon and ½tsp ground nutmeg on 1 cod fillet. Add the juice of half a lemon, wrap in foil and bake in the oven. Serve with unlimited steamed mangetout and kale.
DAY 2
BREAKFAST
Cup of hot water and lemon upon rising
Balancing greens juice
Juice the following ingredients:
1 apple
1 Cos lettuce
Half a head of broccoli
Handful of kale
MID-MORNING
Nutty goodness smoothie
Blitz together:
1tbsp cashew nuts
250ml almond milk
Handful strawberries
Handful blueberries
LUNCH
Super-spicy roasted squash soup
Blitz together:
1 red onion, 1 garlic clove, 170g butternut squash, 1 large tomato. Place on a baking tray. Scatter with ½tsp turmeric, ½tsp cumin seeds, 1½tsp coriander seeds and ½tsp mustard seeds. Roast in the oven. Place the ingredients in a blender with 300ml veg stock and blitz until smooth.  
DINNER
Tofu stir-fry
100g tofu cooked in 1 tsp coconut oil. Add 1 red onion, 1 garlic clove, ½tsp grated ginger, 100g baby corn, 100g mangetout, 100g garden peas and 1 red pepper. Add 1tbsp reduced-salt soya sauce and a handful of coriander. Serve on a bed of steamed, grated cauliflower.
DAY 3
BREAKFAST
Cup of hot water and lemon upon rising
Revitalising greens juice
Juice the following ingredients:
1 small avocado
Juice of 1 orange
Juice of ½ a lemon
Chunk of cucumber
Handful of watercress
Handful of spinach
MID-MORNING
Tropical purity smoothie
Blitz together:
1tbsp mixed nuts
250ml coconut milk
Handful pineapple chunks
Handful strawberries
LUNCH
Carrot and coriander soup Blitz together:
Sweat 1 onion. Add half a sweet potato, 3 carrots, 1 large tomato and 300ml vegetable stock. Boil until soft and add a handful of coriander to finish. Blitz until smooth.
DINNER
Soya and ginger salmon with roasted veggies
Top 1 fillet of salmon with 1tbsp reduced-salt soya sauce and ¼tsp grated ginger and bake in the oven. Serve with a side of roasted tomatoes, mixed peppers and steamed spinach.

With delectable flavours and fragrant spices, Indian cuisine is certainly popular around the world. In addition to its wide variety of rich flavours, a traditional Indian diet also boasts of a wide variety of nutrients in a balanced quantity. However, on the flip side, obesity and diabetes still continue to be a significant public health concern for India.
According to the medical journal Lancet, the burden of diabetes is rapidly increasing in India and there is an estimated 72.96 million cases of diabetes in the adult population of the country as of now. Infact, India has been deemed as the world’s capital of diabetes. So, for a nation that boasts of lentils, fresh and fruits and vegetables as an integral part of its diet, where exactly did we go wrong?
Is our growing inclination towards western food (pizza, burger, fries etc.) to be blamed or is there more to the Indian diet? We connected with a renowned cardiologist and famous author Dr Aseem Malhotra and asked him to shed light on the same. In this riveting conversation, Dr Aseem touched upon several eye-opening facts and misconceptions about the Indian diet that continue to plague our minds even today. Here is an excerpt from the conversation:
The role of comorbidity and death from COVID-19 Dr Aseem emphasized on the fact that even as the novel coronavirus continues to wreak havoc across the globe, it is the people with underlying chronic metabolic diseases including high blood pressure, obesity and type 2 diabetes which are affected the most. India has the highest prevalence of type 2 diabetes in the world, which on an average reduced the life expectancy by up to 10 years.
The relationship between Indians and chronic metabolic syndrome In India, 43 per cent of people with normal BMI (Body Mass Index) are metabolically unhealthy. This means that a huge proportion of people are living in this illusion of protection thinking that they are not overweight or unhealthy.
Dr Aseem spoke at length about metabolic syndrome and how 1 in 3 adults in India are suffering from this syndrome. He defined metabolic health using these 5 parameters:
Your blood pressure should be ideally less than 120 over 80 mm Hg
You should not have pre-diabetes or type 2 diabetes
Your triglyceride levels should be less than 1.7 millimoles per litre
Your good cholesterol (HDL) should be greater than 1 millimoles per litre.
If you are a man your waist circumference should be less than 90 cms and for a woman, it should be less than 85 cms.
This essentially means that even if your BMI is ideal, if you have excess fat around your body or any of the above-mentioned parameters, you are probably not as healthy as you may think.
Extra sugar, fried snacks and refined carbohydrates: Everything wrong with the Indian diet Quite appropriately, when talking about the word ”diet”, Dr Aseem linked it to its greek origin ‘diaita’, which essentially means ‘lifestyle’. Surprisingly, 70 per cent of Indian diet calories come from consuming carbohydrates and most of them are not necessarily from the best quality of carbohydrates. These poor quality carbohydrates include a lot of sugar, flour-based products, snacks loaded with starch, loaves of bread, and white rice. Another shocking finding shared by Dr Aseem is that an average Indian consumes at least 15 teaspoons sugar in the form fruit juices, sweets, sugar-laden drinks and snacks. He underlined the fact that while one does not need any amount of sugar to stay healthy, the World Health Organization has drawn the upper limit on five teaspoons of sugar per day. This essentially means, Indians are probably consuming 3-4 times of sugar then they should.
Your diet can reverse type-2 diabetes Contrary to popular beliefs, Dr Aseem explained that it is never too late to change your dietary habits as it can help you reverse type 2 habits within weeks. This can be done by carefully monitoring your diet and changing the needful. For the uninitiated, Dr Aseem has been working with type 2 diabetes patients and empowering them to reverse the same with the help of lifestyle and dietary changes.
While he did not advise the patients to instantly stop taking the medications, he did recommend dietary changes for type-2 diabetes patients. He stated that medications and insulin for type-2 diabetes do not work on increasing the lifespan or reducing the chances of a heart attack and they also come with their side-effects.
When you work on reversing type-2 diabetes, you not only take away the immeasurable suffering of the patients and the impact this disease has on their nerves, eyes, kidneys etc but it also adds years to their lives, he added. Since the patients of type 2 diabetes tend to have a particular sensitivity to the sugars and refined carbohydrates, when they begin to cut down the sugar, rice, bread, potatoes etc, their blood glucose level may start to go down in a span of few weeks.
As a result, they may end up reducing the medication dosage when advised by their doctor. He pointed out that type 2 diabetes is a condition of carbohydrates intolerance, so shunning the glucose and carbohydrate-laden products like rice, breads, pasta, sugar etc can do wonders for the patient. Additionally, junk and processed food items should be replaced with whole foods including fresh fruits and vegetables. He also said that fruit juices should be avoided as they are full of sugar and whole fruits should be added to the diet instead.
The relationship between the Keto diet and managing type-2 diabetes The cardiologist underlined that whole food-based Keto diet can be very beneficial for those battling type-2 diabetes. On the other hand low-sugar, low refined carbohydrate, a Mediterranean inspired diet with lots of vegetables or unprocessed meat like lamb, chicken and fish can also be a part of a healthy diet.
He also busted the prevalent myth of eating as frequently as every two hours and said that there is no legitimate need for the majority of the people to eat every two hours, no matter what is being propagated on the internet.
The goodness of Intermittent diet When you cut down the sugar and starch in the form of junk food, snacks and packaged food items, you actually eat to fullness and don’t feel as hungry as before. Speaking about Intermittent diet, Dr Aseem agreed that there are emerging pieces of evidence which back the claim that it can be good for your metabolic health. He also underlined different methods of doing the intermittent diet and explained that for two or three times a week, he fasts for 16 hours a day and eats in a window between 12 to 8 pm.
The lack of protein in the average Indian diet As per a statement by the Indian Dietetic Association, a whopping 84 per cent of Indians are protein deficient! This is not surprising considering the fact that meat inadvertently remains one of the best sources of protein, which doesn’t find its place in an average Indian thali. He pointed out that protein deficiency poses a big threat to the elderlies as they lose muscle mass and strength with age.
He listed down some of the best sources of protein which included eggs, paneer (cottage cheese), lentils etc and pointed out that Indians need to consume more of these protein-rich products in their diet instead of flour-based products and rice. Eggs remain one of the best sources of protein, including the yolk. The cardiologist reiterated the fact that the cholesterol present in egg yolks does not raise our cholesterol and will not give you a heart attack.
Move over vegetable oils, it is time to bring back desi ghee The vegetable seed oils used for cooking in the Indian households including the sunflower oil, canola and soybean oil are not exactly healthy. Dr Aseem suggests swapping them with desi ghee, coconut oil and extra virgin oil. Since these oils remain quite stable even after they are heated up, they make for a healthier alternative to the vegetable oils that become toxic after heating.
He also reiterated that the adoption of the modern western diet through these fast food joints is actually increasing the consumption of toxic food items and should be avoided as much as possible.
Why you need to quit smoking and start walking It is important to note that the reduction in smoking remains one of the biggest reasons for lowering the death rate from heart disease in the UK and US. Infact, he points out that quitting smoking can be more powerful than all the medications given for reducing the risk of a future heart attack combined together.
Dr Aseem also simplified the whole formula of physical activities and nudged the people to take out 30 minutes every day from their daily routine and go for a brisk walk, at least five times a week. The need to get up and get moving for at least 30 minutes is all the more important in this work from home era where we stay glued to our laptop screens for an immeasurable about of time.
If you have trouble getting sound sleep at night, Dr Aseem advises cutting down on tea and coffee (due to their caffeine content) after midday as they act as stimulants. Incorporating yoga and meditation in the daily routine is another important part of calming down your mind and sleeping well at night. It also helps to dial down the stress levels.
The truth of Vegan and Vegetarian diet When it comes to the diet you are following, it is never a good idea to go to any extremes. So, if you have switched to a Vegan or Vegetarian diet, it is important that you include more vegetables in your daily meals when compared to white rice, bread or other flour-based products. Since protein deficiency seems to be more common in vegetarians, closely monitor your protein intake for the day and include pulses, lentils, chickpeas, paneer (cottage cheese) and spinach. As a rule of thumb, you should consume 1 gram of protein per kilogram of your weight.

There are measures that will help you deal with bringing down obesity and build immune system, below are a few.
Nutrition
The immune system relies on white blood cells that produce antibodies to combat disease causing bacteria, viruses, and other invaders like COVID-19.
Research shows that excessive intake of fat impairs white blood cell function and that high-fat diets may alter the gut microbiota which helps in immunity.[2]
People belonging to obese category are to be consuming high fiber, adequate protein and complex carbohydrates along with other micronutrients rich diet.
For carbs, do not just rely on wheat & rice, but also have a variety of whole grains and millets.
Studies have shown that fruits and vegetables provide nutrients like beta-carotene, vitamin C, and vitamin E that can boost immune function. Because many vegetables, fruits, and other plant-based foods are rich in antioxidants, they help reduce oxidative stress. A plant-based diet with low fat helps to boost the immune system.
Add two servings of whole fruits (100 to 150 gm) per day and at least three cups of vegetables per day.
Vitamin D: Research shows vitamin D supplements may reduce the risk for viral infections, including respiratory tract infections, by reducing production of proinflammatory compounds in the body.[3]
Zinc is a mineral that can help boost white blood cells, which defend against invaders. Sources of zinc include nuts, pumpkin seeds, sesame seeds, beans, and lentils. 
​Include the Immune Booster foods such as bright coloured whole fruits, fresh garlic, ginger, onion, tomato juice / tomato-based soups, non-starchy vegetables such as spinach, carrots, cauliflower and also you can have green tea/ black tea.
Make sure to consume protein foods such as sprouts/dal/legume preparation/curries/ egg whites in the diet. Limit non-veg for weekly twice and can opt for fish or skinless chicken breast etc.
 Prebiotics and probiotics play a major role in improving gut health, so include naturally fermented foods like Idli, Dosa, Dhokla, fermented kanji, germinated moong sprouts, pickled vegetables etc.
Include curds and buttermilk regularly in mid meals or along with major meals to improve gut health.
Include combinations of nuts and seeds which are sources of good fats. Seeds such as sunflower seeds, watermelon seeds, muskmelon seeds and nuts such as almonds, walnuts are health friendly. These seeds and nuts can be taken as a snack in the mid-morning or evenings.
Cut down on oil, it should not be more than 2 to 3 tsp every day if you are trying to lose weight. Use cold pressed oil instead of refined oils.
Eat your first meal within 30-60 minutes of getting up. And it should not be tea/coffee. Ideally, it should be a fruit/seeds/nuts/veg juice.
Eat in a distraction free environment. Eat slowly and mindfully until you are 75% full. You should be satisfied but not stuffed.
Try to have a light dinner if possible. And maintain a gap of 2 to 3 hrs between dinner and sleep.
Stay Hydrated
Drink 2.5 to 3 litres of water daily. Preferably boiled water.
Have liquids such as a combination of unstrained vegetable juice, buttermilk, lime water, tender coconut water and green tea daily.
Avoid cold drinks and excessive intake of teas and coffees
Lifestyle
Sleep: Inadequate sleep is linked to suppress immune function. It is a strong regulator of immunological processes, especially adaptive immunity. Also, Inadequate sleep results in obesity. Maintain a routine into which 7 to 8 hrs is given for sleep.
Quit Smoking: Smoking has an effect on both the innate and adaptive immunity. It suppresses the normal development and functions of the cells that are responsible for driving immunity in the body.
Alcohol: If you have a habit of drinking alcohol, drink alcohol in moderation. Alcohol is also known to impair immunity.
Stress: When you are stressed, the body releases excessive inflammatory promoting cytokines in the blood, and this will affect the normal function of immune cells.  Practice de-stressing activities like gardening, yoga, engaging favourite in hobbies like chess, Ludo, painting etc.
Exercise : Studies have proved that regular physical activity may enhance the immune system and provide protection against infection. Regular exercise is an important detoxing tool as well as beneficial for weight loss.  Exercise helps to relieve stress and increases the flow of oxygen to the brain. It stimulates our bodies to shed toxins and strengthen bones and muscles. Try to incorporate 30 minutes of physical exercise 5 times a week.

Supplements and Medications
Nutritional deficiencies are one of the reasons for weight gain. Hence, you need to take the supplements rightly. You can discuss the same with your nutrition coach too and take their guidance.  
Probiotic Supplement – For gut health, include a probiotic supplement like Velgut or Darolac, one tab daily after lunch, continued for a month. After 3 months it should be repeated again for a month.
Multivitamin Supplement – Any multivitamin can be included daily after breakfast and can be continued for 2 weeks to 1 month.
Vitamin-D Supplement – One Vitamin D tab like D rise or Tayo 60K can be taken weekly once for 6-8 weeks any time after meals. Studies shown that obese person have low levels of Vitamin D in their plasma and hence supplements should be provided to them. 
Vitamin-B12 Supplement – B12 deficiency is seen mostly among vegetarians and who are diabetic. Met-Neurobion is a vitamin B12 supplement containing MECOBALAMIN and that can be had 1 Tab daily after lunch and continued for a month.
General Hygiene
Wash hands properly for 20 secs with a liquid soap and use Hand Sanitizer frequently.
Wear masks and gloves while going out and maintain 1-meter distance with others.
